FRESH CHERRY CRISP
A cherry crisp using sour pie cherries that has an oatmeal crunch topping. This is delicious warm from the oven with ice cream. Fresh, frozen, or canned cherries may be used.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, combine cherries, 1 1/2 cups white sugar, and 4 tablespoons flour. Pour into 9x13 inch baking dish. In a medium bowl, combine 1 1/2 cups flour, oats, and brown sugar. Cut in butter and shortening until crumbly. Sprinkle over cherries.
- Bake in preheated oven for 45 to 50 minutes, or until topping is golden brown.

CHERRY CRISP
The very first time that I made Cherry Crisp, my brother happened to be visiting. He is an ice cream lover-but he passed up the scoops of vanilla that he tops most desserts with so he could taste the cherries better! Wheat, soybeans and milo are the main crops on our farm. We also have three small cherry trees. I apportion all of that harvest for this recipe. My husband's is the manager of a coop. I work part-time as a church secretary...teach piano in our home...and enjoy making clothes for myself and our 3-year-old daughter. Cross-stitch is one of my favorite hobbies.

- In a bowl, combine salt, sugar and flour; cut in butter. Press into a greased 2-qt. or 11x7-in. baking dish. Bake at 350° for 15 minutes. , For filling, combine sugar and cornstarch in a saucepan. Stir in juice. Cook over medium heat until thick, stirring constantly. Fold in cherries and food coloring if desired. Pour over baked crust. Combine all topping ingredients; sprinkle over filling. , Bake for 20-25 minutes or until golden brown and bubbly around edges.

- Heat oven to 350ºF.
- Spray 6 ovenproof (1-cup) mugs with cooking spray; place in baking pan.
- Cook nuts and granulated sugar in nonstick skillet on medium-high heat 5 min. or until sugar is melted and nuts are evenly glazed, stirring frequently. Spread into single layer on baking sheet sprayed with cooking spray. Cool 30 min.
- Meanwhile, combine oats, brown sugar and 1/3 cup flour in medium bowl. Use pastry blender or 2 knives to cut in butter until mixture resembles coarse crumbs.
- Whisk remaining flour, dry gelatin mix and water until blended. Add to cherries in large bowl: toss to evenly coat. Spoon into prepared mugs; top with oat mixture. Break any large nut clusters into small pieces; sprinkle over desserts.
- Bake 30 to 35 min. or until fruit mixture is hot and bubbly and nut topping is golden brown. Cool slightly before serving topped with COOL WHIP.

- Preheat the oven to 375 degrees.
- In a medium bowl, stir together the oats, brown sugar, cinnamon, and ginger to make the topping.
- Use a pastry cutter to work the butter into the oat mixture until pebbly.
- Gently stir in the almonds. Freeze until needed.
- Butter six 10-ounce ramekins and set them on a rimmed baking sheet.
- In a large bowl, make the filling by stirring together the cherries, lemon zest, lemon juice, and almond extract.
- In a small bowl, stir together the granulated sugar and cornstarch. Sprinkle the mixture over the cherries and toss to coat. Divide among the prepared ramekins.
- Divide the topping among the ramekins, covering the cherries.
- Bake on the baking sheet until the topping is deep golden brown and juices bubble around the edges, about 20 minutes.
- Cool at least 20 minutes, then serve warm or at room temperature with ice cream.
- Cover leftovers and store in the refrigerator for up to three days.

Although it has been tweaked a little, the original of this recipe was seen recently on Paula Deen's show, Paula's Best Dishes, & we found this very enjoyable. Prep time does not include the 15 minutes needed for the finished crisp to cool before serving.

- Preheat the oven to 350 degrees F, then lightly grease a 13"x9" baking pan, preferably glass.
- In a large bowl, whisk together the sugar & the 3 tablespoons of flour, then add the cherries & stir, tossing gently to coat before spooning the cherry mixture into the prepared pan.
