BEEF STIR FRY WITH HONEY AND BLACK PEPPER SAUCE
Recipe video above. Copycat of restaurant style Chinese Beef with Honey and Black Pepper Sauce. Very fast and easy to make - it's on the table in 15 minutes! The sauce is absolutely divine - sticky, sweet, salty and with a subtle burst of heat from the black pepper.

Steps:
- Mix the Sauce ingredients in a bowl.
- Heat the oil in a wok or large heavy based skillet over high heat until it is smoking.
- Add the onion and garlic and cook for 1 minute or until the onion becomes translucent. Keep it moving so the garlic doesn't burn.
- Add the beef and stir fry for 1 minute until just cooked to your liking, then remove into bowl.
- Turn the heat down to medium high, pour in Sauce - it will start simmering very quickly! Let it cook for 1 minute or so until it becomes syrupy - the bubbles will be larger and caramel colour.
- Add the beef and onion back into the wok, along with any juices pooled on the plate. Toss in the sauce until just warmed through - 1 minute at most. Don't overcook the beef - that would be tragic!
- Serve immediately with rice - or for a low carb, low cal option, try Cauliflower Rice!

Steps:
- Place the beef in a bowl with the soy, five-spice, rice wine, chilli and cornflour, and season with black pepper. Mix well so the beef is completely coated in the thick paste and leave to marinate for at least 10 mins but 30 mins is better.
- Heat 2 tbsp of oil in a wok until very hot. Add the beef to the wok, but do not overcrowd the pan - the beef needs to be in a single layer. If necessary, cook the beef in batches. Fry the beef vigorously for about 3 mins until brown and crisp and scoop onto a plate.
- When all the beef is cooked give the wok a quick wipe out. Heat the remaining oil and stir fry the peppers and broccoli for a minute then pour over the stock and add the oyster sauce. Simmer everything together for 1 min then add the beef to the wok and boil briefly to thicken the sauce then serve straight away with rice or noodles.

STIR FRY CHILLI BEEF IN OYSTER SAUCE
Its a really tasty stir fry, full of lots of vegetables with enough chilli to kick up the flavour. I really started out making this yesterday by looking around to see what ingredients I had at the time. I had to scribble down what I had put in it before I forgot so I can make it again for ourselves but I am sure that you will find it enjoyable as well.

- In a large bowl, stir together the bread crumbs and milk. Once all the milk is absorbed, add the rest of the ingredients for the meatballs. With your hands, mix the ingredients just until combined, without overworking. Use a medium scoop (about 2 tablespoons) to evenly portion out meatballs. This size scoop should give you about 20 to 22 meatballs. Roll the portioned meatballs just a bit in your hands before placing them into the individual wells of the mini muffin pan. Bake for about 15 minutes, or until meatballs are fully cooked.
- While the meatballs are baking, prepare the sauce. Add vegetable oil and sesame oil to a medium saucepan over medium to medium-low heat. When oils are warmed, stir in garlic and ginger. Sauté for 2 to 3 minutes, stirring regularly, until softened. Do not let the garlic and ginger brown. Then stir in oyster sauce, soy sauce, and honey. Simmer the sauce for about 10 minutes, stirring occasionally, until reduced and thickened a bit. In a very small bowl or cup, whisk together the cornstarch and water to create a slurry. Turn up the heat on the saucepan just a bit, until the sauce is lightly bubbling. Whisk in the slurry until combined. Let sweet oyster sauce lightly bubble away for 3 to 5 minutes, just until it is thickened. Remove saucepan from heat.
- Remove meatballs from muffin pan to a large bowl. Drizzle hot sweet oyster sauce over the meatballs and gently fold to coat evenly.
