SOUR CHERRY SALSA

Steps:
- If using fresh cherries, coarsely chop, then stir together with sugar in a small bowl until sugar is dissolved, about 5 minutes. If using frozen cherries, thaw in a small bowl, reserving any juices in bowl, then coarsely chop and stir together with sugar in same bowl. Stir in onion, jalapeño, lime juice, cilantro, and salt and let stand at room temperature 30 minutes for flavors to develop.

Steps:
- First, prepare jars and lids for canning.
- Next, pit cherries.
- Coarsely chop pitted cherries, cilantro, red onions, jalapenos, and garlic.
- Place all ingredients into a copper jam pot, stainless steel pot or enamel dutch oven. Bring to a boil over high heat, stirring often. Reduce to simmering, and simmer for an additional 5 minutes, stirring often.
- Ladle cherry salsa into warmed pint mason jars leaving a 1/2-inch headspace. Remove air bubbles, add additional salsa if needed.
- Wipe the rim of jars with a clean dish towel, add warmed lids and rings to finger tight.
- Process pints in a water bath or steam canner for 15 minutes (for the altitude of 0 - 1000 feet), add additional time based on your altitude (see chart in the article).

- First, peel the onion and cut it in half. Then, add the onion and garlic cloves to the bowl of a food processor.
- Chop the onion and garlic, then roughly chop one jalapeño and add it to the food processor. (Exclude the membrane and seeds to reduce the heat.)
- Chop the jalapeño with the onions/garlic.
- Next, add tomatoes then cilantro to the food processor.
- Chop the tomatoes and cilantro to your desired consistency.
- This next step is optional, but I like to do it - pour the salsa into a fine metal strainer over a bowl to get rid of any excess moisture. (The tomatoes and onions release a lot of liquid when you chop them up.) You want to do this BEFORE adding the salt and lime juice because you will strain out the salt and lime otherwise.
- Return the strained salsa to a bowl (or the food processor), then add salt and the juice of a lime.
- Mix well, then taste. Adjust with more salt, lime, and cilantro if needed. Serve with tortilla chips.

- Place peppers, onion, and garlic clove in a saucepan, cover with water and turn heat to medium-high. Once the water starts boiling, turn down the heat to precook the peppers. The tomatoes are so small that they require less cooking time. When you see that the peppers are almost cooked (about 8 to 10 minutes), add the tomatoes and cook for 3-4 minutes. Remove saucepan from heat and let cool for a little while before placing into the blender. Do not discard the cooking liquid.
- Once the tomatoes and peppers have cooled a little, place the peppers, onion, and garlic into the blender. Process for a few seconds in the lower setting just to get a chunky texture. Then, add the tomatoes and half a cup of the cooking water. Turn the blender on again for a few seconds to get the same consistency as the peppers.
- Heat the oil in a large skillet. Once it’s hot, pour the sauce, and when it starts boiling add an extra half cup of the cooking liquid. Season with salt, stir, and simmer at a low heat for about 5 minutes.
- Check again in case it needs more salt. If you are using it as a table sauce, you can add a little bit more of the cooking liquid.

- Heat a large stainless steel skillet over high heat. Dry roast the corn, onion, and jalapeño until the kernels, onion, and pepper have a nice char. Next dry roast the tomatoes until they are browned all over and the skins have burst. Watch everything very, very closely, and remove the tomatoes as they burst.
- Seed and core the jalapeño. Set aside 1/2 cup of roasted corn kernels. Then combine the tomatoes, jalapeño, onion, remaining corn, garlic, and parsley or cilantro in a food processor. Pulse 3 or 4 times–you’re looking for a smooth salsa that also has a bit of texture. Pour salsa into a bowl, add the reserved corn, salt, vinegar, lime juice, pepper, and cayenne. Check salt and acid levels and adjust according to your tastes.
- One last thing: your skillet is going to be a mess. Let it cool a bit, carefully add some hot water and scrape up as much as you can. Dump that, and then rub the (cool) skillet with a paste made from baking soda and a little bit of water. Add more water and let it sit for a while–baking soda is magic!
