FRESH GINGER AND HONEY SALAD DRESSING



Fresh Ginger and Honey Salad Dressing image

This Fresh Ginger and Honey Dressing is sweet, tangy, and zesty, and will make you love salad! It's so easy to make a big batch, and will last for a month in the fridge. Alternatively, use as a marinade for grilled chicken or veggies.

2 tablespoons fresh grated ginger ((from about a 2" piece))
1/4 cup honey
2 teaspoons kosher salt
1 teaspoon black pepper
1/3 cup rice vinegar (see notes)
1 cup extra-virgin olive oil

Steps:

  • Mince ginger in a food processor (you can also do this by hand).
  • Add to the food processor the honey (1/4 cup), salt (2 teaspoons), pepper (1 teaspoon), and rice vinegar (1/3 cup); pulse to combine (if not using a food processor, whisk these ingredients together in a bowl).
  • While food processor is running, add oil gradually (or add oil to bowl while whisking), in order to emulsify the dressing.
  • Store in an airtight container or jar for up to one month in the fridge.

Love ginger? You'll love this homemade salad dressing recipe! It's full of fresh ginger flavor, balanced by a touch of maple syrup and apple cider vinegar. Recipe yields 3/4 cup dressing.

½ cup extra-virgin olive oil
2 tablespoons apple cider vinegar, to taste
2 tablespoons Dijon mustard
1 tablespoon maple syrup or honey, to taste
2 teaspoons finely grated fresh ginger
½ teaspoon fine sea salt
About 20 twists of freshly ground black pepper

Steps:

  • In a jar or small bowl, whisk together all of the ingredients until fully blended. Sometimes, if your mustard is cold, it will need a few minutes to warm up before it fully incorporates.
  • Taste, and adjust if necessary-for more tartness, add another teaspoon of apple cider vinegar, or for more sweetness/balance, add another teaspoon or two of maple syrup (I usually add one).
  • This salad dressing will keep well in the refrigerator for up to 10 days. Real olive oil can solidify slightly when cold; if that happens, simple let it warm to room temperature for a few minutes or microwave it in a microwave-safe jar for no more than 15 to 30 seconds.

SWEET GINGER VINAIGRETTE

1/3 cup corn, peanut, or canola oil
3 tablespoons fine julienne strips of peeled fresh ginger
1/2 cup grated peeled fresh ginger
2 tablespoons plus 1 teaspoon balsamic vinegar
1 tablespoon sugar, or to taste
1/4 to 1/2 teaspoon Toasted Sichuan-Peppercorn Salt

Steps:

  • Heat oil in an 8-inch skillet over moderate heat until it shimmers and a single julienne of ginger dropped into it bubbles to surface immediately. Stir in remaining ginger julienne. Fry just until golden, 10 to 20 seconds, then carefully pour mixture into a sieve set over a heatproof bowl. Spread fried ginger on paper towels to drain (for salad topping) and cool oil.
  • Press or squeeze enough grated ginger to extract 2 tablespoons juice using a fine sieve or cheesecloth.
  • Whisk together ginger juice, vinegar, sugar, and peppercorn salt to taste until sugar is dissolved, then whisk in cooled ginger oil.
  • Use fried ginger as a salad topping.

SPICY GINGER VINAIGRETTE

1/3 cup finely chopped peeled fresh gingerroot
3 garlic cloves, minced
1 shallot, chopped fine (about 2 tablespoons)
1 teaspoon firmly packed brown sugar
1 tablespoon soy sauce
1/4 cup seasoned rice vinegar
1 tablespoon fresh lemon juice
1/4 teaspoon five-spice powder*
1/2 teaspoon dried red pepper flakes, or to taste
1/2 teaspoon salt, or to taste
freshly ground black pepper to taste
1 cup vegetable oil
*available at Asian markets and many specialty foods shops and supermarkets

Steps:

  • In a blender blend all ingredients except oil until smooth. With motor running, add oil in a stream and blend dressing until emulsified. Transfer vinaigrette to a jar with a tight-fitting lid. Vinaigrette keeps, covered and chilled, 1 week.

Fresh ginger, lime juice and sherry vinegar are the star players in this simple, sophisticated dressing that will make any salad sing. After putting it together, let it rest for a day so the flavors can meld.
