Wow! These peanuts are addicting! They are easy to make and would be great for a party. Make sure to drain very well after cooking or they will be greasy. The recipe comes from the Betty Crocker Christmas cookbook.

2 cups unsalted peanuts
2 teaspoons chili powder
1/4 teaspoon ground red pepper (cayenne)
1/2 teaspoon garlic salt, use more if you like

Steps:

  • In a skillet, heat oil over medium heat. Stir in the peanuts, chili powder, and red pepper.
  • Cook and stir for 2 minutes or until peanuts are warm. Drain well on paper towels.
  • Sprinkle garlic salt over peanuts and toss to combine. Cool completely.
  • May be stored in a tightly covered container at room temperature.

Sweet & Spicy Roasted Party Nuts image

These party nuts are a little sweet and a little spicy. They're completely irresistible! Be sure to buy unsalted, raw nuts for this recipe. Feel free to make it your own-I love to add fresh rosemary! Recipe yields 5 1/2 cups mixed nuts.

2 cups whole almonds
2 cups pecan or walnut halves
1 1/2 cup pepitas (green pumpkin seeds)
Optional but so good: 2 tablespoons finely snipped or chopped fresh rosemary (from 4 big sprigs)
2 tablespoons maple syrup
2 tablespoons unsalted butter, melted
1 ½ teaspoons kosher salt*
1 teaspoon vanilla extract
1/4 teaspoon cayenne pepper (reduce or omit if sensitive to spice)

Steps:

  • Preheat the oven to 325 degrees Fahrenheit. Line a large rimmed baking sheet with parchment paper or a silicone baking mat so the maple syrup doesn't get stuck to the pan (this is important). Pour the almonds, pecans and pepitas onto the pan and set it aside.
  • In a small bowl, combine the optional rosemary (or any other added seasonings), maple syrup, melted butter, salt, vanilla, and cayenne (if you using). Gently whisk until blended.
  • Pour the mixture over the nuts on the prepared baking sheet. Stir well, until all of the nuts are lightly coated. Spread the mixture in a single layer across the pan (the maple syrup will pool on the bottom of the pan, but that's okay).
  • Bake, stirring after the first 10 minutes and then every 5 minutes thereafter, until almost no maple syrup remains on the parchment paper and the nuts are deeply golden, 23 to 26 minutes. (The maple syrup coating will be a little sticky right out of the oven, but will harden as the pecans cool.)
  • Remove the pan from the oven and stir the nuts one more time, spreading them into an even layer across the pan. Let them cool down for about 10 minutes, then, while the nuts are still warm, carefully separate any large clumps (this may or may not be necessary).
  • Let the nut mixture cool completely on the pan. These will keep for up to 2 months in a sealed bag at room temperature.

½ cup Confectioners' sugar
¾ teaspoon kosher salt
½ teaspoon cayenne pepper
4 teaspoons water
2 cups pecans

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the Confectioners' sugar, kosher salt, cayenne pepper, and water.
  • Add the pecans to the sugar mixture and stir until the nuts are evenly coated.
  • Transfer the pecans to the prepared baking sheet and arrange in a single layer. Do your best to make sure the nuts are evenly spread out (if they are clumped together, they won't cook evenly). Scrape out every last bit of glaze from the bowl and drizzle over the nuts. Bake for 10 to 12 minutes, until the pecans are caramelized and the caramel on the baking sheet is a rich brown color but not burnt. (The nuts around the edges will darken first; watch closely so they don't burn.)
  • Immediately slide the parchment off of the hot baking sheet and allow the pecans to cool completely on the countertop (this stops the cooking process and prevents the nuts from burning). Once cool, remove the pecans from the parchment, breaking apart any clusters if necessary, and store in an airtight container for up to two weeks.
  • Note: If the nuts are sticky after cooling, that means they are a bit undercooked. Pop them back in the oven for a few minutes and let cool again.

1 cup untoasted walnut halves
1 cup untoasted pecan halves
1 cup unsalted, dry roasted almonds
1 cup unsalted, dry roasted cashews
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon ground cumin
¼ teaspoon cayenne pepper
½ cup white sugar
¼ cup water
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
  • Combine walnut halves, pecan halves, almonds, and cashews in a large bowl. Add salt, black pepper, cumin, and cayenne pepper; toss to coat.
  • Heat sugar, water, and butter in a small saucepan over medium heat until the butter is melted. Cook for 1 minute and remove from heat. Slowly pour butter mixture over the bowl of nuts and stir to coat.
  • Transfer nuts to the prepared baking sheet and spread into a single layer.
  • Bake nuts in the preheated oven for 10 minutes. Stir nuts until the warm syrup coats every nut. Spread into a single layer, return to the oven, and bake until nuts are sticky and roasted, about 6 minutes. Allow to cool before serving.

1 teaspoon kosher salt
1 teaspoon dried thyme leaves

Steps:

  • Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper. In a medium bowl, whisk egg white until frothy. Then whisk in sugar and seasonings (if you only have garlic salt, add only 1/4 tsp (1 mL) salt) until blended. Add peanuts and stir to coat.
  • Spread peanuts out on prepared baking sheet. Roast in preheated oven, stirring a couple of times until nuts are golden brown and mixture is barely sticky, 20 to 25 minutes. I am not a nut person, but I am totally addicted to these coated nuts. They're perfect for parties and festive occasions!

2 cups mixed nuts
1 ½ tablespoons white sugar
2 tablespoons brown sugar
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon ground cumin
1 teaspoon curry powder
1 pinch ground cloves
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Place the nuts on a large baking pan and bake in the preheated oven 10 to 12 minutes, taking care they do not burn. Remove from heat and let cool approximately 5 minutes.
  • In a small bowl, mix the white sugar, brown sugar, salt, pepper, cumin, curry powder, cloves and cinnamon.

SWEET AND SPICY COATED GROUNDNUTS (PEANUTS)



Sweet and spicy coated groundnuts (Peanuts) image

2 cups/ 330g groundnuts AKA peanuts (I prefer smaller ones)
1 ½ cup/ 180g all purpose or pastry flour*
1/2 teaspoon baking powder
3/4 cup/ 135g caster sugar
1 ½ tablespoon powdered pepper like cayenne or chilli powder (add more or less for preference)
1 1/2 teaspoon grounded black pepper
3/4 teaspoon nutmeg
1 teaspoon salt
2 eggs
Oil for deep frying

Steps:

  • Fill a medium saucepan with enough water to boil the groundnuts. Place on high heat and bring to a boil. Immediately the water starts boiling, gently put in the groundnuts, cover and boil for three to five minutes. Turn off the heat and use a colander to strain the groundnuts. Spread the groundnuts over a big tray or baking pan such that there is enough room for each groundnut to dry.
  • Whisk together the flour, sugar, powdered pepper, black pepper, baking powder, nutmeg and salt in a bowl.
  • Beat the eggs together and set aside. On the same tray the groundnuts are on, pour the beaten eggs over the groundnuts making sure every groundnut is well coated. Pour half the flour onto the egg coated groundnuts and using your two hands, mix everything together carefully. It will look messy and some of the groundnuts might have stuck together.
  • Spread the groundnuts on the tray to separate the ones stuck together and pour the remaining flour on to coat. Let the coated groundnuts rest for eight to ten minutes.
  • Heat a deep fryer with oil on medium heat. When oil is hot, put in some of the groundnuts. DO NOT CROWD the fryer. Continuously stir till the groundnuts are brown. Remove from the oil and place in a colander lined with paper tissues. The groundnuts gets darker and crunchy when cooling so do not keep them in the fryer for long.
  • Store in an airtight container for up to seven days

3 tablespoons soy sauce
3 tablespoons hoisin
4 tablespoons honey
2 teaspoons chili garlic sauce
2 -3 cloves garlic, minced
1/8 - 1/4 teaspoon red pepper flakes (to taste)
1/4 cup sesame oil*
2 cups shredded carrots (approximately 2 large)
1 cup roasted, salted peanuts
1/2 cup fresh cilantro, chopped
2 tablespoons green onion, chopped
Sriracha to taste

Steps:

  • Bring a large pot of water to a boil and cook noodles until al dente, approximately 6 minutes.
  • Meanwhile, prep your veggies / garnishes. In a small bowl mix soy sauce, hoisin, honey, chili garlic paste, and red pepper flakes.
  • A couple of minutes before the noodles are done, in a large saute pan, heat sesame oil over medium heat. Add garlic and cook for 30-60 seconds. Be sure it doesn't burn! Add sauce and stir.
  • When noodles are done, drain and add immediately to pan with sauce and stir until the noodles are well coated.
  • Top with carrots, peanuts, cilantro, green onion, and Sriracha. Mix and serve!
