SWEET-AND-SOUR SHRIMP SOUP

Sweet-and-Sour Shrimp Soup image

Provided by Molly O'Neill

Categories     one pot, soups and stews, appetizer

Time 1h30m

Yield About 7 cups

Number Of Ingredients 14

3 pounds medium shrimp, shells on
2 tablespoons vegetable oil
1 stalk lemongrass, smashed
1 2-inch piece ginger
1/2 teaspoon dried chili powder
1 cup tomatoes, chopped and stewed
1 tablespoon roasted sesame-seed oil
2 cups 1/2-inch chunks fresh pineapple
2 teaspoons Vietnamese fish sauce
4 scallions, julienned
2 1/2 teaspoons lime juice
3/4 teaspoons sugar
Salt and freshly ground black pepper to taste
1/2 cup cilantro leaves

Steps:

  • To make the broth, peel the shrimp, saving the shells (about 5 cups). Refrigerate the shrimp. In a heavy pot, heat the oil over high heat. When nearly smoking, add the shells, lemongrass, ginger and chili powder and toss for 3 minutes, or until the shells are toasted. Add 8 cups water and tomatoes and bring to a boil. Reduce heat and simmer uncovered for 1 hour, or until reduced by half. Strain the broth through a fine sieve, pressing down on the shells to extract liquid. (You should have 5 cups; if you have less add water to equal 5 cups.) Discard solids.
  • To make the soup, return the broth to the pot. Add the sesame oil, pineapple and fish sauce and simmer, uncovered, 10 minutes. Add the scallions, lime juice, sugar, and 1 pound of the reserved shrimp. (Save the rest for another use.) Heat until the shrimp are cooked through, about 5 minutes. Season with salt and pepper, stir in the cilantro and serve.

SWEET AND SOUR SHRIMP SOUP

Sweet and Sour Shrimp Soup image

Typically served as part of a meal in Vietnam, tangy-sweet, intensely aromatic soups like this one balance the savory, salty flavors of other foods on the table. We loved it on its own, too. Mai Pham, chef and owner of Lemon Grass restaurant in Sacramento, California, gave us the recipe.

Provided by Mai Pham

Time 50m

Yield Serves 4 (10 cups)

Number Of Ingredients 17

2 tablespoons tamarind pulp* (from a 1-lb. brick)
1/2 cup vegetable oil
2 shallots, cut into 1/8-in.-thick slices, then dried with paper towels
1 garlic clove, minced
1/2 teaspoon sambal oelek* or other chili paste
1 qt. reduced-sodium chicken broth
About 1 tbsp. Thai or Vietnamese fish sauce
2 tablespoons sugar
2 Roma tomatoes, cut into 1-in. cubes
1 cup finely shredded green cabbage
1/4 fresh pineapple, cut into wedges, then into 1/8-in.-wide matchsticks
2 cups bean sprouts
2/3 pound raw shrimp (26 to 30 per lb.), peeled and deveined
Several sprigs rice paddy herb or cilantro, chopped
15 Thai basil leaves, torn into pieces
2 Thai bird chiles or other small hot chiles, chopped
2 limes, cut into wedges

Steps:

  • Break off tamarind from brick and soak in 1/3 cup warm water 30 minutes, then push through a sieve and discard solids.
  • Heat oil in a large, heavy-bottomed pot and fry shallots, gently stirring, until golden and crisp, about 12 minutes. Drain on paper towels. Pour all but about 2 tsp. oil into a heatproof bowl (reserve for another use).
  • Cook garlic in pot over medium heat, stirring, 20 seconds. Add chili paste, broth, 1 cup water, the fish sauce, sugar, tamarind liquid, and tomatoes; bring to a boil, covered.
  • Simmer, uncovered, 5 minutes. Add cabbage, pineapple, bean sprouts, and shrimp; cook just until shrimp curl. Stir in herbs and chiles; serve with shallots and lime wedges.
  • *Find tamarind pulp and sambal oelek in the Asian aisle of well-stocked grocery stores or at Asian markets.

SWEET AND SOUR SHRIMP & VEGETABLES

Sweet and Sour Shrimp & Vegetables image

This is my version of sweet & sour shrimp. I've tried and tried to find the exact recipe I was looking for but never found it, so I just made my own! I hope you enjoy it :) I like to use fresh pineapple, but if you cant thats fine. The chunks are optional... I use them sometimes, and othertimes I just leave them out. Dont use a lot of pineapple chunks, because its too overwhelming! :)

Provided by love4culinary

Categories     One Dish Meal

Time 35m

Yield 3-4 serving(s)

Number Of Ingredients 13

1 1/2 tablespoons vegetable oil
1 onion, chopped into large pieces
4 carrots, chopped into large but thin pieces
2 cloves garlic, minced
1/3 cup soy sauce
2 tablespoons brown sugar
1 cup pineapple juice
4 tablespoons rice wine vinegar
1/3 teaspoon cayenne (or more to your tastes)
1/2 lb shrimp, peeled and deveined (about twenty or so 26-30 count shrimp)
1 1/2-2 tablespoons cornstarch
water
10 small pineapple chunks (optional)

Steps:

  • In a large skillet or in a wok, heat your oil to medium heat, and then add the carrot, tossing very frequently.
  • Allow the carrot to cook for about 4 minutes.
  • Then add your onion, and cook for another 4 minutes or so, and then add your garlic, cooking for another minute or so.
  • In a liquid measuring cup, add your soy sauce, brown sugar, juice, vinegar and cayenne.
  • Add your liquid mixture to the skillet and bring to a heavy simmer.
  • Add your shrimp, and cook until your shrimp is done (pink on both sides) approximately 3-4 minutes.
  • Don't overcook your shrimp.
  • At this time, you can throw in your pineapple chunks if you wish to use them.
  • While your shrimp is cooking, mix your cornstarch with approximately 4-5 tablespoons of water (just enough to make it a liquid mixture-you may need a little more or a little less because I never measure the amount of water I use).
  • Add the cornstarch mixture to your pan, and sir constantly until thick- this will not take very long at all.
  • You may turn your heat down to medium-low.
  • Serve with rice.
  • ENJOY!

Number Of Ingredients 13

6 extra-large whole shrimp (head-on, tail-on)
1 teaspoon sea salt
2 tablespoons vegetable oil
4 garlic cloves
32-oz chicken broth
30 grams tamarind pulp
1-½ teaspoons fish sauce
3 tablespoons granulated sugar
5 oz okra
5 oz pineapple
1 large tomato
2 tablespoons minced rice paddy herbs, Thai basil, culantro or cilantro
