½ cup light soy sauce
3 scallions, minced, divided
3 cloves garlic, minced
1 tablespoon toasted sesame seeds
1 tablespoon cornstarch
1 tablespoon finely minced ginger
1 ½ teaspoons mirin
1 ½ teaspoons white sugar, or more to taste
1 teaspoon red pepper flakes
½ teaspoon sesame oil
1 pound fresh shrimp, peeled and deveined
½ tablespoon gochujang (Korean hot pepper paste)

Steps:

  • Combine soy sauce, 2 minced scallions, garlic, sesame seeds, cornstarch, ginger, mirin, sugar, red pepper flakes, and sesame oil in a bowl to make marinade.
  • Place shrimp in a large resealable plastic bag; pour in marinade. Seal the bag and shake to coat shrimp. Place in refrigerator and marinate for 15 to 20 minutes.
  • Heat a skillet over medium-high heat; add shrimp. Cook, turning and basting a few times with leftover marinade, 5 to 7 minutes. Transfer shrimp to a bowl, reserving oil in the skillet.
  • Pour 3 tablespoons of the marinade and gochujang to the skillet over medium heat. Cook and stir until thickened, about 2 minutes. Brush glaze over cooked shrimp or use as a dip. Sprinkle the remaining minced scallion on top.

6 tablespoons chicken stock or water
3 tablespoons ketchup
3 tablespoons sugar
3 tablespoons pineapple or orange juice
2 tablespoons vinegar
2 teaspoons soy sauce
3/4 teaspoon crushed red pepper flakes
2 teaspoons cornstarch
1 pound shrimp
2 teaspoons minced ginger
2 teaspoons minced garlic
2 tablespoons peanut or vegetable oil
1 cup thinly sliced onions
1 cup 1-inch chunks green bell peppers
1 cup pineapple chunks
12 maraschino cherries
6 tablespoons thinly sliced green onions
Hot white rice, accompaniment

Steps:

  • To make the sauce, in a bowl, combine 1/4 cup of stock, the ketchup, sugar, juice, vinegar, soy, and 1/2 teaspoon of the pepper flakes. Set aside.
  • In a small bowl, combine the cornstarch with the remaining 2 tablespoons of stock and stir to dissolve. Set aside.
  • In a bowl, toss the shrimp with the ginger, garlic, and remaining 1/4 teaspoon pepper flakes. Set aside for 10 to 20 minutes.
  • Heat a large wok over high heat. Add the oil, swirling to coat the sides and bottom of the pan. Add the shrimp, garlic, and ginger and stir-fry until pink, about 2 minutes. Remove from the pan. Add the onions and peppers and stir-fry until crisp-tender, about 2 minutes. Add the sauce and cook, stirring, until the sugar dissolves. Add the cornstarch mixture and bring to a boil. Return the shrimp to the pan and add the pineapples, cherries, and green onions. Cook until the sauce is thick, about 1 minute.
  • Remove from the heat and serve over rice.

½ cup honey
⅓ cup rice vinegar
1 tablespoon soy sauce
3 tablespoons tomato paste
3 tablespoons pineapple juice
1 tablespoon cornstarch

1 pound shrimp (peeled and deveined, 16/20 count size)
½ teaspoon kosher salt
¼ teaspoon black pepper
2 tablespoons vegetable oil (divided)
½ teaspoon sesame oil
1 cup red bell pepper (¾-inch dice)
1 cup zucchini (¼-inch slices)
2 teaspoons minced garlic
1 teaspoon minced ginger
1 cup pineapple chunks
1 tablespoon sliced green onion
¼ teaspoon sesame seeds

Steps:

  • Whisk together honey, rice vinegar, soy sauce, tomato paste, and pineapple juice and a medium bowl.
  • Whisk together cornstarch and water in a small bowl.
  • Dry shrimp with paper towels. Combine shrimp with salt and pepper in a medium bowl.
  • Heat a wok or large saute pan over medium-high heat. Add 1 tablespoon vegetable oil and sesame oil.
  • Once the oil is hot add the shrimp in a single layer, do not move for 1 minute. Stir and cook another 30 seconds. Transfer cooked shrimp to a clean plate.
  • Add 1 tablespoon of vegetable oil to the pan, once hot add the bell pepper and zucchini. Stir-fry for 2 minutes.
  • Add in the garlic and ginger, stir-fry for 30 seconds.
  • Add in the pineapple and stir-fry for 30 seconds.
  • Pour in the sweet and sour sauce, stir and cook until simmering, 2 minutes.
  • Whisk the cornstarch mixture and then gradually add it to the center of the pan. Stir constantly until the sauce is thickened, 30 seconds.
  • Add the cooked shrimp, stir to combine and cook until shrimp are warmed through, 2 minutes.
  • Serve sweet and sour shrimp garnished with green onions and sesame seeds.

1 Pineapple
600 grams King prawn
0.5 tsp allspice
0.5 tsp peppercorns

2 Tbsps sunflower oil
1 tsp powdered sugar
100 milliliters Orange juice
150 milliliters Vegetable broth
1 tsp cornstarch
1 Tbsp sweet and sour Chili sauce
4 stalks cilantro

Steps:

  • Cook rice according to package directions until al dente.
  • Meanwhile peel pineapple, cut off the ends and cut the pineapple lengthwise into quarters. Cut out the hard core, cut the quarters into pieces.
  • Rinse shrimp under cold water and pat dry. Crush allspice with peppercorns in a mortar, season with salt and season the shrimp. Heat oil in a pan and cook the shrimp briefly, then take out of the pan.
  • Coat the pineapple pieces with powdered sugar and gently caramelize in pan drippings. Deglaze with juice and broth and bring to a boil.
  • Mix the cornstarch with a little cold water until smooth and stir into the sauce. Simmer until light and creamy, reduce the heat and season with chile sauce and salt. Add the shrimp and let simmer.
  • Rinse cilantro, shake dry, pluck leaves. Serve the shrimp with the rice and garnish with cilantro.

This is a very fast and tasty dish. It is great just as written, although I also like to add a little Thai Chili Sauce to it for zing! Also, I use a mix of stir fry vegetables, but the original recipe calls for frozen bell peppers. If you wanted to cut the peppers, this would probably be good with fresh peppers. This recipe is doubled from the original.

16 ounces stir fry vegetables, frozen
2/3 cup apricot jam
4 teaspoons red wine vinegar
12 ounces shrimp, cooked, peeled, and deveined
1/2 cup unsalted dry roasted peanuts, chopped

Steps:

  • Heat the oil in a nonstick skillet over medium high heat.
  • Add the peppers and cook for about 5 minutes, stirring, occassionally.
  • Add the jam and vinegar. Cook for 2 minute or until bubbling.
  • Add the shrimp and cook for 3 minutes or until bubbling.
  • Serve and sprinkle with peanuts.
  • NOTE: I changed the cook times slightly to account for the recipe being doubled.

1 1/2 cups canned pineapple chunks (drained)

1/4 cup sugar (or more)
1/4 cup apple cider vinegar
1 tablespoon mirin
3 tablespoons soy sauce (low sodium)
1 tablespoon minced garlic
1 tablespoon fresh ginger (minced)
1/4 teaspoon red pepper flakes
1/4 cup ketchup
3/4 cup pineapple juice
2 tablespoons cornstarch
Fresh green onions
Sesame seeds

Steps:

  • Add all the ingredients to a medium bowl, whisk until fully combined. Set aside.
  • Place a large skillet or wok over medium-high heat and add oil.
  • Once the oil is hot add shrimp, and cook for about 1 minute on each side.
  • Add bell pepper and pineapple chunks to the wok and cook for 5 minutes, until the bell pepper starts to get tender, but is still crunchy. Stir often.
  • Give the sauce a stir and add it to the skillet. Stir to combine and cook for 1-2 minutes until the sauce thickens.
  • Remove from heat and serve over rice.
  • Garnish with green onion and sesame seeds if desired.

1/4 cup Japanese soy sauce

Add the pineapple and cook, stirring occasionally, until heated through, about 2 minutes. Stir in the shrimp and garlic and stir-fry until the garlic gives off its aroma, about 1 minute. Pour in the sauce base and brin to a boil to thicken the sauce stirring occasionally.
  • Serve hot, spooned over rice.
