2 cups curd ((Plain yogurt))
½ to 1 cup water ((or 2 to 3 ice cubes + ¼ cup milk or cream adjust as needed))
3 to 4 tablespoon sugar ((or maple syrup, adjust to taste))
¼ to ½ teaspoon cardamom powder ((ground cardamoms, elaichi powder))
1 teaspoon rose water ((optional))
1 pinch saffron strands ((Kesar) optional)
1 tablespoon chopped nuts (for garnish, optional)
½ teaspoon roasted cumin powder ((roasted jeera powder))
¼ to ½ teaspoon salt ((use as needed))
2 pinches chaat masala ((for garnish, optional))
½ to ¾ cup mint or pudina ((use as needed))
½ teaspoon cumin powder (or roasted jeera powder)
⅛ teaspoon chaat masala ((optional))
2 tablespoon lemon juice ((use as needed))
1 tablespoon sugar ((optional))
¼ to ½ teaspoon salt ((or as needed))
¼ green chili deseeded ((optional))

Steps:

  • Chill the curd and water in the refrigerator. If you want to use saffron, soak it in 2 tbsps hot milk and let it rest for sometime.
  • Add curd to a large bowl. Whisk it well to break up lumps & make it smooth.

Curd 2 cups, chilled, thick and beaten smooth (yogurt)
Milk 100 ml, chilled OR water
Sugar 2 heaped tbsps OR honey
Cardamom powder 1/2 tsp
Pistachios 4, finely chopped (or 2 almonds)
Rose water 1/4 tsp (optional)

Steps:

  • Use only thick curd and with the help of a strainer drain out excess water from the curd before beating it.
  • With the help of a traditional buttermilk churner, beat the thick curd till smooth and frothy.
  • Add chilled milk, cardamom powder, sugar or honey and churn till frothy.
  • Pour into serving glasses, garnish with chopped pistachios and serve.

We are sharing plain sweet lassi recipe, for this we need only fresh curd, sugar, water and green cardamom for good taste.

  • Take a deep large vessel.
  • Add fresh curd, sugar and green cardamom powder.
  • Using a hand blender or wire whisk, beat the curd until smooth. There should be no lumps.
  • Add water and beat again until the lassi becomes smooth and a fine frothy layer on the top is visible. Avoid excess water as the thick consistency of sweet lassi gives more flavor than the thin consistency of lassi.
  • Pour lassi into a glasses and garnish with finely chopped mixed nuts. Sprinkle some chocolate powder and enjoy the drink in summer season.
