2 Tbsp olive oil
1 lb sweet Italian sausage
3 bell peppers (sliced)
1 onion (diced)
2 cups plum tomatoes (cut in quarters)
4 cloves garlic (minced)
¼ cup basil (chopped)
1 tsp oregano

Steps:

  • Heat oil in a pan over medium heat. Add the sausages and cook until browned. Set aside.
  • Add the peppers, onion, and garlic and cook about 5 minutes. Stir in the tomatoes, basil, and oregano and continue cooking until the veggies are cooked to desired tenderness.
  • Cut the sausage in bite sized pieces and add back to the pan. Cook a few minutes more until the sausage is heated throughout.

2 tablespoons butter
1 yellow onion, sliced
½ red onion, sliced
4 cloves garlic, minced
1 large red bell pepper, sliced

¼ cup white wine

Steps:

  • Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.
  • Melt butter in the skillet. Stir in the yellow onion, red onion, and garlic, and cook 2 to 3 minutes. Mix in red bell pepper and green bell pepper. Season with basil, and oregano. Stir in white wine. Continue to cook and stir until peppers and onions are tender.
  • Return sausage slices to skillet with the vegetables. Reduce heat to low, cover, and simmer 15 minutes, or until sausage is heated through.

1 tablespoon olive oil
3 hot italian sausages
3 sweet italian sausages
1 red bell pepper, large, diced
1 green bell pepper, large, diced
1 yellow bell pepper, large, diced
½ white onion, sliced
2 cloves garlic, sliced
28 oz diced tomato
1 teaspoon oregano
1 teaspoon salt
1 teaspoon black ground pepper

Steps:

  • Bring a large pot of water to a rolling boil, add a generous amount of salt, and cook pasta 2 minutes less than the package instructions.
  • Strain pasta and set aside. Toss with a small amount of oil to prevent sticking
  • In the same pot, heat 1 tbsp of olive oil and fry sausages, working in batches as needed, until deeply browned on all sides.
  • Remove sausages, slice in ¾-inch (2 cm) rings, and set aside.
  • Sauté all of the bell peppers, onion, and garlic for about 2 minutes.
  • Add the canned tomatoes, all of the spices, and the sausage slices to the pot.
  • Simmer about 10 minutes.
  • Add the pasta back to the pot and stir gently until all the ingredients are coated in the sauce. Continue simmering until pasta is al dente.
  • Serve with grated parmesan.

  • Keeping the pan over medium heat, add the peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes. Add the oregano, basil, and garlic and cook 2 more minutes.
  • Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.

Extra-virgin olive oil
3 or 4 medium bell peppers, a mix of red and yellow, sliced into 1/4-inch strips

Steps:

  • Heat the broiler with a rack 6 inches from heat source. Score the sausages in a few places on both sides, making sure not to cut all the way through. 5-6 links sweet italian sausage (pierced serval times)
1 small bell pepper hollowed,rinsed and cut into strips
1 small red pepper hollowed, rinsed , cut into strips
1 small * yellow pepper hollowed, rinsed, cut into small strips
1 medium yellow onion cut into small strips
1 approx 15oz can diced tomatoes with basil, oregano and garlic ( you can add your own dry spices if you like .. 1/2 teaspoon of each)
1 small can tomato sauce
1/3rd cup of water (rinse out tomato and sauce cans with)
1 teaspoon sugar
1/4-1/2 teaspoon crushed red pepper flakes (omit if you don't like spicy hot)
salt / pepper to taste (if desired)

Steps:

  • 1. Spray a large skillet with non stick vegetable oil cooking spray. Place sausage links in heated pan and cook until browned. Remove from skillet and place links on cutting board surface. Add the peppers and onion to the sausage liquid and cooked until soft and slightly browned. Note: While peppers and onions are cooking, cut your sausage links into bite size pieces "or" cut in 1/2 lengthwise or leave whole if making for sandwiches ... return cut sausage links to peppers and onions , add your pepper flakes if using them and cook on med/low heat an additional 5 minutes .. stir ingredients. 14.5 oz can diced tomatoes with juice
1/2 tsp salt
1 tsp Italian seasoning
1 tsp onion powder
1 Tbsp brown sugar
Hoagie buns
Provolone cheese slices
Parmesan cheese

Steps:

  • Add oil to a large skillet over high heat.
  • Brown the sausages well on all sides, I like to get a good amount of color on them. Color=flavor!
  • Remove the sausages to a platter and set aside.
  • Add the bell peppers and onions to the same skillet and cook for about 5 minutes, getting them a little bit brown as well.
  • Reduce the heat to medium and add the garlic to the veggie mixture for the last minute.
  • Next add the sausages back to the pan and dump in the tomato sauce and diced tomatoes with juice, the salt, Italian seasoning, onion powder and brown sugar.
  • Bring to a boil then reduce to low and simmer covered for an hour or until sausages are cooked through.
  • When you are ready to serve, toast your hoagie buns on both sides, then add the cheese to the inside of the buns and place back in the oven to broil until the cheese is melted.
  • Add the Italian Sausage & peppers & onions to each hoagie and sprinkle with lots of Parmesan cheese. Serve with some of the tomato sauce on the side for dipping.
  • My kiddos like their sausages cut up in bite size pieces before I put it on their hoagies, but that is optional.
