1 (12-ounce) package broccoli slaw mix (recommended: The Produce Stand)
1/4 cup diced red onion
2/3 cup nonfat plain yogurt
1/4 cup honey
2 tablespoons cider vinegar
2 tablespoons diced jalapenos (recommended: Ortega)
Salt and freshly ground black pepper

Steps:

  • In a large mixing bowl combine slaw mix and red onion; set aside.
  • In a small mixing bowl, stir together remaining ingredients and pour over slaw mix. Toss to combine. Adjust seasoning with salt and pepper, if desired.
  • Refrigerate 1 hour before serving.

2 pounds green cabbage
4 carrots
1 medium yellow onion
1/2 cup mayonnaise
1/4 cup mustard
2 teaspoons apple cider vinegar
1 cup sugar
1 teaspoon black pepper
1/2 teaspoon cayenne
Salt and freshly ground black pepper

Steps:

  • Cut cabbage in quarters and remove core. Peel carrots and onion and cut into pieces that would fit through the feed tube of a food processor. Fit food processor with the large-holed grater attachment and push cabbage, carrots, and onions through feed tube to grate. In a large bowl, toss vegetables together.
  • In another medium bowl, prepare the coleslaw dressing by whisking together the mayonnaise, mustard, cider vinegar, sugar, black pepper, and cayenne. Toss dressing with the cabbage mixture, and season with salt and pepper, to taste. Cover with plastic wrap and chill for at least 2 hours before serving.

2 teaspoons apple cider vinegar
1 cup sugar
Freshly ground black pepper 1/2 teaspoon cayenne pepper
Kosher salt

Steps:

1/4 cup extra-virgin olive oil
2 Tbsp. vinegar-based hot sauce
1/2 tsp. crushed red pepper flakes
1/2 tsp. garlic powder

1/4 tsp. cayenne pepper
1/8 tsp. freshly ground black pepper
1 large head of cabbage, thinly sliced

Steps:

  • Whisk vinegar, peach nectar, oil, hot sauce, red pepper flakes, garlic powder, salt, cayenne, and black pepper in a large bowl to combine. Add cabbage and toss until completely coated in dressing. Cover and chill 30 minutes to allow cabbage to soften and flavors to meld together.

1 small head napa cabbage (2 pounds), ribs removed, leaves thinly sliced crosswise
2 medium carrots, shredded (2 cups)
1 small apple, such as Granny Smith, cored and cut into 1/2-inch cubes (1 cup)
1/3 cup cider vinegar
1/4 cup honey
2 tablespoons spicy stone-ground mustard, preferably Creole, or spicy brown mustard
1 large jalapeno chile, stem, ribs, and seeds removed, minced (3 tablespoons)

Steps:

1 (19 7/8 ounce) package bratwursts
1 large onion, halved and thinly sliced
1 (10 ounce) packaged shredded angel hair coleslaw mix
2 teaspoons caraway seeds
2 cups apple cider
1/2 cup thousand island dressing
2 tablespoons deli mustard with grated horseradish
1 tablespoon honey
vegetable oil cooking spray
hot dog buns or hoagie roll

Steps:

  • Pierce each brat with a fork, and place in a large saucepan. Top with onion and coleslaw mix; sprinkle with caraway seeds. Pour apple cider over cabbage mixture; bring to a boil. Cover, reduce heat to medium, and cook 20 minutes or until cabbage is tender. Remove brats, and set aside.
  • Drain cabbage mixture well, reserving 2 tablespoons cooking liquid. Discard remaining cooking liquid. Combine cabbage mixture, reserved cooking liquid, and Thousand Island dressing in a large bowl; toss to coat. Cover and chill.
  • Combine mustard and honey in a small bowl; set aside. Place a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add brats to pan; cook about 6 minutes or until golden brown on all sides, turning often and basting with honey mixture. For grown up servings, place 1 brat in a bun with 1/3 cup slaw. For plain servings, server brats in bun without the slaw.
