Homemade Sweet Italian Sausage (Mild or Hot) image

This is a very versatile Italian sausage which can be used in many different ways. You can take it from mild to hot and it's very easy to use. There are also different options for type of meat to use, like ground chuck or ground turkey (do not use ground beef). If using ground turkey, you'll have to coat your skillet with a little olive or veggie oil before cooking as it has very little fat and will stick to skillet.

3 pounds ground pork
3 tablespoons red wine vinegar
1 tablespoon salt
1 tablespoon freshly cracked black pepper
1 ¼ tablespoons dried parsley
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon dried basil
2 teaspoons paprika
2 teaspoons crushed red pepper flakes, or to taste
¾ teaspoon ground fennel seed
¼ teaspoon brown sugar
⅛ teaspoon dried oregano
⅛ teaspoon dried thyme

Steps:

  • Place the pork and red wine vinegar in a mixing bowl. Sprinkle with salt, black pepper, parsley, garlic powder, onion powder, basil, paprika, red pepper flakes, fennel seed, brown sugar, oregano, and thyme. Knead until flecks of spice are evenly distributed through the sausage.
  • Divide the sausage into thirds, and form into 3 logs; wrap each in plastic wrap. Place wrapped sausage into a freezer bag before freezing, or store in refrigerator for at least 12 hours before cooking.

Grilled Italian Hamburgers image

This is an absolutely wonderful grilled Italian hamburger. You may add a little garlic powder also, and top with a thin slice of Mozzarella cheese as well. I do suggest you make the full recipe as leftovers never last more than two days at my house. These are wonderful with a big slice of very sweet onion and catsup. Some people like to add a slice of Mozzarella cheese before popping them in the foil and before heating again.

3 pounds lean ground beef
1 pound bulk sweet Italian sausage
1 tablespoon minced onion
1 teaspoon minced garlic
2 teaspoons Italian seasoning
1 tablespoon light olive oil

¼ cup melted butter
6 baguettes (14 to 16 inches), halved crosswise and split

Steps:

  • Mix the ground beef, sausage, onion, garlic, Italian seasoning, olive oil, salt, pepper, and anise seed together in a bowl until thoroughly combined. Chill in refrigerator at least 1 hour. Mix again after refrigerating. Divide the mixture into 12 portions and form into oblong burgers with rounded edges, approximately 4 inches wide and 12 inches long. They should be somewhat thin.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate. Also, preheat an oven to 250 degrees F (120 degrees C). Lightly brush the butter over the cut sides of the baguettes.
  • Cook on the preheated grill until the burgers are cooked through, 7 to 8 minutes per side. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). About 5 minutes before the meat is finished, lay the open baguette halves on the grill and brown each side until toasted. Place each burger into the baguette, close the baguette, and then wrap snugly with aluminum foil.
  • Bake the wrapped sandwiches in the preheated oven for 15 minutes before serving.

1 tablespoon olive oil
1 onion, thinly sliced
1 red bell pepper, cored and thinly sliced
1 tablespoon tomato paste
12 ounces hot Italian sausage (if links, remove casings)
12 ounces sweet Italian sausage (if links, remove casings)
8 slices provolone
1/4 cup mayonnaise
3 tablespoons pesto
4 ciabatta rolls, buttered and lightly toasted
Pickled banana peppers, for topping

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the onions and peppers and saute until the onions are translucent and the peppers are tender, 6 to 8 minutes. Stir in the tomato paste and cook for 1 minute longer. Remove from the heat.
  • Preheat an outdoor grill to medium high.
  • Combine both sausages in a bowl. Form into 4 patties. Grill until cooked through, 4 to 5 minutes per side. Top each burger with some of the onions and peppers and 2 slices of cheese, cover the grill and cook until the cheese melts.
  • In a bowl, add the mayo and pesto and stir to combine. Spread the rolls with the pesto mayo, add the burgers and banana peppers and serve immediately.

1 teaspoon dried oregano
1 teaspoon dried basil
1 medium green bell peppers, (sliced)
1 medium sweet onion, (sliced)
1 tablespoon olive oil
8 slices mozzarella cheese
8 hamburger buns
4 tablespoons butter, (softened)
1 cup prepared marinara sauce, (warmed)
2 teaspoons salt
1 teaspoon pepper

Steps:

  • Preheat grill (or grill pan) to medium/high.
  • In a large bowl, mix together the sausage, pepper, garlic powder, oregano, and basil.
  • Divide the meat mixture into 8 equal portions and shape each portion into burger patties.
  • Grill the patties on a preheated grill (or grill pan) for approximately 7-8 minutes per side (cover for half of the cooking time).
  • Meanwhile, in a grill basket (or a large stovetop skillet), season and cook the green peppers and onions with the salt and olive oil until they are slightly wilted and no longer crunchy. Stirring occasionally.

1 lbs Bacon
1 Tbl Fennel (crushed)
4 Tbl Red wine
1 Tbl Salt

1 Tbl Garlic (minced)

2 tsp Red pepper flakes (crushed)
2 Tbl Brown sugar

Steps:

  • Cut the roast into chunks and run both the pork and bacon through a coarse grinding disk on a meat grinder.
  • Thoroughly mix the spices into the meat and let sit for at least ½ hour. An hour or two is best. Then re-mix the meat and either stuff it into casings or package it the same as you would burger.

Steps:

  • Preheat your grill to medium-high heat (about 450 degrees F).
  • While the grill preheats, add the ground hot and sweet Italian sausage in a large bowl. Roll up your sleeves and use your hands to combine.
  • Form the meat into four balls and lightly press each into 5-inch-wide, 1 ¼ -inch-thick patties.

Pinch plus 1 teaspoon kosher salt

2 pounds (80/20) ground beef
1 pound sweet Italian sausage, casing removed
1/2 teaspoon dried oregano

Steps:

  • Preheat a grill to medium heat.
  • Pour the olive oil into a large skillet over a medium-high heat. When the oil is hot, add the bell pepper and onion, then sprinkle with a pinch each of salt and pepper. Cook, stirring frequently, until lightly browned and just tender, 8 to 10 minutes. Add the garlic and cook until just softened, about 1 more minute. 2 clove garlic
1/4 c fresh basil
2 large egg yolks
1/4 tsp salt
4 Tbsp red wine vinegar
1 1/2 c olive oil

  • 1. How to Make them: Mix the first six ingredients together thoroughly. Shape the hamburger mixture into 1/2 to 3/4" thick patties. Grill the burgers to an internal temperature of 155 degrees Fahrenheit. Serve on grilled hamburger buns or ciabatta rolls with garlic-basil mayonnaise.
  • 2. Garlic-Basil Mayonnaise This flavorful mayonnaise is perfect for Italian burgers. It can also be used in sandwiches and burgers - anywhere you'd like a little kick in your mayonnaise. You can make the mayonnaise fresh (below), or simply mix minced garlic and minced basil into regular mayonnaise.
  • 3. How to Make it Place all of the ingredients except for the olive oil in the bowl of a food processor fitted with a metal cutting blade. Process until everything is well blended and the garlic and basil are finely minced. While running the processor constantly, drizzle the olive oil into the processor - first a few drops at a time and then in a slow, steady stream as the mayonnaise starts to emulsify. To save the mayonnaise, store it tightly covered in the refrigerator. The mayonnaise will keep for four to five days in the refrigerator. Enjoy Good Food
