AIR-FRYER APPLE FRITTERS

- Line air-fryer basket with parchment (cut to fit); spritz with cooking spray. Preheat air fryer to 410°. In a large bowl, combine flour, sugar, baking powder, cinnamon and salt. Add milk, eggs, lemon juice and 1 teaspoon vanilla extract; stir just until moistened. Fold in apples. In batches, drop dough by 1/4 cupfuls 2-in. apart onto air-fryer basket. Spritz with cooking spray. Cook until golden brown, 5-6 minutes. Turn fritters; continue to air-fry until golden brown, 1-2 minutes. Melt butter in small saucepan over medium-high heat. Carefully cook until butter starts to brown and foam, 5 minutes. Remove from heat; cool slightly. Add confectioners' sugar, 1 tablespoon milk and remaining 1/2 teaspoon vanilla extract to browned butter; whisk until smooth. Drizzle over fritters before serving.

APPLE FRITTERS
Steps:
- In a mixing bowl, combine the flour, sugar, baking powder, cinnamon, and salt.
- In a separate bowl, beat the eggs with a fork, then add milk, melted butter, and vanilla.
- Gently fold dry and wet ingredients together until just combined (do not over mix.) Fold in the apples. Add enough apples to make a very chunky batter. You want the apples to shine though!
- Heat a couple of inches of canola oil in a dutch oven over medium heat. When it gets hot (about 350 degrees), drop a little drop of batter into the oil. If it sizzles immediately and rises to the top, the oil is ready; if it burns quickly, turn down the heat.
- Drop 1 tablespoon of batter into the hot oil, six or eight at a time. Sometimes they'll flip over by themselves; sometimes you have to flip them. Just watch them and make sure they don't get too brown, but cook them long enough to make sure the batter's cooked through, about 2 to 2 1/2 minutes total. Repeat with the remaining batter. Remove fritters and drain on a paper towel.
- For the glaze (if using): In a medium bowl, whisk together the powdered sugar, salt, vanilla extract and whole milk.
- Dust the fritters very generously with powdered sugar, or dip fritters in the light doughnut glaze. Serve warm!
EASY HOMEMADE APPLE FRITTERS
These Easy Homemade Apple Fritters are packed full of fresh apples, simple to make, and can be ready in just 30 minutes!

- Dice your apples, place in a bowl and add lemon juice. This will prevent the apples from browning.
- In a large bowl, whisk eggs. Add milk, vanilla, and cooled melted butter (don't add it hot, you'll cook your eggs!) Whisk together with a fork until it is all combined.
- In another medium sized bowl, combine the flour, sugar, baking powder, cinnamon, salt, nutmeg, and ground ginger.
- Add dry ingredients to wet and mix well until a loose dough is formed. Fold in the apples.
- Fill a frying pan or sauce pan with about 3-4 cups of oil or so that you have about 3-4 inches of oil in your pan. Heat oil over medium heat until the oil reaches 375°F with a candy thermometer or an instant read thermometer. If you don't have a thermometer, use the wooden spoon test (see notes).
- Use a measuring cup to drop batter into oil, 1/4 cup or 1/3 cup. Fry until the outside is golden brown. Flip and fry other side until golden brown, for a total of about 4-5 minutes. You'll know they're done if you insert a small knife into the center and it comes clean. If not, fry a little longer so that the center is fully cooked. This time will depend on the size of your fritter.
- Use a slotted spoon to transfer to a paper towel-lined cooling rack and let cool. Repeat with all the batter.

- Pour oil into a deep-fryer or electric skillet. Heat to 375 degrees Fahrenheit.
- In a large bowl, mix together flour, sugar, baking powder, and salt.
- Stir in the milk, eggs, and oil until well combined.
- Stir in the apples until evenly distributed.
- Drop spoonfuls of batter into the hot oil. Avoid overcrowding the pan. Fry until golden, about 2 1/2 minutes on each side.
- Using a slotted spoon, transfer fritters onto a plate lined with paper towels. Let the excess oil drain briefly.

I grew up eating these apple fritters. They are shaped like a pancake and sprinkled in cinnamon-sugar. We always had this with dinner as a side dish. They are also easy to make for a crowd since you can fry them up in advance and then pop them into the oven just before dinner.

- Peel and core apples.

- Whisk together the flour, confectioners' sugar, baking powder, cinnamon, allspice, salt and nutmeg in a large bowl. Pour in the cider and vanilla extract, and whisk to make a smooth batter.
- Preheat the oven to 200 degrees F.
- Pour enough oil into a heavy-bottomed soup pot so it comes about a third of the way up the sides. Heat the oil over medium heat until a deep-frying thermometer inserted in the oil registers 360 degrees F.
- Peel, core and slice the apples into rounds, about 1/3-inch thick. Put some flour in a shallow bowl. Working in batches, dust the apple slices in the flour, then dip in the batter to evenly coat. Carefully add to the oil. Fry, turning once, until golden and crisp, about 5 minutes. Transfer to a rack set on a baking sheet, and keep warm in the oven. Repeat the process until all of the apples are cooked, allowing the oil to return to 360 degrees F between batches.
- Dust with confectioners' sugar or cinnamon sugar and serve immediately.
