BROWN SUGAR GLAZED CARROTS



Brown Sugar Glazed Carrots image

Recipe video above. The most amazing quick and easy roasted carrots! Roasting brings out the best in carrots, always. And the caramelised edges are the BEST - it's the only way I make Glazed Carrots!

1 kg / 2 lb carrots (, peeled (Note 1))
1/4 cup (40g) brown sugar (, loosely packed (Note 2))
2 garlic cloves (, minced)
2 tbsp butter (30g) (, melted (or olive oil))
1 tbsp olive oil
½ tsp salt
¼ tsp black pepper
Parsley (, for garnish (optional))

Steps:

  • Preheat oven to 220C/425F (standard) or 200C/400F (fan).
  • Cut carrot on the diagonal into 4cm / 1.75" lengths. Halve thicker end so they are all roughly the same width.
  • Toss in a bowl with sugar, butter, garlic, oil, salt and pepper. Pour onto tray, spread out.
  • Roast 15 minutes. Toss, then roast a further 10 minutes until soft and caramelised on the edges with plenty of glaze left on the tray.
  • Toss carrots in the glaze, sprinkle with parsley if using. Serve warm.

1/4 cup brown sugar

Steps:

  • Cook carrots in a small amount of water until tender. Drain. In a saucepan, combine butter and brown sugar; heat until sugar dissolves. Add carrots and toss to coat. Heat through.

½ cup white sugar
⅓ cup butter
⅓ cup boiling water
1 teaspoon salt
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange carrots in an 8-inch square pan. Combine sugar, butter, boiling water, salt, and cinnamon in a bowl; pour over carrots. Cover pan with aluminum foil.
  • Bake in preheated oven until carrots are tender, about 1 1/2 hours.

2 lbs fresh baby carrots
water
1 teaspoon salt
1 teaspoon bacon grease
1/4 cup brown sugar
1/4 cup butter (melted)
1/4 cup honey

Steps:

  • Melt bacon grease in boiler.
  • Add carrots and enough water to cover the top of carrots.
  • Cover with a lid and place on medium heat and bring to a boil.
  • Turn heat to low and simmer for 30-45 minutes or until the carrots are tender when pricked with a fork.
  • When carrots become tender pour half of the water off.
  • Add melted butter,sugar and honey to carrots.
  • Place lid on pot and cook until completely tender.

  • Cover the saucepan with a lid and allow water to boil over high heat. Cook carrots for about 6 to 7 minutes.
  • Discard half of the water from the saucepan. Add the butter, sugar, and salt. Stir until well-combined.
  • Cover the pan once again and cook until carrots are tender, but not mushy, about 6 to 7 more minutes. Adjust taste as necessary by adding more brown sugar and/or salt. Check for doneness by sticking a carrot with the fork. It should poke through easily but should still be a little firm and crisp.
