Tangy sauce, a green pepper and some pineapple chunks transform premade meatballs into something special. Serve them over rice for a satisfying main dish. -Ruth Andrewson, Leavenworth, Washington

1 can (20 ounces) pineapple chunks
1/3 cup water
3 tablespoons vinegar
1 tablespoon soy sauce
1/2 cup packed brown sugar
3 tablespoons cornstarch
30 frozen fully cooked Italian meatballs (about 15 ounces)
1 large green pepper, cut into 1-inch pieces
Hot cooked rice

Steps:

  • Drain pineapple, reserving juice. Set pineapple aside. Add water to juice if needed to measure 1 cup; pour into a large skillet. Add 1/3 cup water, vinegar, soy sauce, brown sugar and cornstarch; stir until smooth. , Cook over medium heat until thick, stirring constantly. Add the pineapple, meatballs and green pepper. , Simmer, uncovered, until heated through, about 20 minutes. Serve with rice.

2 eggs, beaten
1/2 cup fine dry breadcrumbs
1/2 cup finely chopped onion
1/4 cup milk
1/2 teaspoon salt
1/2 teaspoon pepper
1 pound bulk pork sausage
1 pound ground beef
3/4 cup apple jelly
1/3 cup spicy brown mustard
1/3 cup whiskey or apple juice
1 1/2 teaspoons Worcestershire sauce
few dashes of bottle hot pepper sauce

Steps:

  • In a large bowl, combine eggs, bread crumbs, onion, milk, salt and pepper. Add sausage and beef; mix well. Shape into about 48 (1 1/4 to 1 1/2-inch) meatballs. Place in a shallow baking pan. Bake, uncovered, in a 375 degree oven for about 30 minutes or until cooked through. Drain. Meanwhile, in a large saucepan, stir together jelly, mustard, whiskey, Worcestershire sauce and the bottled hot sauce; heat and stir until jelly melts and mixture bubbles. Add meatballs, stirring gently to coat. Cook for 3 to 5 minutes or until sauce thickens slightly and meatballs are coated.

A family recipe (from my mother-in-law) for a unique twist on traditional meatballs. These are baked in a wonderful tomato-based sweet and sour sauce, which is delicious over rice! I doubled the original sauce recipe. We love extra sauce, and this recipe will make a lot.

1 ½ pounds ground beef
2 eggs
1 ½ cups bread crumbs
¼ cup finely chopped onion
¾ cup milk
salt and ground black pepper to taste
2 cups ketchup
2 (8 ounce) cans tomato sauce
2 cups water
⅔ cup brown sugar
⅔ cup white sugar
1 tablespoon Worcestershire sauce
1 teaspoon Italian seasoning
1 teaspoon chili powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix the ground beef, eggs, bread crumbs, onion, milk, salt, and black pepper together in a large mixing bowl until evenly combined. Form the mixture into 12 large meatballs. Arrange the meatballs into a 9x13-inch baking dish.
  • Stir the ketchup, tomato sauce, water, brown sugar, white sugar, Worcestershire sauce, Italian seasoning, and chili powder together in a saucepan over medium heat; cook and stir until well combined and hot, about 5 minutes. Pour the tomato sauce mixture over the meatballs in the baking dish. Turn the meatballs to coat in the sauce.
  • Bake in the preheated oven until the meatballs are cooked through and no longer pink in the center, 60 to 90 minutes.

1 egg
¼ cup dry bread crumbs
1 onion, diced
1 cup packed brown sugar
3 tablespoons all-purpose flour
1 ½ cups water
¼ cup distilled white vinegar
3 tablespoons soy sauce

Steps:

  • In a medium bowl, combine the ground beef, egg, bread crumbs and onion. Mix thoroughly and shape into golf ball-sized balls.
  • In a large skillet over medium heat, gently brown the meatballs and set aside.
  • In a large saucepan, combine the brown sugar, flour, water, white vinegar and soy sauce. Mix thoroughly. Add meatballs and bring to a boil. Reduce heat and simmer, stirring often, for 30 minutes.

3 pounds ground beef
⅓ cup dried onion flakes
1 ½ cups dry bread crumbs
1 tablespoon salt
1 teaspoon ground nutmeg
3 eggs
¾ cup milk
1 cup cider vinegar
2 cups brown sugar, firmly packed
2 tablespoons mustard powder
1 cup water, divided
2 tablespoons cornstarch

Steps:

  • To make meatballs: In a large bowl, combine beef, onion flakes, bread crumbs, salt, nutmeg, eggs and milk.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Shape mixture into 1 inch balls, and place into a 9x13 inch baking dish; bake in preheated oven for 10 minutes. Lower heat in oven to 350 degrees F (175 degrees C).
  • To make sauce: In a large saucepan over medium heat, mix vinegar, sugar, mustard and 1/2 cup water; bring to a boil, and boil for 1 minute. Mix cornstarch and 1/2 cup water; add to saucepan, and boil for 1 minute more.
  • Add sauce to cooked meatballs, and bake in preheated oven for 45 minutes, basting occasionally.

Meatballs
1 lb pork sausage (regular or spicy hot)
1 lb lean ground beef
1/2 c plain dry breadcrumbs
2 eggs, beaten
1/4 c milk
1/2 c onion, finely chopped
1/2 t salt
1/2 t black pepper
Sauce
1/2 c apple jelly
1/4 c spicy brown mustard
1/4 c Jack Daniel's TN Whiskey
1 t Worcestershire sauce
Hot pepper sauce to taste

Steps:

  • Meatballs: preheat oven to 375. Combine all ingredients in lg mixing bowl. Blend well with hands. Form into 1 1/2 in balls. Place on ungreased baking sheet (with sides to catch grease) or jelly roll pan. Bake about 30 min until browned & cooked through. Sauce: Combine all ingredients in lg skillet. Stir until well blended. Stir in cooked meatballs. Coat with sauce & cook 5 min until sauce has thickened slightly. Serve with toothpicks. Can keep warm in crockpot for serving.
