SWEET CURRY CHICKEN
The sweetness of brown sugar and honey collide with the smokey flavor of curry and the tang of soy sauce to make the most incredible, moist chicken you'll ever eat. I got this recipe from a friend and just recently tried it out on my boyfriend. (With modesty), I'll say it was fantastic! When I made this, I only used two chicken breast but used the same amount of sauce that is called for here. We love sauce, and there was still a little too much. I think this amount of sauce would be great for 4 breasts. Also, I'm sure the amount of butter can be adjusted with no real effect on the taste. This is my first posting, so I hope you enjoy!! O.K. This is an update. It seems as if the mediocre reviews are mostly due to the sweetness. I'll admit, it's very sweet. You can try to make it without the brown sugar, or maybe halving it like another reviewer suggested. (I wouldn't change the honey thought, you need that to get the right sauce consistency.) Next time I make it, I will try the same. Hope this helps!

Steps:
- Cut the chicken into strips or chunks ( I did 1 inch strips then cut them in half).
- Mix flour, salt, and cayenne in a big ziploc bag, add chicken and toss until fully coated.
- Melt half of the butter and spread it in a 13 by 9 casserole dish.
- Add chicken and coat with the butter as much as you can.
- Cook, uncovered at 350 degrees for 20 minutes.
- While it cooks, mix the brown sugar, honey, soy sauce, curry, and remaining butter with a whisk.
- After it cooks for 20 minutes, take it out and pour the sauce over the chicken.
- Cook an additional 30 minutes (uncovered).
- Enjoy!

Steps:
- Preheat oven to 400 degrees and grease a large baking sheet (with a raised side) or casserole dish.
- In a medium sauce pan whisk together all sauce ingredients. Bring to a boil over medium heat and boil for 3-4 minutes. While sauce is boiling, season chicken with salt and pepper on both sides, grease a skillet and cook chicken on both sides 1-2 minutes over medium heat, just enough to brown the very outside.
- Arrange chicken in a single layer (not overlapping) on prepared baking sheet. Brush with sauce. (there should still be plenty of sauce leftover - reserve for later). Bake for 20-25 minutes until chicken is cooked through. Pour remaining sauce over the chicken and serve hot.

- Reduce the heat to moderate and add the chile paste. Cook, stirring constantly, until the paste begins to stick to the bottom of the pan and brown, about 7 minutes. Stir in the coconut milk and return the chicken to the skillet. Cover partially and simmer over moderately low heat until the chicken is cooked through and the sauce has thickened, about 25 minutes.

- Preheat oven to 400º and prepare chicken. In small saucepan, heat 1 tablespoon olive oil and add 2 tablespoons red curry paste, cook for a minute or two to soften, cool slightly. Pat chicken thighs dry and season with salt and pepper. Rub curry mixture all over chicken and under skin.
- Heat large cast iron skillet or other oven proof pan over medium high heat with a drizzle of olive oil. Cook and sear chicken thighs starting with skin side down until lightly browned, being careful not to burn, about 3 to 5 minutes per side. Transfer to oven, skin side up and bake for 30 to 35 minutes until done.
- Meanwhile, make sweet potatoes. Heat remaining tablespoon of oil in medium sauce pan. Add ¼ cup red curry paste and brown sugar. Stir and caramelize for a couple minutes. Whisk in coconut milk until smooth, add sweet potatoes and simmer until tender, about 15-20 minutes. Stir in chopped cilantro, lime juice and zest. Taste for seasonings.
- When chicken is done, garnish with more chopped cilantro and a squeeze of lime. Serve with curried sweet potatoes. Enjoy!
