BROWN SUGAR BBQ RUB
This is my favorite rub to use when I smoke meats. I threw it together to use on smoked pork butt, but it also works really well on chicken and ribs. Apply liberally to meat and let sit overnight for best flavor. The brown sugar helps make a nice bark. Makes enough to cover two 8-pound pork butts or 6 racks of ribs.

- Remove rib membrane from the bottom. Apply olive oil to both sides. Generously coat bottom, top, and sides of ribs with rub, working the rub into the meat with your hands (ideally the night before so rub sets in).
- After three hours, remove ribs. Apply butter, brown sugar, and honey to both sides. Double wrap in foil. Place on grill, with meat facing down (bones face up) for two hours.

- On the back side of the ribs there is a thin membrane that some people like to remove. If you want to remove it, trim the membrane by using a very sharp knife to make a small cut under the membrane at one end of the ribs. Use your fingers to peel up part of the membrane, then grip it with a paper towel, which helps to hold onto the membrane, and peel the rest of the membrane off the back of the ribs.
- Place the trimmed ribs in a large Ziploc bag and pour the entire liter of Dr. Pepper over it, then seal tightly and place in the fridge overnight to marinate.
- When ready to smoke, start the smoker with the lid open to get a good smoke established (about 3 to 5 minutes on our Traeger), then close the lid and set the heat setting to 225 degrees. Allow the smoker to come up to temperature.
- Remove ribs from the Dr. Pepper and discard the soda. Pat the ribs dry with paper towels and lightly coat both sides with a little bit olive oil. This will help the dry rub stick to the ribs.

- Remove the membrane from underside of ribs: Slide a screwdriver tip along each bone and under one end of membrane to loosen, then grab membrane with a paper towel and pull off (it's okay if membrane breaks and bits remain).
- In a small bowl, mix salt, pepper, and cayenne. Put ribs on a baking sheet and sprinkle on both sides with salt mixture. Snugly wrap each rack in heavy-duty foil. Let sit 30 minutes at room temperature.
- Meanwhile, prepare a charcoal or gas grill for indirect medium-low heat (300° to 350°; you should be able to hold your hand 5 in. above cooking grate only 6 to 7 seconds). If using charcoal, light 60 briquets in a chimney on firegrate. When coals are covered with ash, about 20 minutes, bank evenly on opposite sides of firegrate and let burn to medium-low. Set a sturdy drip pan on grate between mounds. The area over the drip pan is the indirect heat area. Add 3 or 4 more unlit briquets to each mound when ribs go on and every 30 minutes while cooking. If using gas, turn all burners to high, close lid, and heat 10 minutes. Then turn center burner(s) off and reduce heat of other burner(s) to medium-low. Place a sturdy drip pan under the turned-off burner(s). The area above the drip pan is the indirect heat area.
- Place rib packets, bone side down, on cooking grate over indirect heat, overlapping slightly if necessary. Cover grill and cook ribs until fairly tender when pierced through foil, 50 to 70 minutes.

- Prep the ribs: Remove the membrane or silverskin from the bottom side of the ribs. Flip over the rib rack so you are looking at the bottom side (the side without the meat.) Go to one end of the rib rack, using a knife slide it under the silverskin and pull. It should peel right off in one swipe. Set aside.
- Glaze: Preheat oven to 375 F degrees. Mix all of the glaze ingredients together in a large bowl. Place the ribs on a large roaster fitted with a rack and then brush the glaze all over the pork ribs thoroughly on both sides. If there's any of the glaze left over, just pour it over the ribs.
- Cook: Add 1/2 inch of water to the bottom of the roasting pan and transfer the roasting pan to the oven. Bake in the oven for about 1 hour and a half. Every 20 minutes or so, baste the ribs with the drippings from the pan. If the ribs start to brown too much, cover them with foil and finish cooking them.

- On a clean plastic cutting board, cut rack of ribs into two equal lengths. Flip them over and pat the back dry, then use a clean paper towel to pull the white-silvery membrane off the back of the ribs. If you need help, use a butter knife to gently pry membrane off the rib bones, then using the loosened membrane as leverage to strip it away from the rest of the rack.
- Season the rack parts generously with the spice rub on both sides. You may not use all the rub so keep the rub uncontaminated by raw meat hands, so that you may use the remaining rub in another recipe.

- Start with the slow cooked stage – Preheat the oven to 170c/350f. Place all of the ingredients from the slow cooked stage into a large oven-proof casserole pan.
- Heat over a high heat until boiling, then place a lid on and place in the oven for 3 hours. Check a couple of times during the last hour of cooking and top up with water if it’s starting to go dry.
- Take out of the oven and carefully remove the ribs from the pan (the meat will want to fall off the bone, so I find a good set of tongs helps to get them out). Drain any excess liquid off the ribs. Discard the cooking liquor – or use in soup or Ramen.
- Heat the oil on a high heat in a large frying pan (skillet). Add the ribs and cook, turning once or twice until the edges are golden and crisped. It takes about 6-7 minutes. Be careful as the oil will spit due to the fat on the meat.
