SWEET AND SPICY DR PEPPER PULLED PORK
Delicious sweet and spicy pork that is so easy to throw into the crockpot!

Steps:
- Cut onion in slices and line the bottom of the crockpot. Lay the pork shoulder on top. Sprinkle pork with brown sugar and salt and pepper.
- Pour the can of chipotle peppers on top of the pork and pour both cans of Dr Pepper on top.
- Turn the crockpot on low and cook for 4-6 hours. Remove pork from the slow cooker and shred. I also took the chipotle peppers out so they weren't too hot for the little ones. Return the shredded pork to crockpot and allow to heat through.
- Serve on tortillas and top with favorite toppings.

- Pat the pork dry and place in a 5-quart or larger slow cooker. In a small bowl, combine brown sugar and spices. Rub the mixture over the top and sides of the pork. Drizzle the vinegar over the top.
- Cover and cook on low for 8 to 10 hours or until pork shreds easily with a fork.
- Optional: Preheat oven broiler. Toss shredded pork with 1 cup BBQ sauce and spread onto baking sheet. Broil 6 inches away from heat source for 4 to 6 minutes until slightly crispy.
- Place the cabbage and carrot in a large bowl.
- Combine the olive oil, vinegar, sugar, salt, and pepper in a small bowl and whisk vigorously to emulsify. Pour over the cabbage mixture and toss to coat.
- Let sit 10 minutes before serving.

- Place roast in a greased 4- or 5-qt. slow cooker. In a large bowl, combine tomato sauce, beer, brown sugar, honey, tomato paste, seasonings and, if desired, liquid smoke; pour over meat. Cook, covered, on low 6-8 hours or until meat is tender., Remove roast. When cool enough to handle, shred meat with two forks. Skim fat from cooking juices. - Arrange sweet onions in the bottom of a slow cooker.
- Mix salt, brown sugar, paprika, black pepper, garlic powder, and red pepper flakes together in a bowl until seasonings are well mixed; rub all over pork roast. Place roast in the slow cooker, fat-side up. Brush any leftover seasonings mixture from the work surface into the slow cooker.

- Combine all brine ingredients in large container or an extra-large Ziploc bag. Mix well to combine and dissolve the salt. Rinse the pork shoulder and carefully add it to the brine. Close the bag and refrigerate the pork and the brine for at least 8 hours or overnight.
