- Preheat oven to 200°F
- In large bowl, lightly beat egg and egg whites.
- Add quinoa, sweet potato, scallions, cilantro, quinoa flour, salt and pepper and mix well. Let stand 15 minutes.
- In large skillet, heat 2 teaspoons vegetable oil over medium-high heat until hot but not smoking.
- Cook cakes in batches, using about 1/4 cup of quinoa mixture for each cake and flattening slightly with back of spoon to form a 3-inch disk.
- Cook until golden brown, about 3 minutes per side, reducing heat if cakes brown too quickly.
- Drain on paper towels and keep warm in oven. Repeat with remaining cakes, adding more oil to pan as needed.
- Serve hot with lime wedges to squeeze over cakes.

- Butter the baking dish, pie pan, or springform pan until generously coated.
- Sprinkle the crumbs as needed into the pan, then turn the pan around and shake gently, distributing the crumbs along the sides as well.
- The crumbs should completely coat the inside of the pan.
- Chill briefly to set the crumbs and then fill with the desired filling.
- CAKE: Preheat the oven to 325 degrees F.
- Sift together the flour and baking powder and set aside.
- Press the cottage cheese through a sieve.
- In a large mixing bowl, beat the eggs and the sugar until they are frothy.
- Add the spices and fruit rinds.
- Add the cottage cheese and blend all the ingredients well.
- Stir in the butter, then add the dry mixture, mixing well.
- Pour the mixture into the prepared crust and bake for 1 hour.
- NOTE: Again this is more like a quick bread, and you can increase the sugar if you like as this is not particularly sweet.

- Preheat oven to 190C.
- In the bowl add curd and press it with the fork to get rid of large crumbs.
- Add egg whites and mix together with the curd.
- Add semolina, white sugar, baking powder, vannila extract and mix well to form a smooth mixture. You can also leave it crumbled for the texture
- Stir in the raisins.
- Place the mixture in the square or rounded baking tray covered with parchment paper and bake till the top forms golden brown.

- In a small saucepan, whisk together all ingredients except for butter, until combined. Cook over medium-low heat, stirring constantly, until curd is thick enough to coat the back of a spoon, about 8-9 minutes. Remove from heat and stir in butter, until melted and smooth.
- Preheat oven to 350 degrees F with rack in the middle position. Line the bottoms of two 9-inch cake pans with parchment rounds and lightly spray the papers and sides of the pan with cooking spray.
- In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with a hand mixer, whip together cream cheese and butter until smooth. Add confectioner's sugar in 3 additions, scraping bowl each time. Beat until smooth.**
- Place one cake layer on a platter. Spread the cake with the orange curd, leaving a 1/2-inch border. Top with the second cake layer. Decoratively pipe or spread cream cheese frosting onto the top of the cake. Serve, or refrigerate for storage. Cake is better on the second day. Remove from the refrigerator 30 minutes prior to serving to allow frosting to soften a bit.
