This is a recipe from a sweet old German lady I used to attend church with. Allow for plenty of time to prepare and cook this dish. It is definitely worth the time and effort! Serve with hot German potato salad and red cabbage.

2 pounds sauerkraut, rinsed and drained
1 tablespoon caraway seeds
¼ cup brown sugar
1 apple, diced
½ pound bacon, cut into 1-inch pieces
1 large onion, chopped
1 ½ pounds kielbasa sausage, cut into 1-inch thick slices

Steps:

  • Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Place the bacon and onion into a skillet over medium heat, and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut. In the same skillet, brown the kielbasa sausage in the remaining bacon grease until the sausage begins to brown, 10 to 15 minutes; stir into the sauerkraut mixture. Spoon the sauerkraut and sausage mixture into the prepared baking dish.
  • Bake in the preheated oven until bubbling, about 1 hour.

Every New Year's Day, my mom would make her 'famous' sauerkraut. It is more than a traditional meal to ensure a prosperous new year; it is simply delicious (and easy)! Even for those who do not usually enjoy sauerkraut, this recipe's sweet flavor is hard to resist!

1 quart sauerkraut, drained and rinsed
1 ½ cups water
¾ cup diced carrot
¾ cup brown sugar
⅔ cup chopped apple
½ sweet onion, minced
1 teaspoon caraway seeds
salt and ground black pepper to taste
1 pound fully cooked kielbasa, cut into 1-inch pieces

Steps:

  • Place sauerkraut, water, carrot, brown sugar, apple, sweet onion, caraway seeds, salt, and black pepper in a slow cooker. Cook on Low for about 7 hours; add kielbasa. Cook for one more hour.

4 bacon strips, diced
1 medium onion, chopped
1 can (27 ounces) sauerkraut, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, drained
1 cup packed brown sugar

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels; drain, reserving 1 tablespoon drippings. Saute onion in the drippings until tender. , Stir in sauerkraut, tomatoes, brown sugar and bacon. Bring to a boil. Transfer to a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 30-35 minutes or until bubbly.

1 large onion, sliced
2 large garlic cloves, minced
3 tablespoons vegetable oil
1 teaspoon cumin seed, toasted
10 whole allspice, crushed
1 (28 ounce) can whole tomatoes
1/4-1/2 cup packed dark brown sugar
1 1/2 teaspoons salt
1/4 teaspoon black pepper
3 lbs sauerkraut, rinsed well and drained

Steps:

  • Cook onion and garlic in oil in heavy saucepan over moderately low heat, until golden brown, about 30 minutes.
  • Increase heat to moderate, and add cumin and allspice and cook 30 seconds.
  • Add tomatoes (including juice), brown sugar, salt, and pepper and simmer. Break up tomatoes and cook 10 minutes.
  • Stir in sauerkraut and bring to a boil.
  • Reduce heat and simmer, partially covered, until most of liquid is absorbed (about 30 minutes).

  • In a large skillet cook the bacon until crisp. Remove to paper towels and saute the onion in the drippings.

3 pound packaged sauerkraut, rinsed well and drained

Steps:

  • Cook onion and garlic in oil in a 3 1/2- to 4-quart heavy saucepan over moderately low heat, stirring occasionally (stir more frequently toward end of cooking), until golden brown, about 30 minutes. Increase heat to moderate, then add cumin and allspice and cook, stirring, 30 seconds. Add tomatoes (including juice), brown sugar, salt, and pepper and simmer, stirring occasionally and breaking up tomatoes, 10 minutes. Stir in sauerkraut and bring to a boil, then reduce heat and simmer, partially covered, stirring occasionally, until most of liquid is absorbed, about 30 minutes.

1 large onion, quartered and thinly sliced
2 medium carrots, peeled and thinly sliced
1 large celery stalk, finely diced
4 cups water with 2 vegetable bouillon cubes, or other stock option (page 9)
3 medium Yukon Gold or red-skinned potatoes, peeled and diced
2 medium apples, peeled and diced
One 16-ounce can sauerkraut, well drained
One 16-ounce can salt-free diced tomatoes, undrained
1 teaspoon salt-free seasoning (see page 4 for brands)
One 16-ounce can small white beans, drained and rinsed
2 tablespoons natural granulated sugar, more or less to taste
Salt and freshly ground pepper to taste
One 8- to 12-ounce package tempeh, any variety, or one 8-ounce package soy sausage links

Steps:

  • Heat half of the oil in a soup pot. Add the onion, carrots, and celery and sauté over medium heat until all are golden.
  • Add the water with bouillon cubes and the potatoes. Bring to a rapid simmer, then lower the heat. Cover and simmer gently for 15 minutes, or until the potatoes are just tender.
  • Stir in the apples, sauerkraut, tomatoes, seasoning, and beans. Simmer for another 15 to 20 minutes, or until everything is tender.
  • Adjust the consistency with a bit more water if the soup seems crowded. Add sugar in small amounts to balance the tartness of the sauerkraut, tasting as you add. Season with salt and pepper (you may need very little salt, if any). If time allows, let the soup stand off the heat for an hour or so.
  • Just before serving, cut the tempeh into dice, or cut the soy sausage into 1/2-inch-thick slices. Heat the remaining oil in a medium skillet. Add the tempeh or sausage and sauté over medium-high heat, stirring frequently, until crisp and browned on most sides. Meanwhile, heat the soup through. Top each serving with some of the tempeh or sausage.
