SWEET AND SOUR CHICKEN STIR FRY

Sweet and Sour Chicken Stir Fry image

This bright and colourful stir fry is made with a classic Sweet & Sour Sauce which is truly like what you get at good Chinese restaurants. This is not made by deep frying the chicken - it's tasty enough as it is without adding more calories!! Also see Baked version of the fried Sweet & Sour Chicken - recipe here. I know 1/2 cup of sugar sounds like a lot, but it works out at 1 1/2 tbsp per serving, which isn't too bad!

SWEET AND SOUR CHICKEN

Sweet and Sour Chicken image

Instead of deep-frying chunks of chicken, this streamlined take on an American Chinese restaurant favorite opts for stir-frying it. Sweetness comes from pineapple chunks and juice, plus a touch of brown sugar, while rice wine vinegar delivers that pleasing sour punch.

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 2 to 4 servings

Number Of Ingredients 11

2 tablespoons vegetable oil
2 boneless chicken breasts, sliced into strips
Salt and pepper
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1 cup canned pineapple chunks, drained with 1/2 cup reserved juice
3 tablespoons light brown sugar
3 tablespoons rice wine vinegar
1/4 cup chicken broth
4 teaspoons cornstarch, mixed with 4 teaspoons water
Cooked rice, for serving

Steps:

  • In a large non-stick skillet, heat oil over medium-high heat. Season chicken strips with salt and pepper and add to pan. Brown chicken and remove to plate. Add red and green peppers and cook for 1 minute.
  • Stir in pineapple chunks, juice, sugar, vinegar and broth and bring to a simmer. Simmer until sauce begins to reduce. Stir in cornstarch mixture and bring liquid to a simmer. Stir in chicken strips and cook for 5 minutes. Serve over rice.

SWEET AND SOUR CHICKEN STIR FRY

Sweet and Sour Chicken Stir Fry image

I like S&S chicken, but not too sweet. The banana ketchup has some sweetness to it already, so I skip the sugar. Suit yourself! It works either way!

Provided by Carolyn Haas

Categories     Chicken

Time 25m

Number Of Ingredients 12

4 oz fresh pineapple, cut into chunks
1 large chicken breast, cut into bite-sized pieces
1/2 medium onion, cut into wedges
1/2 medium red pepper, diced
1/4 c sliced carrot rounds
2 Tbsp banana ketchup (or regular ketchup with an added 1 tb brown sugar)
1 Tbsp rice vinegar
1 Tbsp soy sauce
1/8 tsp salt - or to taste
2 Tbsp cornstarch - divided
1 tsp peanut oil (use your favorite to stir fry)
few dash(es) sesame oil - for garnish

Steps:

  • 1. In a measuring cup, combine 1/2 cup of water, ketchup and the brown sugar if using regular ketchup, soy sauce, vinegar, salt and 1 Tb. cornstarch. (I buy my fresh pineapple cored, so there's usually a little pineapple juice in the bottom of the container - use that instead of water if you have it!) Set aside.
  • 2. Put rest of cornstarch in a zipper bag, add chicken and shake to coat.
  • 3. In wok, heat oil, add chicken and veggies. Stir fry until chicken is cooked. Make a well in the center. Add reserved liquid mixture. Stir until mixture thickens. Add pineapple chunks. Sprinkle a few drops sesame oil on top. Serve with rice.

SWEET AND SOUR CHICKEN STIR FRY

Sweet and Sour Chicken Stir Fry image

Chinese sweet and sour chicken stir fry recipe with pineapple, carrots and green peppers. Tastes just like restaurant style sweet and sour chicken or pork.

Provided by Steve Cylka

Categories     Main Course

Time 40m

Number Of Ingredients 13

3 tbsp oil
3 chicken breasts (, boneless and skinless)
2 carrots (, peeled and sliced)
1 green pepper (, cored and diced)
1 onion (, peeled and diced)
2 tbsp water ((optional))
1 can pineapple chunks/tidbits in juice
1/3 cup white vinegar or rice vinegar
1/4 cup pineapple juice ((from the can of pineapple))
5 tbsp brown sugar
2 tbsp ketchup
2 tbsp soy sauce
3 teaspoons corn starch

Steps:

  • Cut the chicken breasts into 1/2 inch chunks.
  • Peel and slice the carrots.
  • Cut the pepper and onion into 1/2-1 inch pieces.
  • Drain the pineapple from the can reserving 1/4 cup of the pineapple juice.
  • Heat a wok or frypan on medium high heat. Add 2 tbsp oil. Stir in the chicken and cook until no longer pink. Scoop the chicken onto a plate.
  • Add the remaining tablespoon of oil and dump in the sliced carrots, pepper and onion. Cover the wok or frypan with a lid. Check every couple minutes and stir to ensure the vegetables do not stick to the bottom of the pan. If needed, add the optional 2 tbsp of water which will help steam the veggies and keep them from burning.
  • Once the carrots are starting to soften, lower the heat and add the pineapple chunks and cooked chicken.
  • In a separate bowl, whisk together the remaining ingredients, ensuring the corn starch is dissolved.
  • Pour the sauce into the frypan and stir it gently through the chicken and veggies. Cook for about 5 minutes or until the sauce is thickened.
  • Serve on cooked rice.
