These Sweet and Spicy Korean Meatballs will change your life. They're made with lean beef, flavored with garlic and Sriracha, baked, no frying and glazed with a spicy apricot glaze.

1½ pound lean ground beef
4 green onions (chopped)
½ cup breadcrumbs (such as Panko)
3 cloves garlic (minced)
1 egg
2 tablespoon Sriracha sauce
1 teaspoon ground ginger
1 teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
½ cup apricot jam
1 tablespoon soy sauce
2 tablespoon Sriracha sauce

Steps:

  • Preheat oven to 400 F degrees. Line a baking sheet with parchment paper; set aside.
  • In a large bowl, add all the meatball ingredients and mix with your hands to combine. Form the meatballs into small 1 inch balls. Place the meatballs on the prepared baking sheet and bake for about 20 to 25 minutes or until done to your liking.
  • Meanwhile, in a medium bowl whisk together all the glaze ingredients. Add the meatballs and toss well until all the meatballs are glazed.
  • Garnish with chopped chives if preferred and serve immediately over cooked rice or as an appetizer.

2 large eggs
3/4 cup 2% milk
1 cup dry bread crumbs
1/2 cup finely chopped onion
2 teaspoons salt
2 pounds ground beef
4 garlic cloves, minced
1 tablespoon butter
3/4 cup ketchup
1/2 cup honey
3 tablespoons soy sauce

Steps:

  • In a large bowl, combine eggs and milk. Add the bread crumbs, onion and salt. Crumble beef over mixture and mix well. Shape into 1-in. balls. Place on greased racks in shallow baking pans. Bake, uncovered, at 400° for 12-15 minutes or until meat is no longer pink., Meanwhile, in a large saucepan, saute garlic in butter until tender. Stir in the ketchup, honey and soy sauce. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. Drain meatballs; add to sauce. Carefully stir to evenly coat. Cook for 5-10 minutes.

1 lb ground beef
1/2 lb ground pork
1/2 cup Progresso™ Panko Italian style crispy bread crumbs
1/2 cup shredded Parmesan cheese
1 egg
2 cloves garlic, grated
Salt and pepper
1/2 cup brown sugar
1/2 cup barbecue sauce
2 teaspoons chile flakes (or to taste)
Chopped chives (for garnish)

Steps:

  • Mix all of the meatball ingredients together and form your meatballs.
  • Heat a large frying pan with a little oil and gently, one by one, add in the meatballs.
  • After they cook for about 4 minutes, flip the meatballs and cook an additional 4 minutes. Once they're cooked on the outside, they should be a little less delicate. Making sure none are stuck to the bottom, start tossing them in the pan a little more to cook them evenly. Drain most of the fat, leaving a few tablespoons' worth in the pan.
  • Add 2 tablespoons of water to deglaze the pan, scraping up any stuck-on pieces. Add the brown sugar, adding a little more water if the pan looks too dry.
  • The sauce should start to bubble and look like dark caramel.
  • Remove from heat and add in the barbecue sauce. Stir well.

¾ pound ground venison
6 ounces ground pork
¾ cup ground pork rinds
1 large egg
¼ cup sliced green onion (divided)
4 cloves garlic (minced)
3 teaspoons sesame oil (divided)
1 tablespoon olive oil
1 teaspoon fresh minced ginger
¾ cup chicken broth
½ cup coconut aminos
¼ cup thinly sliced carrot sticks
1/4 cup golden monkfruit
sesame seeds (optional)

Steps:

  • In a large bowl combine the venison, pork, pork rinds, egg, garlic, 1 teaspoon sesame oil, and 1/8 cup green onions. Mix with hands until well combined.
  • Shape into 1" meatballs. Set aside.
  • Heat a large skillet over medium-high heat. Add the olive oil and heat until hot. Add the meatballs to the skillet and cook until browned on all sides.
  • Remove meatballs from the skillet and set aside.
  • Add the remaining sesame oil, swirl pan to coat bottom. Stir in the fresh ginger and cook, stirring constantly, for 1 minute.
  • Stir in the chicken broth, coconut aminos, and golden monkfruit. Bring to a boil, stirring constantly.
  • Return the meatballs to the skillet and toss to coat. Add the carrots and red pepper flakes (if using). Simmer until sauce has reduced and thickened.
  • Sprinkle with sesame seeds (if using).

1/4 cup LEA & PERRINS Worcestershire Sauce, divided
1/2 cup pineapple juice
2 Tbsp. brown sugar
2 Tbsp. honey
1 tsp. cornstarch
1/8 tsp. ground ginger

Steps:

  • Mix meat, bread crumbs, garlic, egg and 1 Tbsp. Worcestershire sauce just until blended; shape into 20 (1-inch) meatballs.
  • Cook in large nonstick skillet on medium heat 5 min., turning occasionally. Meanwhile, mix pineapple juice with all remaining ingredients, including remaining Worcestershire sauce, until blended.
  • Add pineapple juice mixture to meatballs; stir until evenly coated. Cook 5 to 6 min. or until sauce is slightly thickened and meatballs are done (160ºF), stirring frequently.
