Steps:
- Put oven rack in middle position and preheat oven to 350°F. Butter a 9-inch glass pie plate.
- Stir together crumbs, butter, 2 tablespoons sugar, and salt with a rubber spatula until combined well. Press crumbs evenly onto bottom and side of pie plate. Chill crust 10 minutes.
- Stir together remaining ingredients (including 1/2 cup sugar), then pour into crust. Bake until filling is puffed, pale golden, and lightly set, about 1 hour.
- Cool to warm on a rack, about 30 minutes.

Steps:
- Place the cheese in a strainer; drain for about 1 hour or until most of liquid has drained.
- Preheat oven to 425°.
- Combine all the ingredients except the egg whites; mix well.
- Beat the egg whites until firm, fold into batter until smooth.
- Pour into pie crusts.
- Bake 15 minutes and reduce oven to 350°; bake additional 25 minutes or until knife in center comes out clean.
- Cool on racks, then chill.
- The flavors improve a day after baking.

- Separate one egg. In a small bowl, lightly beat egg white; set aside. In another small bowl, combine egg and egg yolk; set aside., On a lightly floured surface, unroll pastry; cut in half. Roll out one half of pastry into an 8-in. circle. Transfer to a 7-in. pie plate; trim pastry even with edge. Brush with egg white; sprinkle with 1/2 teaspoon cinnamon., In a large bowl, combine the cheeses, confectioners' sugar, cornstarch, vanilla, salt and egg mixture. Pour into prepared pastry., Roll out remaining pastry to fit top of pie. Place over filling. Trim, seal and flute edges. Cut slits in pastry. Brush remaining egg white over pastry; sprinkle with remaining cinnamon., Bake at 350° for 45-50 minutes or until a knife inserted in the center comes out clean. Cool completely on wire rack. Refrigerate leftovers.

Steps:
- Dissolve cornstarch in 1/2 cup milk.
- Combine cornstarch and milk with ricotta, remaining 1 cup milk, eggs, vanilla, and sugar. Mix until well blended. Pour filling into unbaked pie shell.
- Bake at 350 degrees F (175 degrees C) for 1 hour, or until a knife inserted into center comes out clean. Sprinkle top with cinnamon, and cool.

- Sieve the flour in a large bowl or in the bowl of your food processor. Make some space in the middle, crumble the fresh yeast or sprinkle the active dry yeast in there, add 2 tablespoons of the lukewarm milk, and 1 tablespoon of the sugar. Let rest for about 15-20 minutes until quite frothy.
- Add the rest of the lukewarm milk, 2 eggs, the remaining 3 tablespoons sugar, and the salt. Mix well and add the vegetable oil.
- Knead well with the food processor until the dough is elastic and doesn't stick anymore, but keep in mind that the dough should be soft. If you knead the dough by hand, you might have to add a little bit of extra flour when kneading, but don't overdo it, the dough should remain soft.
