Sweet Cherry Vinaigrette | Cherry Balsamic Vinaigrette image

This bright, healthy, sweet cherry vinaigrette will make your salads pop with color and taste and it only takes a few minutes to make! It tastes amazing on top of all your favorite greens from arugula to kale to romaine, especially when paired with sliced fruit. This amazing homemade vinaigrette is naturally vegan, plant based, no added sugars, gluten free, dairy free, nut free, and an all around healthy salad dressing.

Number Of Ingredients 6

1 Cup Frozen Sweet Cherries*
1.5 Tbsp Balsamic Vinegar
2 Tbsp White Wine Vinegar
2 Tbsp Canola Oil**
2 Tbsp Water
A Pinch of Salt

Steps:

  • Let the sweet cherries defrost on the counter until softened a bit. It doesn't have to be fully defrosted but it shouldn't be rock hard either. If you want to speed up the process just pop it in the microwave until softened.
  • Blend all the ingredients until smooth.
  • Enjoy!

If you love cherries, this dressing is really yummy! I use Sleeping Bear Farms cherry concentrate (found in the cooler by the fresh OJ at my grocery store)....it is so good. I usually have to triple this recipe for our family of 6, especially if salad is our main dish.

1 tablespoon red wine vinegar
2 tablespoons 100% cherry juice concentrate
1/4 teaspoon dry mustard
1/4 teaspoon salt
1/2 teaspoon sugar
1/4 cup olive oil or 1/4 cup canola oil

Steps:

  • Mix all ingrediants in a shaker and shake like crazy.

1/4 cup granulated sugar
1 garlic, cloved minced
1/2 cup cherry preserves
1/4 cup red wine vinegar
1 cup canola oil
kosher salt
pepper

Steps:

  • In a medium saucepan on medium high heat add vinegar, sugar and garlic till boiling then simmer till reduced by half. Add preserves and cook 1 minute. Remove from heat and cool to room temperature. Whisk in red wine vinegar and then canola oil. Season with salt & pepper.

Here's a delicious salad using a whole grain that not only tastes good but is good for you! The flavors are refreshing and sweet while the crunchy nuts and farro give it wonderful texture!

¼ cup extra-virgin olive oil
¼ cup pure maple syrup
¼ cup apple cider vinegar
2 teaspoons white sugar
½ teaspoon salt
¼ cup chopped walnuts
2 ½ cups chicken broth or vegetable broth
1 cup farro
½ teaspoon dried oregano
½ teaspoon dried basil
1 cup chopped tart green apple
¾ cup dried cherries
2 tablespoons chopped flat-leaf parsley

Steps:

  • Whisk oil, maple syrup, vinegar, sugar, and salt together in a bowl until dressing is smooth.
  • Cook and stir walnuts in a small skillet over low heat until toasted and fragrant, 3 to 4 minutes.
  • Bring chicken broth, farro, oregano, and basil to a boil in a saucepan. Reduce heat to medium-low and simmer for 10 minutes. Remove saucepan from heat, cover with a lid, and let sit until all the liquid has been absorbed, about 30 minutes. Transfer farro to a glass bowl and cool to room temperature, about 30 minutes more.
  • Mix walnuts, green apples, dried cherries, and parsley into farro. Drizzle dressing over farro mixture and toss to coat; refrigerate until chilled, at least 30 minutes.

  • If using fresh cherries, remove the stems and pits. If using frozen, they should already be free of stems and pits. Place pitted cherries in small sauce pan and heat over medium until cherries are almost to a boil and bursting; this takes about 5-8 minutes, depending on fresh or frozen (frozen actually takes less time!). Remove from heat and let cool for 5 minutes.
