SWEET AND MILD COOKED TOMATO SALSA
When fresh tomatoes from my garden start ripening faster than I can eat them fresh, I make this salsa. I modified the recipe to match my taste for sweet salsa with just a bit of zip. I freeze peeled tomatoes so that I can have the garden-fresh taste in winter, too.

ADDICTING SWEET AND SOUR SALSA
I went to my nephews graduation party. I had one bite of this salsa and had to track down the person that brought it. She was nice enough to email it to me. YUM!! It looks beautiful in a jar with nice ribbon for Hostess gift! Great for BBQ's (great over grilled chicken). Great with Tortilla chips. I have not taken this recipe anywhere with out having a recipe request- Chef Note: I like to chop vegies and keep them in a ziploc bag and put together with the juice a couple hours prior to event- I like crisper vegies. Other family members prefer the vegies to be marinated longer - So it is really just a matter of taste.

Steps:
- Heat oven to 160C/140C fan/gas 3. Snugly fit the ribs into a roasting tin. Pour over the pomegranate juice and enough water (if needed) to cover the ribs, then cover tightly with foil. Roast for 2-3 hrs, turning halfway through, until the ribs are really tender, but not falling apart.
- Put all the sauce ingredients in a small saucepan. Gently heat, then bubble for about 2 mins, stirring. Set aside.
- When the ribs are done, tip away the liquid and coat all over with the sticky sauce. Cover and marinate in the fridge for at least 1 hr, or better still up to 24 hrs. Can be frozen at this stage.
- To make the salsa, mix together all the ingredients and chill until ready to serve.
- About 30 mins before baking, take the ribs out of the fridge to come to room temperature. Heat oven to 220C/200C fan/gas 7. Bake for 20-30 mins, turning occasionally and basting often with the sauce, until sticky, hot and crisping on the outside. Serve with the salsa and flatbreads or rice, if you like.

- Leave your ingredients raw for a salsa with a bright, refreshing taste. Raw salsa is also known as "salsa cruda." The Best Fresh Tomato Salsa.
- Cook the salsa, and you'll trade bright, fresh flavors for something deeper, sweeter. Roasting the tomatoes, garlic and/or chiles creates rich, smoky flavors.
- Layer in flavor, color, and texture with bell peppers, jicama, radishes, fresh corn kernels, avocado, or black beans. Corn and Avocado Salsa.
- Play around with the primary herbs. Most salsa recipes call for cilantro. But other herbs, like parsley, mint, basil, and oregano also taste terrific mixed with fresh vegetables and fruits.
- Trade the tomatoes for fruits like mangoes, melons, peaches, pineapple, or tomatillos. Mango, Peach and Pineapple Salsa.
- Balance flavors; add salt, vinegar, lime juice, bottled hot sauce, and pinches of sugar, tasting frequently, until you achieve the perfect balance of sweet, savory, salty, sour, and spicy.
- Chop some, process some. A food processor makes short work of herbs and garlic; you should toss these ingredients into the processor before you add the tomatoes.
