- Preheat the oven to 425 degrees F.
- For the dressing: In a small bowl, whisk together the pomegranate molasses, vinegar and mustard. Pouring in a steady stream, whisk in the olive oil. Season with 1/4 teaspoon salt. (The dressing can be made up to 3 days in advance.)
- For the salad: Scatter the sweet potatoes and pearl onions on a rimmed baking sheet. Drizzle with the olive oil and season with 1 teaspoon salt. Roast until the potatoes are tender throughout and beginning to brown, about 35 minutes, tossing halfway through. Transfer to a large bowl to cool slightly.
- Add the apples, baby kale and the dressing to the bowl, and season with 1/4 teaspoon salt. Using two wooden spoons, toss gently to combine and coat evenly in the dressing.
- Sprinkle the salad with the pomegranate seeds before serving.

- Heat olive oil in a large pot over medium heat. Stir in the onion and garlic; cook and stir until the onion softens and turns translucent, about 5 minutes. Stir in the mustard, sugar, vinegar, and chicken stock, and bring to a boil over high heat. Stir in the kale, cover, and cook 5 minutes until wilted.
- Stir in the dried cranberries, and continue boiling, uncovered, until the liquid has reduced by about half, and the cranberries have softened, about 15 minutes. Season to taste with salt and pepper. Sprinkle with sliced almonds before serving.

SWEET AND SAVORY KALE
I bought a large bag of kale and this recipe was on the back. I tried it and really enjoyed the sauce. I opted to leave out the almonds and cranberries, but it would be nice to dress it up. Enjoy! This will work with collards and other greens too. Kale is very high in beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, and reasonably rich in calcium. Developed in Europe, it is used in England, Italy, Ireland, Germany, the Netherlands, Scotland, East Africa, Denmark, Sweden, Montenegro, Russia and even Japan. During World War II, the cultivation of kale in the U.K. was encouraged by the Dig for Victory campaign. The vegetable was easy to grow and provided important nutrients to supplement those missing from a normal diet because of rationing. Kale was introduced into Canada (and then into the U.S.) by Russian traders in the 19th century.

- In a large stock pot, heat the olive oil on medium high heat.
- Add onion and garlic, and saute until the onion softens, stirring often, about 5 minutes.
- Stir in mustard, sugar, cider vinegar and vegetable stock. Bring to a boil on hight heat. Add kale, cover, and cook 5 minutes, stirring often.
- Add the cranberries, if using, and continue cooking on medium high heat, stirring often(even if you don't use the cranberries, still cook a little longer).
- The liquid should reduce by half and the cranberries will get plump in about 10 minutes.
- Season with salt and pepper. Sprinkle with almonds if desired.
- Enjoy!

- Cook the bacon in a large Dutch oven over medium heat until browned and crisp, about 8 minutes, stirring often. Transfer bacon pieces into a bowl with a slotted spoon, leaving the drippings in the pan.
- Stir water, vinegar, sugar, salt, and black pepper into the bacon drippings until the sugar has dissolved; bring the mixture to a boil. Place collards into the boiling mixture, and stir to mix well. Cover the Dutch oven, reduce heat to a simmer, and cook until the greens are tender, 30 to 45 minutes. Drizzle in a little more water or vinegar if greens become too dry.
- Spoon greens into a serving dish, and sprinkle with the cooked bacon pieces.

SWEET-AND-SOUR KALE WITH GOLDEN RAISINS AND PINE NUTS

- 1. Set the oven at 350 degrees.
- 2. On a baking sheet, spread the pine nuts. Bake for 7 to 8 minutes, or until fragrant and golden.
- 3. In a large flameproof casserole over medium heat, heat the oil and garlic until the garlic starts to sizzle and turn pale golden. Add the raisins and cider and stir for 30 seconds, or until the raisins soften slightly.
- 4. Add as many handfuls of kale as will fit in the pan. Cook, turning often with tongs, until the kale begins to wilt. As the volume decreases, add more kale to the pan until all the kale has been added. Cook, stirring often, for 5 minutes, or until the kale is tender. If the pan seems dry, add water, 1 tablespoon at a time. Sprinkle with salt and pepper.
- 5. Stir in the lemon juice, vinegar, and pine nuts. Taste for seasoning and add, more lemon juice or vinegar, if you like. Sprinkle with the lemon rind.

- Place all the sauce ingredients apart from the cornflour and water in a saucepan on medium heat. Whisk and bring to a gentle simmer.
- Mix the cornflour and water in a bowl then add the slurry to the sauce, continuing to whisk it all together. The sauce will thicken a bit, give it a minute or two and then turn off the heat.
- Slice the block of tofu in half and then into six strips. Now you can use your hands to break each strip into about four or five chunks inch chunks. If you find that too tricky you can score a line with the knife first before breaking up, or just cut into cubes. It doesn't really matter what size you make the chunks, just make sure they are roughly the same size.
- Place the tofu chunks into a bowl with the cornflour, garlic, ginger, salt and pepper. Toss well so all the edges of the tofu is fully coated in the flour. If you need to add a little more cornflour then do so.
