SWEET AND SOUR SAUSAGE
This recipe for Sweet and Sour Smoked Sausage fits in the good, but easy category. If I get everything chopped and prepped before soccer it only takes a few minutes to throw together when we get home.

Steps:
- Heat the olive oil in a large skillet over medium heat. Add the sausage and cook over medium heat, stirring occasionally, until lightly browned. Remove with a slotted spoon and set aside on a plate. Add the peppers to the pan and sauté over medium heat until tender. Remove and set aside with the sausage.
- Combine all ingredients in the skillet and whisk until well mixed. Cook over medium-high heat until boiling, then reduce to a simmer. Add the sausage, peppers, and pineapple. Stir to coat. Serve over rice. Sprinkle with sesame seeds if desired.

- In a large pot, combine chili sauce, jelly, lemon juice, light brown sugar and mustard.

Steps:
- Melt butter in a large skillet.
- Sauté onions until soft and translucent.
- Add brown sugar, ketchup, vinegar, mustard, Worcestershire sauce and pepper sauce. If using sucralose, acesulfame or saccharine, add it at this point also. Simmer 20 minutes.
- Put sausage in a slow cooker. Add sauce and onions. Cook on low 4-8 hours.
- If using aspartame, stir in just before serving.

- Drain pineapple, reserve juice (*for a substitute to the chicken broth, you can use 1 cup juice/water with 1 bouillon cube and omit the salt); set aside.
- Slice sausage into 1/2 inch thick slices; set aside.
- In a 9x13 baking dish, blend cornstarch, soy sauce, vinegar, sugar, salt & broth with a whisk until smooth.
- Add meat and pineapple chunks. Mix well.

- Cut the Kielbasa into 1 to 2 inch thick slices and add to the chili / jelly mixture.
