When a friend of mine served this, I thought it was tomato soup.. so creamy in appearance.."boy was I surprised. Taste is fantastic..had to have the recipe.. thought I'd share it with zaar friends. Easy to prepare.

Number Of Ingredients 9

2 tablespoons unsalted butter
2 large onions
2 medium size carrots
6 cups chicken stock
2 1/2 lbs sweet red peppers
1 cup skim milk
salt and pepper
1/4 teaspoon thyme
sour cream

Steps:

  • Melt butter in a large saucepan and saute chopped onions over low heat until soft.
  • Add sliced carrots, 6 cups chicken stock and bring to a boil. reduce heat and simmer 20 minute.
  • Add rough chopped red bell peppers and cook 20 min or till soft.
  • Remove from heat, add skim milk, salt and pepper to taste and thyme. remove from heat.
  • When soup is cooled, place in blender and puree in batches.
  • To serve, reheat. BE SURE NOT TO BOIL.
  • Place a dollop of sour cream on each bowl of soup. Enjoy.

3 tablespoons unsalted butter
1 large red onion, chopped
2 cloves garlic, chopped
8 large red peppers, halved,peeled,seeded and cut into chunks
2 1/2 cups chicken stock
1/4 teaspoon fresh ground pepper
salt
3/4 cup half-and-half cream (10% cream)

Steps:

  • Melt butter in a large saucepan over medium heat.
  • Add the onion and garlic.
  • Cook for 5-8 minutes or until onions are tender.
  • Add the red peppers.
  • Continue cooking for 5 minutes.
  • Add the stock, freshly ground pepper and salt.
  • Bring to a boil.
  • Reduce heat, cover and simmer for 25 minutes.
  • Put soup through a food mill to remove the pepper skins.
  • Return to saucepan.
  • Add cream and heat through without boiling.

6 medium sweet yellow peppers, cut into 1-inch pieces
1 large onion, diced
1 medium potato, peeled and quartered
1 garlic clove, minced
1 tablespoon olive oil
1 tablespoon butter, optional
6 cups chicken broth
1 bay leaf
1/2 teaspoon salt, optional
1/4 teaspoon pepper
1 cup buttermilk
Sour cream and minced chives, optional

Steps:

  • In a Dutch oven, saute the peppers, onion and potato in oil and butter if desired for about 4 minutes or until onion is tender. Add garlic and saute for 1 minute or until garlic is tender., Stir in the broth, bay leaf, salt if desired and pepper; bring to a boil. Reduce heat; cover and simmer for 20 minutes or until vegetables are tender. , Discard bay leaf. Cool slightly; puree in batches in a blender. Return to pan. Stir in buttermilk; heat through. Serve hot or cold; garnish with sour cream and chives if desired.

2 large yellow or red bell peppers
1 tablespoon olive or vegetable oil
1 medium onion, chopped (1/2 cup)
2 cloves garlic, finely chopped
1 can (28 oz) Muir Glen™ organic crushed tomatoes with basil, undrained
3 1/2 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton) or 2 cans (14 oz each) vegetable broth
1 teaspoon sugar
1/4 teaspoon crushed red pepper flakes or black pepper
1/4 teaspoon coarse salt (kosher or sea salt)

Steps:

  • Line 15x10x1-inch pan with foil. Set oven control to broil. Cut bell peppers into quarters, removing membranes and seeds. Place skin sides up in pan; press down to flatten.
  • Broil peppers with tops 4 to 6 inches from heat about 10 minutes or until blackened. Wrap foil around peppers; let stand 20 minutes. Remove skin from peppers; discard. Cut peppers into 1/2-inch pieces. Set aside.
  • Meanwhile, in 4-quart saucepan, heat oil over medium-high heat. Cook onion and garlic in oil 2 to 3 minutes, stirring constantly, until crisp-tender.
  • Stir in tomatoes, broth, sugar, red pepper flakes and salt. Heat to boiling. Reduce heat; simmer 15 minutes. Stir in roasted peppers; heat until hot.
