BEET BREAD

Beet Bread image

A delicious (and fun-colored!) free-form loaf of bread made with raw beets.

Provided by Girl vs Dough

Time 2h55m

Yield 1

Number Of Ingredients 7

3/4 cup warm water
1 1/2 cups raw beet puree (about 2 1/2 peeled medium beets)*
3 1/2 cups Gold Medal™ unbleached all-purpose flour
2 tablespoons olive oil
2 teaspoons salt
1 teaspoon sugar
2 1/4 teaspoons active dry yeast

Steps:

  • In a small bowl, combine yeast, sugar and water. Let rest 5 minutes.
  • In the bowl of a stand mixer fixed with the paddle attachment, combine flour and salt. Add in yeast mixture, beet puree and olive oil. Mix until just combined.
  • Knead, by hand or in a stand mixer fixed with the dough hook, about 10 minutes or until dough is smooth and elastic. Place dough in a lightly greased bowl, cover and let rise until doubled, about 1 to 1 1/2 hours.
  • Remove risen dough from bowl and shape into a round ball. Place dough on a baking stone or parchment paper-lined baking sheet and cover loosely with a lightly greased piece of plastic wrap. Let rise until doubled, about 45 minutes to 1 hour.
  • Preheat oven to 375°F with an empty broiler pan placed on the rack beneath where you'll put the baking stone or sheet. Before baking the bread, sprinkle the top with a little flour and make an X shape on the top with a serrated knife.
  • Place the bread in the oven and pour 1 cup hot water into the broiler pan, closing the oven door immediately. Bake 30 to 35 minutes, or until a thermometer inserted in the bottom center of the loaf reads 190°F.
  • Allow bread to cool completely on a cooling rack before slicing or serving.

SWEET BREAD RECIPE

Sweet Bread Recipe image

This sweet bread recipe makes a beautiful, soft, lightly sweetened and buttery bread loaf that's delicious as a toast with your morning coffee or tea.

Provided by Marina | Let the Baking Begin

Categories     Bread

Time 4h5m

Number Of Ingredients 12

1 cup warm milk (heated to no higher than 100F)
2 tsp Instant dry yeast or active dry yeast ((I use Platinum Superior Baking Yeast))
3 cups all-purpose flour ((bread flour or Canadian flour works best))
1/3 cup granulated sugar
4 egg yolks
2 tbsp sour cream
1 tbsp vanilla extract
3 oz unsalted butter, ( softened, room temperature)
1/4 tsp kosher salt
1 egg yolk
1 tbsp water
3 to 4 tbsp sesame seeds or poppy seeds ((optional))

Steps:

  • Check the yeast: (see footnotes if you'd like to make this dough in the breadmaker)Dissolve 2 tsp of yeast with 1/2 cup milk and 1 tsp of sugar from the overall amount and leave in a warm location until frothy, about 10-15 minutes. If the mixture does not froth up and rise, discard the yeast and start over when you have a fresh batch of dried yeast.
  • Combine all ingredients:Into a bowl of a mixer sift 3 cups of flour. Then add 1/3 cup sugar, remaining 1/2 cup warm milk, 4 egg yolks, 2 tbsp sour cream, 1 tbsp vanilla extract, and the risen yeast mixture. By hand, using a spoon or the hook of the mixer quickly mix the ingredients until a rough, shaggy mixture forms.
  • Knead: Then, attach the hook back to the mixer and knead on low speed (speed 2 to 3 on a Kitchenaid mixer) for about 20 minutes or until the dough stops sticking to the side of the bowl, feels elastic, and is tacky to touch. If the dough is properly kneaded a small piece can be stretched into a see through "window" without tearing.Pro tip: Do not overknead past a point where the dough is elastic and stretchy. If the gluten is overworked it will tear, leaving you with a chunky dough that doesn't have the strength to hold a good rise of the dough.
  • Add 3 oz of butter and 1/4 tsp of the salt and knead it into the bread until no streaks of butter are seen, (~5-7 minutes). Sometimes tearing the dough into chunks helps to incorporate the butter easier/faster.
  • 1st Rise: Oil the sides of the bowl and the dough. Cover the bowl with a kitchen towel and leave in a warm place to rise until doubled in size, about 1.5 hours. Boil a cup of water in a microwave for several minutes. Remove the cup with water. Place the bowl with the dough in the warm microwave for the dough to rise. This gives the dough a nice warm place without being too hot.
  • Shape: This recipe makes one large braid. To make two smaller sweet yeast bread loaves divide the dough into two, then shape two separate braids instead of one like the recipe instructs.Once risen, divide the dough into 3 equal pieces. Weighing the dough is the best way to divide the dough evenly. Next, roll each piece into a tight ball, then into a 20-inch log. If the dough is hard to stretch or it springs back too much, cover with a tea towel leave for 10-15 minutes. This will relax the gluten and make it easy to roll.Pinch the ends of the 3 strands together at one end, then braid them into a braid pinching the ends together as well. Now, tuck both ends of the braid underneath itself slightly to give it a better shape.
  • 2nd Rise: Transfer the sweet yeast braids to a 12"x18" baking sheet pan. Space them evenly. Cover with a clean tea towel. Transfer to a warm place once again until the braid doubles in size.
  • Prep before baking: Once doubled in size preheat the oven to 350F with the baking rack centered. Brush the braid with a whisked egg yolk and water and sprinkle with sesame seeds or poppy seeds if you wish. Applying the egg yolk mixture several times will give you a darker glaze once baked.
  • Bake the braid for about 30-35 minutes or until the top is golden brown. You can also check for doneness with a thermometer. The center of the thickest part should register 195°F. If the top starts to brown before the inside registers 195F, loosely tent the sweet yeast bread with foil.Once baked, remove from the oven to a cooling rack and cool completely before cutting or eating.

BEET AND SWEET POTATO GRATIN

Beet and Sweet Potato Gratin image

A colorful side dish. Try a variety of beets or mix in other root vegetables to enhance the rainbow effect! A mandoline will make short work of the slicing, but otherwise take your time and make the slices between 1/8 and 1/4 inch wide. The dish can stand for a long time before serving so it's a good choice for making ahead if necessary. Reheat in a 350 degree oven for 15 minutes if needed.

Provided by LydiaF

Categories     Side Dish

Time 1h

Number Of Ingredients 9

2-3 fist sized beets (peeled and sliced thinly)
1 medium-large sweet potato (two fist sized, peeled and sliced thinly)
1 medium onion (diced)
2-3 cloves garlic (finely minced)
5 tablespoons butter (divided (olive oil can be substituted))
1 tablespoon fresh thyme leaves (lightly chopped (1 teaspoon dried))
1/2 - 3/4 cup chicken or vegetable broth
salt and pepper to taste
chopped parsley for garnish

Steps:

  • Preheat the oven to 400°F/200°C. Use some of the butter to coat the sides of a 1 1/2 quart gratin dish and arrange the sliced beets and sweet potatoes in a pleasing manner.
  • After all the vegetables have been placed, saute the onions and garlic in the butter until they begin to soften and change color.
  • Stir in the chicken broth and thyme, and season with salt and pepper.
  • Pour the sauce over the beets and sweet potatoes.
  • Cover the dish with foil and bake for about 30 minutes. Remove the foil and continue to cook until the vegetables are tender and brown on the tops. It may take another 30 minutes.
  • Garnish before serving if desired.

26 FRESH BEET RECIPES FOR A POP OF COLOR - INSANELY GOOD

  • Refrigerator Pickled Beets. This easy recipe might not last quite as long as some, but the shorter prep time makes it so worth it. After all, when it’s so quick, you can easily whip up a batch whenever you need to.
  • Easy Roasted Beets. Roasting beets has to be my favorite way to enhance their flavor. I find it allows the flavor to deepen, and you won’t lose anything to a boiling liquid.
  • Beet Salad with Arugula and Balsamic Vinaigrette. Adding beets to your salad will not only give the dish a pop of color, but also makes the whole thing that much more filling.
  • Beet Smoothie. This one might not seem like something that would work, but it does. Between the berries, honey, and yogurt, you’ll be left with just the slightest hint of beet.
  • 5-Minute Beet Vinaigrette. Beets are one of the few root vegetables that can be eaten raw. When looking to blend it, as with the smoothie, be sure to dice it up small enough so your blender doesn’t overheat.
  • Beet Pickled Eggs. If you’re looking for something to serve for an Easter appetizer, this one’s for you! Pickled eggs have such a great tangy flavor, but let’s be honest, they look a bit boring.
  • Golden Beet Salad. If you’re still not convinced that beets will taste like anything other than dirt, I highly recommend trying golden beets. Their flavor is much sweeter and far less earthy than the classic red beet.
  • Classic Borscht Recipe. Beet soup has a lot going for it. It’s incredibly healthy, super colorful, and pretty darn cheap to boot. The combination of chicken broth, potatoes, carrots, beans, and seasonings makes this very filling.
  • Beet Baba Ganoush Dip Recipe. This bright little dip is typically made using roasted eggplant and tahini paste. It’s a lot like hummus and can be served on a mezze platter alongside other dips and veggies.
  • Roasted Beet Hummus. If a dip made using roasted eggplant isn’t your thing, I don’t blame you. It’s a unique flavor that not everyone loves. That’s why I love this hummus recipe.
