SWEET-AND-SOUR TERIYAKI WINGS
The name says its all! Sweet-and-sour sauce can sometimes be called duck sauce. They are pretty interchangeable and can be found in the supermarket ethnic aisle. Taste may differ by brand, so if you like the sauce on the sweet side, you can add 1 to 2 tablespoons of brown sugar to it. If you like it spicy, you might want to add 2 to 3 dashes of hot pepper sauce.

- Preheat the oven to 450 degrees. Lay out the chicken on rimmed baking sheets coated with nonstick cooking spray. Bake the chicken for 20 minutes, then remove from the oven and drain any liquid.
- Combine the remaining ingredients in a large bowl. Place the chicken wings in the sauce and toss to coat well. Place the coated wings back on the baking sheets and return them to the oven; cook for 25 minutes longer or until the glaze begins to caramelize and the chicken is cooked through.

Steps:
- Cut off and discard wing tips from chicken wings.
- Cut each wing at joint to make 2 sections.
- In a shallow dish, combine flour, garlic salt and lemon pepper seasoning; coat chicken pieces with flour mixture.
- Heat oil in a 12-inch skillet; add coated chicken pieces and cook until browned, turning occasionally.
- Remove chicken from skillet and arrange pieces in a shallow baking dish.
- In a medium saucepan, combine sugar, vinegar, pineapple juice, catsup and soy sauce; heat to boiling, stirring to dissolve sugar.
- Pour over chicken.
- Bake, uncovered, in a 350 degree F oven about 30 minutes or until chicken is no longer pink, turning pieces over after 15 minutes.
- Makes 24 to 30 pieces.

Steps:
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Wash chicken wings and pat dry. Sprinkle lightly with garlic powder and cayenne pepper.
- Cook on the preheated grill, turning every few minutes, until crispy on the outside and no longer pink at the bone and the juices run clear, 20 to 25 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
- While the wings are grilling, whisk sugar, vinegar, chicken broth, ketchup, and soy sauce together in a large saucepan over medium-high heat. Bring to a boil. Cook until sauce is rendered to 1/2 of the original volume.
- Preheat the oven to 400 degrees F (200 degrees C).
- Place wings in a large baking dish and drizzle sauce over top.
- Bake in the preheated oven until flavors have intermingled, 10 to 15 minutes.

Steps:
- Whisk together the water, soy sauce, sugar, pineapple juice, vegetable oil, garlic, and ginger in a large glass or ceramic bowl until the sugar has dissolved. Add the chicken wings, coat with the marinade, cover the bowl with plastic wrap, and marinate in the refrigerator for at least 1 hour.
- Preheat an oven to 350 degrees F (175 degrees C). Grease baking dishes, and set aside.

- Preheat oven to 475 degrees. In a small saucepan, whisk together soy sauce, vinegar, honey, garlic, and ginger. Bring to a simmer over medium-high and cook, stirring occasionally, until mixture thickens and is reduced by half, 30 minutes. Pour through a fine-mesh sieve into a large bowl; discard solids. - Preheat the air fryer to 380 degrees F (190 degrees C). Spray basket with cooking spray.
- Pat chicken wings dry with a paper towel. Whisk together baking powder, salt, pepper, and paprika; pour into a resealable plastic bag. Place some of the chicken wings into the bag and give it a good shake until wings are well coated. Shake off excess baking powder mixture and repeat with remaining wings until all wings are coated.

If sauce is too thick, thin out with a little water.
- Increase air fryer temperature to 400 degrees F (200 degrees C) and cook wings until cooked through and crispy brown, about 2 more minutes.
- Pour sauce into a large bowl and add the cooked wings. Toss to coat well. Garnish with sesame seeds and green onion and serve immediately.
