HERE'S an easy stew that's ready in an hour. The tender beef and colorful vegetables are perfect ingredients for a comforting meal.

1/4 cup all-purpose flour
1/2 teaspoon dried thyme, divided
3/4 pound beef cube steaks, cubed
1 tablespoon canola oil
1 cup water
1 can (8 ounces) tomato sauce
1/2 cup beef broth
1 small potato, peeled and cubed
1/2 small onion, cut into wedges
1/2 cup sliced fresh carrots
1/3 cup chopped sweet red pepper
1 teaspoon onion soup mix
1 teaspoon Worcestershire sauce
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/2 cup frozen peas

Steps:

  • In a large resealable plastic bag, combine flour and 1/4 teaspoon thyme. Add beef, a few pieces at a time, and shake to coat. , In a large skillet, brown meat in oil on all sides. Add the water, tomato sauce, broth, potato, onion, carrots, red pepper, soup mix, Worcestershire sauce, rosemary, garlic powder, pepper and remaining thyme. , Bring to a boil. Reduce heat; simmer, uncovered, for 45 minutes. Stir in peas. Return to a boil. Reduce heat; simmer 5-10 minutes longer.

This has been a favorite in our family for years. I can still remember how the aroma filled the house and made everyone's mouth's water before Sunday dinner. Here, the recipe is sized for two people.

1/2 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon dried marjoram
1/8 teaspoon ground nutmeg
1/8 teaspoon pepper
1 boneless beef chuck steak (3/4 pound and 3/4 inch thick)
1 tablespoon canola oil
1-1/2 cups water, divided
2 tablespoons white vinegar
2 tablespoons molasses
2 small carrots, cut into chunks
1 large red potato, cut into chunks
1 medium onion, cut into eight wedges
1 tablespoon all-purpose flour

Steps:

  • In a small bowl, combine the salt, thyme, marjoram, nutmeg and pepper. Rub over meat. In a skillet, cook meat in oil until browned on both sides; drain. Combine 1-1/4 cups water, vinegar and molasses. Stir into skillet. Bring to a boil. Reduce heat; cover and simmer for 1-1/4 hours., Stir in the carrots, potato and onion. Return to a boil. Reduce heat; cover and simmer for 30-40 minutes or until vegetables are tender. Remove meat and vegetables to a serving platter; keep warm. Combine flour and remaining water until smooth. Gradually stir into pan juices. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Serve with pot roast and vegetables.

2 pounds beef top round steak, cut into 1-inch cubes
2 tablespoons olive oil
1 can (15 ounces) tomato sauce
2 large onions, chopped
4 medium carrots, thinly sliced
1 large green pepper, cut into 1-inch pieces
1 cup canned pineapple chunks, drained
1/2 cup cider vinegar
1/4 cup packed brown sugar
1/4 cup light corn syrup
2 teaspoons chili powder
2 teaspoons paprika
1/2 teaspoon salt
Hot cooked rice, optional

Steps:

  • In a large skillet, brown beef in oil in batches; drain. Transfer to a 4- or 5-qt. slow cooker. , In a large bowl, combine the tomato sauce, onions, carrots, green pepper, pineapple, vinegar, brown sugar, corn syrup, chili powder, paprika and salt; pour over beef. , Cover and cook on low for 8-10 hours or until beef is tender. Serve with rice if desired. Freeze option: Freeze cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth or water if necessary.

I adapted this recipe from a now out of print Sunset cookbook, Cooking for Two. I used to buy it and a good chef's knife as a bridal shower present years ago for every wedding. This makes a generous two servings, and can be easily increased.

2 tablespoons flour
1/2 teaspoon salt (original recipe uses 1 tsp)
1 dash pepper
1 lb boneless lean lamb stew meat or 1 lb beef chuck, cut in 1 in. cubes
1 1/2 tablespoons butter
1/4 cup catsup
2 tablespoons packed brown sugar
2 tablespoons red wine vinegar
1 1/2 teaspoons Worcestershire sauce
1/2 cup water
6 small white boiling onions, peeled
2 large carrots, peeled and cut in 1 in. chunks
chopped parsley

Steps:

  • Combine flour, 1/2 teaspoons salt, and pepper. Dredge meat pieces in flour, shaking off excess.
  • In a deep 3 to 4 quart pan, melt butter over medium-high heat; add meat and brown well on all sides. Do in batches if necessary. Drain off and discard excess fat.
  • Return meat to pan with any accumulated juices. Combine catsup, brown sugar, vinegar, Worcestershire, water and remaining 1/2 teaspoons salt; add to meat. Add onion and simmer, covered, for 1 hour and 15 minutes, stirring once or twice. Check liquid level and add water, as needed.
  • Add carrots and cook for about 40 minutes longer or until meat and vegetables are fork tender. Check liquid level and add water, as needed. Sprinkle with parsley and serve.
  • Note: You can use olive oil instead of or with the butter. Balsamic vinegar is an OK sub for the wine vinegar, but the wine vinegar gives a better "sour". I often will cut up a medium onion into wedges instead of using boiling onions.

200ml pineapple juice
100g light brown soft sugar
4 tbsp tomato ketchup
2 tbsp soy sauce
3 tbsp rice wine vinegar
1 tbsp cornflour

Steps:

  • Put everything except the cornflour into a small saucepan and cook over a medium heat, while whisking, until just simmering.
  • Add the cornflour to a small bowl, add 1 tbsp water and mix together. Pour into the saucepan and whisk together until thickened and saucy.

Any side dish is great rice ,mashed potatoes,boiled etc. freezes well also. I always double the recipe to have some on hand in freezer.

2 lbs meat, cut into bite size chunks (your choice;poultry,beef,pork,wild game)
1 1/2 cups sliced carrots (or sm.bag baby carrots)
1 cup sliced celery
1 large onion, chopped
1 large green pepper, chopped
1 (10 ounce) can mushrooms (I use about 1lb fresh)
1 (28 ounce) can diced tomatoes
1 (10 ounce) can tomato soup
salt & pepper
3/4 cup brown sugar
1 teaspoon ground ginger
1 tablespoon Worcestershire sauce
water
pineapple chunk (optional)

Steps:

  • brown the meat add all the rest of the ingredients to roast pan or dutch oven.
  • (a crockpot can also be used for recipe) stir to mix well.
  • Cover and put into a 350 degree oven for about 1/2 hr.
  • or comes to a boil, and then turn heat down to 250 degrees for 2-2 1/2 hrs checking to add water, if it thickens too much.
  • Cook on low in crockpot for 5-6 hrs.
