SWEET AND SMOKY BARBEQUE SAUCE
Use this toward the end of cooking as you would for any BBQ meat such as pork, ribs, or chicken. I have even used it on beef and hamburgers, sausages, hot dogs, or anything you want, for the most part. I use it on everything from ribs to roasts to hamburgers to hot dogs. Even goes good with a good old classic grilled cheese sandwich. This is a great all-round BBQ sauce. Use right away or cool to room temperature, transfer to jars or containers, and refrigerate. The sauce will keep for several months in the fridge.

- Cut the collard or lacinato leaves fairly neatly away from the stems with kitchen shears. Stack 4 or 5 similar-sized leaf halves atop one another. Roll up snugly from one of the narrow ends, then slice into very thin ribbons. Chop the slices in a few places to shorten the ribbons.
- Heat the oil in a medium skillet or stir-fry pan. Add the greens and turn up the heat to medium-high. Cook, stirring frequently, until bright green and tender-crisp, about 3 to 4 minutes. If any water is left in the pan, drain it and remove the greens to a plate.
- In the same skillet, combine the vinegar, soy sauce, syrup, and ketchup. Stir together, then add the beans and stir to coat.
- Add the seasoning to taste, followed by pepper or dried hot red pepper flakes. This is a season-to -taste kind of dish, so you can make it subtle or bold to your liking. Adjust the vinegar, soy sauce, syrup, and ketchup as well.

- Add the beans, salt, and water to the Instant Pot. Lock on the lid, close the steam valve (if applicable to your pot) and set to the bean setting, normal, for 60 minutes.
- In the meantime, pan fry the bacon or ham until cooked to your preference. Drain and allow to cool. Crumble or slice the bacon into 1 inch pieces. Ham should be cut into a 1/2 inch dice.
- Once done, release the steam. Once steam is released, remove the lid and stir the beans. At this point, you can drain the water for a dryer version of baked beans, or you can leave the water in. (I left the water in the pot.)
- Add in the onion, molasses, ketchup, brown sugar, Worcestershire sauce, vinegar, dry mustard, chili powder, ground black pepper, and garlic powder. Stir to combine.

- In a large cast iron skillet, sauté the bacon over medium heat about 5 minutes, just to render the fat and crisp up the bacon. Remove the bacon (set aside for later) and discard most of the fat (saving about 2 tablespoons for the next step).
- Add the onions and sauté over medium heat for 5 minutes, add garlic and sauté another 2 minutes or until onion and garlic is soft, but not caramelized.
- Add the beer and cook down for 1 minute. Add the tomato sauce, balsamic, molasses, brown sugar, Dijon, salt, pepper, beans and the cooked bacon. Mix to combine. If adding pulled pork or brisket, do it now and mix to combine.

- Heat a large (oven safe, if you don’t want to transfer) skillet over medium-low heat and add the bacon. Cook until it’s brown and crisp and most of the fat is rendered.
- Stit in the onion, pepper and garlic. Cook, stirring often, until everything softens, about 5 minutes. Stir in the paprika, chili powder, salt and pepper. Cook for 1 to 2 minutes. Stir in the vinegar, BBQ sauce, ketchup, mustard and brown sugar until combined.
- Stir in the baked beans directly from the can. Bring the mixture to a boil, then turn off the heat. I suggest tasting the beans here and adding more salt, pepper or heat if desired. If you'd like, you can lay a few strips of bacon on top of the beans here too!

- Preheat the oven to 400 degrees and place the garlic cloves (with skin still on!) wrapped in foil loosely and roast for 10 minutes. This will bring out more flavor and depth and be less strong than raw garlic.
- Meanwhile, drain and rinse the beans well and add them to a food processor. Process until they are broken up.
- Add the remaining ingredients and process for a minute or so, scrape down the sides and process again for several minutes until creamy smooth. Walk away and let it process until totally smooth. I let mine go a few minutes. It will give you the creamiest dip ever.
