SPIRAL MEATLOAF
Can you stand another meatloaf recipe? I saw this being made on a tv show -- but was vacuuming and didn't catch all the ingredients. So, I adapted my own (rather, my mother's) recipe and came up with this. My husband will not eat meatloaf any other way!

Steps:
- Mix the meats, soup mix, water, oatmeal, egg, steak sauce and herbs together in a large bowl.
- Pat meat mixutre into a rectangle.
- The meat should be about 1/2 inch thick.
- Lay the baby spinach leaves over the meat, overlapping them to form a solid layer.
- Sprinkle all but 1/2 cup of cheese over the spinach.
- Carefully roll the meat up.
- This can be a little tricky, but once the first roll is made, it gets easier.
- Once rolled, pinch the ends to seal and place on a cooking sheet.
- Sprinkle remaining cheese and reserved parsley on top.
- Bake at 350 for 45-55 minutes.
- Let rest for five minutes before slicing.
MA'S HAM AND SWISS CHEESE MEATLOAF
I have never known anyone to make meatloaf like my "ma". Everyone that tries it asks for the recipe and its very easy! I would describe making it like a "jellyroll of ham and cheese" yum!

Steps:
- 1. Preheat oven at 350 degress farhenheit.
- 2. Mix egg, breadcrumbs, beef,sausage, worstershire sauce, parmesan cheese and salt in pepper in large bowl. Just as if making regular meatloaf.
- 3. When everything is mixed well, lay out a long piece of tinfoil and lay out the meat in a rectangle shape onto the foil as close to the right end of the foil as possible.
- 4. Take your ham and layer it onto the meat and repeat with the swiss cheese until it is all used.
- 5. Take end of foil and start rolling the meatloaf as if you were making a jellyroll.
- 6. Take your spiraled meatloaf and put into baking pan.
- 7. Cover with foil and bake for 1 and a half hours.
SKILLET MEATLOAF DINNER
This is different from the routine meatloaf. Easy recipe to make. This comes from a Bisquick book that I have.

Steps:
- Note: I microwave the potatoes whole til they are approximately 1/2 to 3/4 done to assure they are cooked when meal is completed; Then I cut them into wedges and place on top of meatloaf.
- Dissolve bouillon in water; mix 1/4 cup of the bouillon and the remaining ingredients except potatoes, cheese and mushrooms.
- Pat mixture in 9" skillet to within 1" of edge.
- Pour remaining bouillon around edge.
- Place potato wedges on meatloaf in spoke fashion.
- Cover and cook over low heat until potatoes are tender, 30 to 40 minutes.
- Arrange cheese on potatoes; sprinkle with mushrooms.
- Cover and cook until cheese is melted, 2 to 3 minute Sprinkle with snipped parsley if desired.

Steps:
- In large bowl combine first 7 ingredients til very well mixed.
- Place mixture onto a sheet of foil.
- Press out to a flat, even 8"x10" rectangle.
- Top evenly with 6 slices ham to within 1/2" of edges.
- Top with 6 slices american cheese.
- Sprinkle cheese layer with chopped broccoli evenly. Chop any big pieces smaller.
- Roll up starting from long side, lifting and using the foil to help you roll it all up.
- Roll up tightly.
- Pinch ends and seam closed VERY well. Place seam side down onto cookie sheet, or keep on the foil (seam side down)and place onto cookie sheet, that's what I did. Easier clean up!
- Sprinkle with a little coarse ground pepper.
- Bake in 350º oven for 55 minutes.
- Cut remaining 4 slices cheese in half corner to corner. Place on top of meatloaf nicely, overlapping slices slightly, showing pointed sides.
- Bake 5 minutes longer or til cheese is just melted.
- Let rest 15-20 minutes before slicing.
- Good served with mashed potatoes, baby carrots and fresh rolls.
- *Some hams can turn ground beef slightly pink. It is done in 1 hour. Just check juices to see if they are running clear.
- **"Do-ahead" Tip:This can be rolled up and refrigerated (covered)for up to 24 hours before baking.
SWISS CHEESE MEAT LOAF
I saw this recipe on a TV show on Amish cooking in the 1980s, and I've adapted it to suit our tastes. The Swiss cheese and bacon make it very satisfying on cold fall and winter evenings.

- In a skillet, cook bacon over medium heat for 2 minutes on each side or until cooked but not crisp. Drain on a paper towel; set aside. , In a bowl, combine the egg, crackers, 4 tablespoons cheese, onion, garlic, salt, sage and pepper. Crumble beef over mixture and mix well. Shape into a loaf and place in a greased 5-3/4x3x2-in. loaf pan. Place bacon pieces over top. Bake, uncovered, at 350° for 30 minutes. Sprinkle with remaining cheese; bake 2-4 minutes longer or until a thermometer reads 160° and cheese is melted.

STUFFED MEATLOAF (GLUTEN FREE)

- In a large bowl mix together the ground beef, V8 juice, egg, onion and Worcestershire sauce.
- Mix together the spices and breadcrumbs. Add to meat and mix until well blended.
- Place the ground beef between the layers of wax paper. Roll into an even rectangle shape, about 1/2 inch thick.
- Arrange a double layer of spinach leaves onto the ground beef within 1/2 inch of the edges.
- Top the spinach with the capicolli ham then the swiss cheese.
- Carefully roll up, using the wax paper to lift. Press the edges and ends to seal.
- Place on a lightly oiled baking pan, seam side down.
- Brush the top with a little melted butter and sprinkle with a few breadcrumbs.
- Bake uncovered @ 350F for about 45 - 50 minutes.
- Let rest for a few minutes. Slice and serve.

This came out WONDERFUL, and I'm not big on meatloaf!! I glazed it nicely with dark brown sugar and honey mustard. It's filled with canadian bacon and swiss cheese! Surprisingly good!!!!!
