2 tablespoons butter or margarine
1 clove garlic, chopped
⅓ cup honey
1 tablespoon lemon juice
4 skinless, boneless chicken breast halves

Steps:

  • Preheat a grill for medium heat.
  • Melt butter in a skillet over medium heat. Add the garlic, and cook until fragrant, 1 to 2 minutes. Whisk in honey and lemon juice. Reserve half for basting, and brush the other half onto the chicken breasts.
  • Lightly oil the grill grate, and place chicken on the grill. Cook for 6 to 8 minutes per side, turning frequently. Baste often during the last 5 minutes. Chicken is done when the meat is firm, and juices run clear.

1 cup water
2 teaspoons seafood seasoning
1 teaspoon paprika
1 teaspoon garlic powder

1/2 cup sweet tea

Steps:

  • Preheat oven to 350°. Pour apple juice and water into a large shallow roasting pan. Mix seafood seasoning, paprika, garlic powder and pepper; rub over chicken. Place in roasting pan., Bake, covered, until juices run clear and a thermometer reads 170° to 175°, 50-60 minutes. Transfer chicken to a foil-lined 15x10x1-in. baking pan. 1/2 fresh chicken (chopped into small parts) or 4 pieces chicken
Marinade:
2 tbsp. soy sauce
1 tsp. dark soy sauce ( or 1 more tbsp. regular soy sauce)
2 tbsp. fish sauce
3 tbsp. sherry (cooking sherry works well too)
2 tbsp. brown sugar
1 tbsp. black peppercorns (crushed with pestle & mortar) or 1 tsp. coarsely-ground black pepper
10 cloves garlic (minced)
1 red chili (minced, to taste)
Dipping Sauce or Glaze:
2/3 cup rice vinegar (or another type of vinegar: white, white wine, or apple cider)
1/3 cup packed brown sugar
4 cloves garlic, minced
1 fresh red chili (minced) or 1/3 to 1/2 tsp. dried crushed chili or cayenne pepper
1 tbsp. fish sauce

Steps:

  • Combine all marinade ingredients in a bowl and stir well to dissolve the sugar.
  • Add chicken, turning several times to ensure the chicken is covered and literally bathed in the marinade. Cover and place in the refrigerator to marinate at least 2 hours, or overnight is even better.
  • To make the dipping sauce/glaze, place all the dipping sauce/glaze ingredients in a saucepan. Stir and bring to a boil (the smell will be quite pungent as the vinegar burns off). Reduce heat slightly to keep it on a gentle boil. When sauce has reduced to 1/3 and is bubbling all over the surface, remove from heat. The sauce will thicken as it cools and should taste tangy - a mixture of sweet, sour, salty, and spicy. Note that it's best to make the sauce right before eating, or it will thicken too much. If this happens, reheat and add a little water.
  • Brush your grill with a little vegetable oil, then grill the chicken, turning occasionally. Brush the chicken with the leftover marinade for the first 10 minutes or so, then discard marinade. (If the weather doesn't cooperate, see tip below recipe.)
  • Serve with the dipping sauce on the side, or spoon a little sauce over each piece of chicken as a glaze before serving. This dish goes well with a salad or served with rice. ENJOY! If the Weather Doesn't Cooperate: Cook the chicken in your oven!
  • Place chicken pieces on a grill pan or on a baking sheet lined with foil.
  • Bake at 375 degrees for approximately 45 minutes, or until chicken is nearly done (thicker pieces may need slightly longer).
  • Then Turn oven to the "broil" setting (on "high" if you have a choice), and move chicken to one of the upper racks of your oven.
  • Baste both sides of chicken with the leftover marinade, or with a little of the dipping sauce, then broil 3-5 minutes per side, or until fully cooked (stay near the oven for this process, or chicken may burn).

This makes the best barbecue chicken on the planet. The extra effort of making the marinade is a definite payoff. The sweet mustard glaze gives the grilled chicken a wonderful crisp coating. The chicken does need to marinate overnight so plan ahead. This mustard sauce is also fantastic on pork chops. MAKE AHEAD: The sauce can be safely stored in a lidded jar in the refrigerator for a month. WINE: The sweet barbecue sauce mate well with a full-bodied, fruity grenache such as Domaine Lafond Roc-Epine Lirac Blanc 2004 or an off dry fruity Reisling such as the very easy to drink 2002 Reisling - Domaine Fernand Engel.

3/4 cup unsulphured molasses
1/2 cup pure olive oil
1/2 cup ruby port or 1/2 cup marsala
2 tablespoons Dijon mustard

1 tablespoon Worcestershire sauce
1 shallot, minced
1 green onion, chopped
3 lbs chicken breasts, thighs, quarters, drumsticks, bone in (your family's favorite)
2 cups yellow mustard
3/4 cup light brown sugar
1/4 cup strong brewed coffee
2 tablespoons honey
1 tablespoon unsulphured molasses
1 tablespoon liquid smoke (optional)
2 teaspoons Worcestershire sauce
2 teaspoons Tabasco sauce

Steps:

  • In a medium saucepan, combine all of the sauce ingredients and bring to a simmer. Stir well and remove from heat. Let cool to room temperature, then pour into a glass jar with lid and refrigerate.
  • In a large bowl or extra large ziplock, add the first 9 ingredients and mix well. Let sit at room temperature for 30 minutes. Then, add the chicken pieces and turn to coat. Refrigerate overnight.
  • Light your grill or preheat broiler.
  • Remove the chicken from the marinade and arrange the pieces on a baking sheet/s.
  • Brush the chicken pieces with the Barbecue Sauce and grill over a medium-hot fire or broil 12 inches from the heat, turning often and rotating, until cooked through and nicely glazed, 8 to 10 minutes per side.
  • Serve hot or at room temperature.
