Delicious tender pork and sweet potatoes equal a lovely stew! Can be adapted for the slow cooker after the skillet steps.

⅓ cup brown sugar
⅓ cup all purpose flour
¼ cup Dijon mustard
3 pounds pork loin, cut into 1-inch cubes
3 tablespoons olive oil
1 sweet onion, chopped
2 cloves garlic, minced
1 ⅓ cups chicken broth
1 cup dry sherry
3 pounds sweet potatoes, cut into 1-inch cubes
¼ teaspoon ground black pepper
¼ teaspoon crushed dried rosemary
¼ teaspoon thyme
salt to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a large casserole dish or Dutch oven with cooking spray.
  • Combine brown sugar and flour in a bowl. Place Dijon mustard in a separate bowl. Heat olive oil in a large skillet over medium heat. Coat pork cubes with Dijon mustard and toss in brown sugar mixture to coat. Brown coated pork cubes on all sides in hot olive oil, about 3 minutes per side. Transfer browned pork into prepared casserole dish, leaving oil in skillet.
  • Cook and stir onion and garlic in the hot skillet until onions are soft, about 5 minutes. Stir chicken broth, sherry, sweet potato cubes, black pepper, rosemary, thyme, and salt into onion; bring to a boil. Pour sweet potato mixture over pork and cover casserole dish.
  • Bake in the preheated oven for 50 minutes; uncover and bake until pork is no longer pink inside and sweet potato cubes are tender, about 20 more minutes.

I first tried this recipe a year ago and it is unbelievably good! I never realized that adding two apples would give this savory stew such a hint of sweetness.

2 tablespoons butter or oil
1 ½ pounds boneless pork, cut into 1/2-inch cubes
2 cloves garlic, minced
1 medium onion, chopped
3 cups chicken broth
½ teaspoon salt
¼ teaspoon dried rosemary, crushed
¼ teaspoon rubbed sage
1 bay leaf
3 cups frozen, cubed butternut squash
2 MacIntosh apples, cored and cubed
2 large potatoes, peeled and cubed
2 cups carrots, peeled and diced

Steps:

  • Melt the butter in a large skillet over medium-high heat. Add the pork and cook until lightly browned on all sides. Stir in the garlic and onion, and continue to cook until the onion has softened, and the pork is firm, and no longer pink, about 5 minutes.
  • Place the pork and onions into a large saucepan. Pour in the chicken broth, and season with salt, rosemary, sage, and the bay leaf. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 20 minutes.
  • Stir in the butternut squash, apples, potatoes, and carrots. Return to a simmer, then cook, uncovered until the squash and apples are tender, about 20 minutes. Remove the bay leaf and serve.

3 lbs boneless pork shoulder, cut into 1-inch pieces
salt and pepper
2 tablespoons extra virgin olive oil, separated
1 1/2 cups onions, chopped
1 1/2 cups carrots, chopped
1 1/2 cups celery, chopped
2 whole garlic cloves, peeled
3 cups beef broth
2 potatoes, scrubbed and chopped into 1/2 in cubes
1 tablespoon fresh basil, chopped
1 bay leaf
1 cup red wine

Steps:

  • Season meat with S/P. Heat 3-4 quart saute pan over med-high heat. Add 1 tablespoons EVOO, and swirl to coat the bottom of the pan. When the oil is hot, add the meat and brown it deeply on all sides (7-10 minutes). Remove from heat and let sit on a plate.
  • Add remaining oil, onions, carrots, celery and garlic cloves. Saute stirring frequently, until veggies are just beginning to soften (about 4 minutes).
  • Return meat to the pan, and add broth, potatoes, basil and bay leaf. Bring broth to a boil, then reduce heat to med-low. Add wine. Let simmer for 10 minutes, then reduce heat to low.
  • Cook over low heat for 3 hours. Taste periodically, add S/P if needed. After removing heat, discard bay leaf, and serve hot.

3 tablespoons Dijon mustard
1/2 cup all-purpose flour

2-1/3 cups chicken broth
4 to 5 small onions, quartered
2 medium sweet potatoes, peeled and cubed
1/2 teaspoon salt

Steps:

  • In a large bowl, toss pork with mustard until lightly coated. In a large resealable plastic bag, combine flour and brown sugar; add pork and shake to coat. , In a Dutch oven over medium-high heat, brown pork in oil. Add garlic; cook 1 minute longer. Add broth; bring to a boil. Scrape bottom of skillet to loosen any browned bits. Reduce heat; cover and simmer for 30 minutes or until pork is no longer pink., Add the onions, sweet potatoes, salt and pepper; cover and simmer 30 minutes more or until the pork and potatoes are tender. 1 1/2 pounds boneless (center cut pork loin cut into 1/4-inch thick slabs, then 1/4-inch thick strips, about 3 inches long)
1 teaspoon Kosher salt
1/2 teaspoon black pepper
1 tablespoon canola or peanut oil (plus extra if necessary)
5 cloves garlic (peeled and minced or pressed through a garlic press)
2- inch knob of fresh ginger (grated)
1/2 cup mild honey
2 tablespoons to 1/4 cup sriracha or chili garlic sauce
1 tablespoon rice wine vinegar or white wine vinegar

Steps:

  • In a liquid measuring cup or a small mixing bowl, whisk together the mild honey, sriracha, and rice wine vinegar. Set aside.
  • Pour the oil into a heavy-bottomed skillet over medium high heat and swirl to coat. Let it heat until it is shimmering. While the oil heats, sprinkle the pork strips with kosher salt and black pepper then toss with your hands to distribute it evenly. Carefully add the pork to the pan, working in batches to avoid overcrowding the pan. Let the first side brown, flip the pieces with tongs or a spatula, and brown the second side. Transfer the pork to a plate.
  • Return the pan to the heat and add in the garlic and ginger. Stir until fragrant, about 30 seconds.
  • Raise the heat to high and pour in the sauce mixture and bring to a boil, stirring frequently. When the sauce is very bubbly and thickened like warm honey, toss the pork back in and toss constantly to coat everything and reduce the sauce to a thick, sticky glaze on the pork. This can be served immediately over rice, noodles, or as finger food, or can be allowed to cool and be eaten cold.

1/2 lb bacon, chopped
3 lbs pork shoulder, cubed 1-inchX1-inch
1 large onion, chopped
5 garlic cloves, smashed
3 teaspoons gingerroot, grated
2 cups pumpkin flesh, shredded
2 cups turnips, diced
2 cups carrots, sliced 1/4-inch coins
2 cups beef stock
1/4 cup brown sugar
1/4 cup honey
1 teaspoon nutmeg
1/2 teaspoon cardamom
2 bay leaves
1 teaspoon orange zest
1 orange, Juice of
3 cups potatoes, diced
2 cups sliced frozen green beans or 2 cups peas
1/2 cup parsley, minced
salt and pepper

Steps:

  • In large stock pot, render fat from bacon -cooking on med low - remove bacon from pot using slotted spoon, set aside. Brown Pork in bacon fat in small batches, remove pork from pot using slotted spoon.
  • Pour off excessive drippings from pot (leaving some for deglazing). Add Onion, Garlic, and Ginger. Saute. Once onions have started to brown stir in Pumpkin, turnip ,Carrots. Pour in 1/2 beef stock to finish deglazing pot. Stir well.
  • Add remainder of Beef stock, Brown sugar, Honey, nutmeg, cardemom, Bayleaves, Orange zest, and the juice of an orange. Allow to simmer on low covered for 1 hour. stirring occaisionally.
  • Add Potatoes. Allow to simmer for an additional 1/2 hour.
  • Stir in Sliced green beans or peas, parsley, and salt and pepper to taste. Because I personally don't like mushy beans or peas I turn off the stew here. But you may cook for an additional 15 minutes.

3 medium pork tenderloins
salt and pepper (to taste)
2 tablespoons olive oil
3 cloves garlic, pressed or finely minced
1 teaspoon dried thyme
2 tablespoons grainy dijon mustard (or use the kind without the grains if you prefer)
1 tablespoon freshly grated ginger
1/4 cup brown sugar
2 tablespoons soy sauce
fresh parsley for serving (optional)

Steps:

  • Preheat your oven to 375 degrees Fahrenheit and place a large oven-safe skillet on the stovetop over medium-high heat.
  • Season the pork tenderloins with salt and pepper on all sides.
  • Add the olive oil to the skillet and once it's heated add the pork, searing it on all sides.
  • While the pork is browning, add the garlic, thyme, mustard, ginger, brown sugar and soy sauce to a small bowl, whisking together to combine.
  • Once the pork has browned on all sides, drizzle the glaze over the pork tenderloins and brush on all sides.
  • Let the remaining glaze flow into the bottom of the skillet and place the skillet in the oven for about 10 minutes or until the internal temperature of the pork reaches about 150 degrees Fahrenheit (use a meat thermometer for this!).
  • Once the pork reaches 150 degrees Fahrenheit, remove the skillet from the oven and baste the pork with the glaze in the bottom of the pan before covering lightly with aluminum foil and resting for 5-6 minutes.
  • Slice the pork after it has rested and serve with the remaining glaze.
