- Combine the pineapple juice, soy sauce, brown sugar, bourbon, pepper and garlic powder in a medium bowl. Stir to dissolve the sugar. Add the oil.
- Be sure all the skin is removed from the salmon. Place the filets in a shallow dish and pour the bourbon marinade over them, saving a little to brush on the fish as it cooks. Put a lid over the fish and refrigerate for at least an hour. A few over is even better.
- Preheat your barbeque or stovetop grill over medium-high heat. Cook the fish for 5 to 7 minutes per side or until each filet is cooked all the way through. Regularly brush the filets with the marinade.
- Arrange the filets on each plate with the chives sprinkled over the top.

Steps:
- Preheat oven to 425 F.
- For the glaze: In a small saucepan, combine the bourbon, sugar, soy sauce, garlic and mustard. Bring to a boil and simmer on low for 10-15 minutes, or until reduced by half. Remove from heat and let sit to thicken.
- Pat salmon fillets dry and season with salt and pepper on both sides. Lay the salmon skin side down on a lightly oiled wire rack set over a baking sheet (to catch the drips). If you don't have a rack, a baking sheet will work just fine. Bake for about 10-15 minutes or so, depending on the size of your fish. When the salmon is nearly done, turn the broiler on in your oven. With a food brush, spread the glaze on top of the salmon. Be generous with your glaze!
- Return to the oven and broil (not too close to heat) for about 30 seconds. Watch carefully that glaze doesn't burn. Repeat the process: take out the salmon, brush with more of the glaze and broil for a few seconds. Remove from oven.
- Arrange the fillets on each plate and drizzle each serving with the remaining glaze. Enjoy!

CHEDDARS BOURBON GLAZED SALMON RECIPE
Steps:
- Pre heat your oven to 425 degrees Fahrenheit.
- Combine the ingredients (except for the Salmon of course!) in a small saucepan to make the glaze. Bring to a boil and let it simmer on low heat for about 10 to 15minutes, or until the mixture is reduced by half. Remove from heat, and allow to rest till it thickens.
- Pat the Salmon Fillets dry and season both sides with Pepper and Salt. Lay the Salmon, skin side down, on a lightly greased wire rack with a baking sheet set beneath it to catch any drips. If you don't have a rack, a simple greased sheet will do as well.
- Place in the oven and bake for about 10 to 15 minutes, depending on your Salmon's thickness.
- When the Salmon is almost done, take it out of the oven, switch on the broiler in your oven, and generously brush the glaze over the top of the Salmon. Return the Salmon to the oven and broil for about 30 seconds. Repeat this a few times; be careful not to burn the glaze!
- Remove the done Salmon from the oven, drizzle the remaining glaze on top, and enjoy.

- In a medium saucepan, combine the bourbon, maple syrup, brown sugar, Worcestershire, soy sauce, garlic, and apple cider vinegar. Bring the mixture to a boil over medium high. Continue to simmer rapidly, stirring almost constantly. The mixture will look very active and almost foamy. Continue to cook, stirring constantly, until mixture has thickened and reduced by about half, 3 to 5 minutes. Remove from the heat.
- Position racks in the center and upper third of your oven and preheat the oven to 375 degrees F. For easy clean up in case the glaze leaks, line a large baking dish or rimmed baking sheet with parchment paper, then place a large piece of aluminum foil on top. Remove the salmon from the refrigerator and let stand at room temperature for 10 minutes while the glaze cools and the oven preheats.
- Place the salmon on top of the foil. Sprinkle with the salt and pepper. Rub to coat, then brush the glaze all over the top.

- With a basting brush, lightly brush both sides of your salmon filets with olive oil, reserving a little to brush on your clean grill grate. Important! your grill grate must be clean for this recipe to work. Otherwise, your salmon will stick and create a big mess. Lightly season each side of your salmon with kosher salt and fresh ground pepper. Preheat your grill of choice to 400 degrees F. While grill is preheating, pour 4 oz. of Sweet Bourbon Glaze into a small saucepan and heat on stove until sauce starts to slightly simmer. You want it warm, not boiling. Once your grill is preheated to the desired temperature, brush your cleaned grill grate with olive oil and place salmon, skin side up, on your grill for 5 minutes with lid closed.
- With a wide spatula, flip salmon and brush top side with Sweet Bourbon Glaze and cook for 5 minutes longer. Glaze salmon with Sweet Bourbon Glaze once more and remove from grill, let cool for 5-10 minutes.
