ASIAN MARINATED GRILLED SHRIMP SKEWERS



Asian Marinated Grilled Shrimp Skewers image

Looking for that perfect grilling recipe thats just slightly different? These Asian Marinated Grilled Shrimp Skewers are bursting with flavor and super simple to make.

3 Tbsp unsalted butter
2 Tbsp soy sauce
2 tsp lime juice fresh squeezed
1 tsp ginger grated
2 cloves garlic minced
1 1/2 Tbls sugar
2 thinly sliced scallions
1 lb large shrimp (shelled and deveined)

Steps:

  • Place the butter, soy, lime juice, ginger, garlic, and sugar in a small saucepan and whisk to combine. Let it come to a simmer over medium-low heat, stirring occasionally, then take it off the heat, stir in the scallions, and let cool on the counter to room temp.
  • Place the shrimp and marinade in a bag or bowl covered in plastic wrap and marinate for at least an hour in the fridge. Try to let them marinade for around 3-5 hours but no longer.
  • Take the shrimp out of the marinade and place them on skewers. If using wooden skewers, let these soak for 30 minutes in water.
  • Place the remaining marinade back in the small saucepan and bring it to a simmer, simmer for 1 minute and take it off the heat.
  • Preheat the grill to high heat and oil the grates. Place the shrimp skewers on the grill and get a nice char on all sides. Do not overcook or shrimp will become rubbery. This will only take about 3-4 minutes per side, depending on how big the shrimp are. Baste the shrimp with the marinade every few minutes.
  • Serve with a garnish of more sliced scallions. Keep any remaining marinade on the side for dipping.

1 cup brown sugar
1 tablespoon lemon juice
1 cup molasses
1 tablespoon chopped fresh basil
2 tablespoons vegetable oil
1 tablespoon mustard
3 tablespoons honey
1 teaspoon ground cloves
1 tablespoon ranch-style salad dressing
1 teaspoon chili powder
1 tablespoon minced fresh garlic
4 pounds large shrimp, peeled and deveined

Steps:

  • Combine brown sugar, lemon juice, molasses, basil, vegetable oil, mustard, honey, clove, ranch dressing, chili powder, and garlic in a large bowl. Toss in shrimp to coat, cover, and refrigerate for 2 hours. Meanwhile, soak wooden skewers in hot water to prevent burning on the grill.
  • Preheat an outdoor grill for high heat and lightly oil grate.
  • Thread shrimp tightly on to skewers. Cook on the top rack of the grill for approximately 4 minutes, or until the shrimp turns pink on one side. Flip shrimp and cook for an additional 2 to 4 minutes, or until there are no signs of grey. Use a fork to remove shrimp from the skewers.

½ cup chile-garlic sauce
½ cup honey
1 pound medium shrimp, peeled and deveined

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Stir chile-garlic sauce and honey together in a small bowl.
  • Thread shrimp onto soaked bamboo skewers, piercing through the head and tail ends.
  • Cook the skewers on the preheated grill, frequently turning and basting with the sauce mixture, until shrimp are firm and pink on all sides, about 10 minutes.
