SWEET AND SOUR MEATBALLS
This is a recipe my mom made for years and years. I've made it for parties as well as when I've had company over for supper. Everyone loves these meatballs. These meatballs are made without the addition of pineapple.

CHEESY EYEBALLS
Steps:
- Remove mini cheese wheels from their wax coating. Using a small paring knife, cut out a small round divot from the center of each cheese wheel. Insert a green, unstuffed olive slice into the hole. Then insert a black olive slice into the center of the green olive.
- Use a clean art brush dipped in red gel food color to draw squiggly lines to create the appearance of a bloodshot eyeball. Chill the eyeballs until ready to serve. Group together on a platter and serve at your Halloween party.

- Prepare your vegetables. Wash beets and potatoes carefully with soapy water. Peel the carrots.
- Place a large pot on the stovetop and heat to medium-high heat. Once warm, add a tablespoon of vegetable oil to the bottom.
- Grate, finely dice or shred the beets and carrots (you can use a food processor). This stage sparks controversy and bitter arguments among many, but here are my two cents: grating really does produce the best results, and it’s what most Russian babushkas would do. However, I really am lazy and prefer to shred my root vegetables in a food processor, while as many a fine borscht contains finely diced vegetables. To each their own, and I encourage you to try all three methods and pick your favourite.

- Add the chicken, Shaoxing wine, soy sauce, sugar, white pepper, onion, carrot, and garlic into a large bowl. Beat everything together with a spatula until it becomes sticky, about 5 minutes. Add the egg and breadcrumbs and stir to incorporate.
- Coat your hands with a light layer of oil (it helps you to form the meatballs without sticking too much to your hands). Add one heaping tablespoon of the mixture into your palm and shape it into a round ball. Place it onto a large flat plate or tray. Repeat to shape the rest of the meatballs.
- Heat the vegetable oil in a large skillet over medium heat until hot. Add the meatballs into the pan without overcrowding them. Let the meatballs brown for 1 to 2 minute, then flip and brown the other side for another 1 to 2 minutes. Once both sides are browned, flip the meatballs on their sides and brown for another 4 to 5 minutes. Roll them occasionally to brown all sides evenly. Once done, remove the meatballs onto a large plate and set aside.

- In a large bowl, mix together the ground beef, egg, milk, breadcrumbs, onion, salt and Worchestershire sauce until well combined.
- Form the mixture into 1 inch meatballs and place them on a broiler pan or baking sheet. I like to use a 1 tablespoon cookie scoop or a melon baller to portion out the meat into balls and then roll them into tight meatballs with my hands.

- Mix the meatballs ingredients in a large bowl. Form 20 meatballs, and place them in the prepared baking dish. Bake for 10 minutes.
- While the meatballs are baking, whisk together the sauce ingredients in a medium saucepan. Heat over medium-low heat.
- Add the meatballs to the saucepan and turn to coat them in the sauce. Keep cooking, turning frequently, until the sauce has thickened, about 5 minutes. You can promote thickening by mixing 2 teaspoons of cornstarch with a tablespoon of cold water and stirring the slurry into the sauce.

- In a small bowl, mix together the pineapple juice and cornstarch until a smooth slurry is formed. This is important to help thicken the sauce for thewings. Next whisk together the rice vinegar, brown sugar, ketchup, soy sauce, honey, sriracha and the slurry in a saucepan. Heat the mixture over medium heat, stirring often, until the sauce thickens, about 15 minutes. Set aside while you cook the chicken wings.
- Preheat the cooker to 350ºF (176ºC). If you’re using a kamado or bullet grill, add a handful of wood chips to the charcoal; with a pellet grill, simply preheatthe cooker, as the pellets will take care of the smokey flavor. Rub the chicken wings evenly with the rub. Cook the wings for 20 minutes. Flip and cook for another 20 minutes or until the internal temperature is 165ºF (74ºC).
- Remove the wings and place them in a large bowl. Pour the glaze over the top of the chicken wings and toss until evenly coated. Garnish with scallions, serve and enjoy.
