SWEET AND SOUR GREEN BEANS WITH BACON
Sweet and Sour Green Beans with bacon is a fast way to jazz up a regular can of green beans. Bacon, onions, sugar and vinegar turns a plain can of beans into a family-pleasing side dish in no time flat.

Steps:
- Cut bacon into chunks, and cook over medium until the fat is rendered out and the bacon is crispy.
- Remove the bacon pieces to a bowl, leaving behind the bacon grease.
- Saute the onions in the bacon fat until soft; add vinegar, sugar and undrained green beans.
- Simmer for 15 minutes.
- Top with cooked bacon.

- In a large skillet, cook bacon until crisp. Remove to paper towels. Drain, reserving 2 tablespoons drippings.
- In the drippings, saute onions until tender.
- Add brown sugar, vingear, salt, mustard and garlic powder. Bring to a boil.
- In a slow cooker, combine beans and peas. Add onion mixture and bacon; mix well. Cover and cook on high for 3-4 hours or until heated through.

QUICK SWEET AND SOUR GREEN BEANS

- Wash, trim and cut green beans and dice your shallots.
- In a medium sized pot boil beans in water for about 5 minutes or until tender and bright green. Drain and leave in your colander.
- In the same pot heat the oil and wait for the oil to shimmer or a drop of water flicked in it dances. Add the diced shallots. Sauté over medium-high heat and stir constantly, until softened, about 3 or 4 minutes.
- Add the vinegar, salt, pepper and sugar and stir until incorporated. Taste mixture. Ken prefers things a little sweeter than I do and so might you!
- Add drained can of corn if using. Return beans to the pot. Combine and remove from heat. Toss gently until corn and beans are well coated. Serve immediately and enjoy!

- Drain pineapple, reserving juice. Set pineapple aside. In a bowl, combine the brown sugar, cornstarch and ginger. Add enough water to reserved juice to measure 1/2 cup; stir into cornstarch mixture until smooth. - Cook rice according to package instructions. Meanwhile, in a small bowl or measuring cup, whisk together cornstarch, sugar, soy sauce, and vinegar. Set aside.
- In a large skillet or wok, heat oil over high. Add chicken, bell peppers, and green beans and cook, stirring frequently, until vegetables begin to soften, about 5 minutes. Add scallions, ginger, and garlic and cook, stirring frequently, until chicken is cooked through and vegetables are tender, about 4 minutes.

This is my absolute favorite baked beans recipe - I didn't like them until I tasted this. It is my aunt's - a family favorite! When I can't find limas in a can, I use a frozen package. We also make this vegetarian by omitting the bacon.

- Fry bacon until crisp. Remove and crumble.
- Add onions to grease and add sugar, mustard, salt, and vinegar.
- Cover and cook on stovetop for 20 minutes.
- Drain all beans except pork and beans.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Reserve 2 tablespoons bacon fat.

SWEET AND SOUR LONG BEANS

- To cook the rice: Place the rice and water in a glass-measuring cup large enough to hold them or any microwave safe bowl. The rice expands a lot during cooking, so choose a container large enough to accommodate the final product. Microwave on high, uncovered, for 10 minutes. Microwave on medium-low, uncovered, for 15 minutes. Do not stir the rice at any time during the cooking process. Season with salt and fluff with a fork just before serving.
- To prepare long beans: In a small non-reactive bowl, combine garlic, ginger, soy sauce, lime juice and brown sugar, stir until completely mixed.
- In a large skillet or wok pan, heat oil over medium high heat. Add pork and cook until browned, about 3 to 4 minutes. Add the beans and toss until well coated. Cook 7 to 10 minutes or until beans are almost cooked. Increase heat to high, add the sauce and cook until sauce reduces and thickens, about 5 to 6 minutes. Serve immediately over hot rice.

- Place a large bowl of ice water next to the stove. Bring a large pot of water to a boil in a large pot. Add half of the green beans, cover, return to a boil and cook for 2 minutes. Use a slotted spoon to transfer the beans to the ice water to cool. Repeat with the remaining beans.
- Drain the cooled beans and divide among 6 pint-size (2-cup) canning jars or similar-size tempered-glass or heatproof-plastic containers with lids. Add 1 to 3 chile peppers to each jar.
- Combine vinegar, 3 cups water, sugar and salt in a large saucepan. Bring to a boil and stir until the sugar and salt dissolve. Boil for 2 minutes. Remove from the heat.
- Carefully fill jars (or containers) with brine to within 1/2 inch of the rim, covering the beans completely. (Discard any leftover brine.)
- Place the lids on the jars (or containers). Refrigerate for at least 24 hours before serving. Store in the refrigerator for up to 1 month.
