SWEET AND SPICY MEATLOAF



Sweet and Spicy Meatloaf image

This meatloaf recipe is made with both ground beef and Italian sausage.

Number Of Ingredients 16

2 tablespoons olive oil
1 small red onion, diced
2 medium carrots, diced
4 green onions, sliced
1 green bell pepper, diced
4 garlic cloves, minced
1/3 cup ketchup + 1/4 cup for topping
2 tablespoons Worcestershire sauce
1 teaspoon black pepper
1 teaspoon crushed red pepper
1/2 teaspoon salt
1/2 teaspoon dried parsley
1 pound ground beef
1 pound sweet italian sausage, casings removed
2 large eggs
1/2 cup breadcrumbs

Steps:

  • Preheat your oven to 350 degrees. Grease a loaf pan and set aside.
  • Heat the olive oil in a large skillet over medium heat. Add the red onion, carrots, green onions, bell pepper, and garlic.
  • Cook, stirring occasionally for 5 minutes. Cover and cook for another 5 minutes, or until the carrots are soft.
  • Mix in the 1/3 cup ketchup, Worcestershire sauce, black pepper, crushed red pepper, salt, and dried parsley. Remove from heat and let cool slightly.
  • In a large bowl, combine the ground beef, sweet Italian sausage, eggs, breadcrumbs, and cooked vegetables.
  • With clean hands, knead the meat-vegetable mixture until it is fully combined.
  • Pour the mixture into the greased loaf pan and drizzle with the remaining 1/4 cup ketchup.
  • Bake meatloaf for 1 hour.
  • Remove sweet and spicy meatloaf from the oven and drain fat. Let sit for 10 minutes prior to slicing.

I first had this at a church supper. It was delicious and asked for the recipe. I was amazed to see that there were not many ingredients in it. I now make this one and alternate it with my regular one Recipe #102545. The Sweet & Spicy Meatloaf has only a few ingredients and is delicious, and my regular one has more in it, but is delicious too. This has a nice sauce on top. I always thought that if there were more ingredients in a meatloaf, it would taste better, but not necessarily so. This is very,very tasty!

1 lb hamburger
1 cup fresh homemade breadcrumbs
1/2 cup milk
1/4 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup catsup
1/2 cup brown sugar
1/2 teaspoon dry mustard

Steps:

  • Mix the hamburg, bread crumbs, milk, onion, salt, and pepper together.
  • Make into a loaf and place in a 9x13 pan.
  • Set the oven for 350 degrees.
  • SAUCE: Mix the catsup, brown sugar, and dry mustard together.
  • Put half of the sauce on the meatloaf and bake for 20 minutes.
  • Get rid of any grease.
  • Put the rest of the sauce on and bake for another 25 minutes (total of 45 minutes).
  • Let sit for about 10 minutes.

2 slices whole-grain sandwich bread, torn into pieces
1/2 small onion, quartered
1 medium carrot, quartered
1/2 pound 93 percent lean ground turkey
1/2 pound 90 percent lean ground beef
1 large egg
1/2 teaspoon plus 1/8 teaspoon curry powder
Kosher salt and freshly ground pepper
1 tablespoon ketchup
1 tablespoon peach chutney or apricot jam
2 medium red-skinned potatoes, sliced 1/4 inch thick
1 head broccoli (florets cut into pieces, stem peeled and thinly sliced)
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat the oven to 375 degrees F. Pulse the bread in a food processor until finely ground; transfer to a large bowl. Add the onion and carrot to the food processor and pulse until finely chopped. Transfer to the bowl with the bread and add the turkey, beef, egg and 1/2 teaspoon each curry powder, salt and pepper. Mix by hand until just combined. Shape into 4 small oblong meatloaves on a foil-lined rimmed baking sheet. Mix the ketchup and chutney in a small bowl and brush over the meatloaves. Bake until just cooked through, about 20 minutes.
  • Meanwhile, bring a pot of salted water to a boil. Add the potatoes and cook 4 minutes, then add the broccoli florets and stem; cook until the vegetables are just tender, about 6 more minutes. Drain; return to the pot. Toss with the olive oil and the remaining 1/8 teaspoon curry powder. Season with salt and pepper. Serve with the meatloaves.

1 -1 1/2 lb ground deer meat (i used venison)
1/2 cup breadcrumbs
1 cup thick cinnamon applesauce
1 medium onion (chopped)
1 red bell pepper (chopped)
1 green bell pepper (chopped)
2 jalapenos (chopped)
salt and pepper (to flavor)
1/8 cup raspberry jam
1/8 cup strawberry jam
1/2 jalapeno (chopped)
1/4 cup applesauce
1/4 cup red wine vinegar

Steps:

  • Preheat oven to 350 BAKE 1 HOUR.
  • add burger, bread crumbs, apple sauce, onion, bell peppers, jalapeño, and salt & pepper to large bowl and mix together well with hands then transfer to a bread pan or 9 x 9 pan.
  • For the sauce mix all ingred together and pour over meatloaf and bake for 1 hours.

2 lbs meatloaf mixture (Veal, hamburger, pork)
1 lb sage sausage
1 small onion, diced
1 cup celery rib
1 tablespoon garlic
1/4 cup yellow pepper
1/4 cup red pepper
1 tablespoon paprika
1 pinch salt
1 teaspoon pepper
1/4 teaspoon sazon goya
2 tablespoons sofrito sauce
1 egg
1 tablespoon brown sugar
1/4 cup white wine
1 cup breadcrumbs
1 tablespoon basil
1 tablespoon parsley
1/3 cup sweet and spicy barbecue sauce

Steps:

  • Preheat oven to 350 degrees.
  • Take Meatloaf Mix ( Veal, Hamburger, Pork) and Sage Sausage put in bowl pour White wine, Paprika, Salt, Pepper, Sazon, Sofrito, 1 Egg, Bread crumbs, Basil, Parsley, Brown sugar then cut and put Onion, Celery, Garlic, yellow and red Peppers mix together well.
  • Get a larger glass pan put vegetable oil on bottom.
  • Take meat and form it so it fits whole pan then take side of hand and make small indent in the middle of meatloaf making the sides even. Then take BBQ sauce pour on top take spoon and spread it to cover the top of meatloaf and sides.
  • Put in oven and cook for 35 to 40 minutes.

If it feels to dry a splash of olive oil can help it come together.
  • The sauce is simple too. I mix the honey and ketchup together first and pop into the microwave for 20 seconds to make it easier to stir. Then mix in the rest of the ingredients taste the sauce and adjust to your liking. I use a lot of Cholula hot sauce in my glaze but I like it hot so do whatever tastes good to you. Don’t forget to apply the glaze after the loaf has baked for about 20 minutes.
