A Cuban lady down the street made these every Wednesday...wonderful stuff! She served the beans over a bowl of hot rice, and garnished them with salsa, a little sour cream, and shredded cheese. It was also good without the dairy products. Can substitute canned, rinsed beans to cut cooking time.

1 pound black beans, washed
¼ cup olive oil
1 large onion, chopped
1 medium green bell pepper, chopped
6 cloves garlic, peeled and minced
5 cups water
1 (6 ounce) can tomato paste
1 (4 ounce) jar diced pimentos, drained
1 tablespoon vinegar
2 teaspoons salt
1 teaspoon white sugar
1 teaspoon black pepper

Steps:

  • Place beans in a large saucepan with enough water to cover, and soak 8 hours, or overnight; drain.
  • Heat oil in a medium saucepan over medium heat, and saute onion, green bell pepper, and garlic until tender.
  • Into the onion mixture, stir the drained beans, water, tomato paste, pimentos, and vinegar. Season with salt, sugar, and pepper. Bring to a boil. Cover, reduce heat, and simmer 1 1/2 hours, stirring occasionally, until beans are tender.

These are famous in my family, and I always get asked for the recipe. Serve with rice or in tacos for a yummy and healthy meal!

1 tablespoon extra virgin olive oil
½ large red onion, chopped
2 tablespoons minced garlic
1 (14.5 ounce) can diced tomatoes with green chile peppers
¼ cup chopped fresh cilantro
3 tablespoons sugar
1 teaspoon cayenne pepper
1 dash chili powder
1 dash cumin
1 dash ground cinnamon
1 (15 ounce) can black beans

Steps:

  • Warm oil in a skillet over medium heat. Stir in onion, and cook about 2 minutes; then stir in garlic, and cook until onion is soft and translucent. Stir in tomatoes, cilantro, and sugar. Season with cayenne pepper, chili powder, cumin, and ground cinnamon. Cook for 10 minutes. Stir in black beans, and bring to a simmer. Reduce the heat to low, cover, and simmer 1 hour or longer.

Sweet Cuban Black Beans image

I took these to work and everyone loved them.

2 c dry black beans
2 bay leaves
1/4 c olive oil
1 large red bell pepper chopped
1 large onion chopped
6 clove garlic minced
1 Tbsp oregano
1 Tbsp cumin
1 c sugar
1/4 c sherry wine
1/2 red onion chopped
1/4 c fresh cilantro chopped

Steps:

  • 1. Soak beans in salted water to cover 3 inches overnight. Drain and place in a large soup pot with bay leaves and fresh water to cover 3 inches. Bring to a boil and reduce to a simmer and cook until beans are tender about 2 hours.
  • 2. After an hour and a half heat oil over medium heat and add bell pepper and onion and cook until tender about 7 minutes. Add garlic, oregano, and cumin.
  • 3. Place mixture in pan with beans and add sugar, sherry, and red onions. Cook another 30 minutes. Salt to taste and add cilantro.

Sweet and savory, Cuban black beans are easily made in the Instant Pot!

Number Of Ingredients 14

1 pound of dry black beans (soaked)
4 cups of water
1/2 cup of olive oil
1 white onion (chopped)
4 garlic cloves (minced)
1 green bell pepper (chopped)
1/2 teaspoon of oregano
1/4 - 1/2 teaspoon of cumin
1 pork bullion cube (optional)
4 teaspoons of salt
1/2 teaspoon of ground black pepper
2 tablespoons of white wine
2 tablespoons of white vinegar
2 tablespoons of granulated sugar

Steps:

  • Add water and black beans to your Instant Pot, set on high pressure for 35 minutes.
  • Allow Instant Pot to naturally release.
  • When Instant Pot depressurizes, warm olive oil over medium to medium high heat in a medium frying pan. Add in onions, garlic, peppers, oregano, cumin, bullion, salt, and pepper to pan and cook until onions and peppers have softened.
  • Once onions and peppers have softened add in a cup of cooked black beans, and gently smash the beans into the onion mixture.
  • Return the onion mixture to the Instant Pot.
  • Press the saute mode to low heat for 20 minutes and stir beans occasionally. After the first five minutes, add in the wine and vinegar.

  • Set a pot on medium heat and pour in vegetable oil. Saute bell pepper and onion slices to gain a little color, about 3 minutes. Add garlic and let cook briefly, maybe ten seconds, then dump in beans with one can's liquid.
