Here is another childhood memory from growing up in a Swedish-American household. This should be served with boiled red potatoes, pickled beets, and lingonberries.

2 lbs beef chuck, cut into cubes
2 teaspoons salt
1/4 teaspoon white pepper
2 tablespoons flour
1 1/2 tablespoons butter
3 medium yellow onions, sliced
10 -15 whole allspice
2 bay leaves
2 cups water

Steps:

  • Combine flour, salt and pepper in a bowl.
  • Toss beef cubes in the flour mixture to coat.
  • In a large dutch oven, cook the butter until just starting to brown.
  • Add the meat and onions, and cook, stirring occasionally, until the meat is browned on all sides.
  • Add the bay leaves and allspice.
  • Boil the water in a separate pan, then pour over the meat.
  • Simmer, covered, for 1 1/2 hours, or until the meat is tender. Check the water level occasionally, and add more if needed.
  • When meat is tender, remove to a serving dish.

SIMPLE SWISS STEAK IN A DUTCH OVEN



Simple Swiss Steak in a Dutch Oven image

All these years I've thought Swiss steak was from Switzerland! It's not. Swiss is the treatment of the steak. It's the process of rolling or pounding the tough cut to make it tender. I've kept the "Swissing" technique and added my own flavors. It's pretty simple. The hardest part is cutting the veggies. You can't beat a long braise to make meat--cut-with-a-fork tender. Feel free to add your own twist! Serve it over egg noodles and with a crusty loaf of bread.

2 pounds London broil
½ cup all-purpose flour
½ teaspoon seasoned salt
½ teaspoon ground black pepper
2 tablespoons olive oil
salt and ground black pepper to taste
2 (14.5 ounce) cans Italian-style diced tomatoes, undrained
1 cup beef stock
1 cup diced celery
2 small onions, diced
3 medium (blank)s carrots, diced
1 green bell pepper, diced

Steps:

  • Cut London broil into 2-inch cubes and spread out on a cutting board. Combine flour, seasoned salt, and 1/2 teaspoon pepper in a small bowl; sprinkle over meat. Toss to coat.
  • Place a sheet of plastic wrap over the steak and gently, but firmly, pound the steak with a mallet or the back of a soup ladle.
  • Heat oil in a large Dutch oven or pot over medium-high heat. Cook and stir meat until browned, about 10 minutes. Season with salt and pepper. Add diced tomatoes with juice, beef stock, celery, onions, carrots, and bell pepper. Mix well and bring to a boil.
  • Cover and reduce heat to low. Simmer, covered, for 1 hour, stirring occasionally. Crack the lid of the pot about 1/2 inch to let the steam escape. Continue to simmer until beef is tender, about 1 hour more.

Number Of Ingredients 6

2 1/2 pounds boneless beef chuck, trimmed of any large pieces of fat and cut into 1 1/2-inch cubes
6 tablespoons (3/4 stick) unsalted butter
2 1/2 pounds onions (about 5), quartered
2 1/2 pounds boiling potatoes, peeled and cubed
Salt and freshly ground black pepper to taste
3 cups beer (lager)

Steps:

  • 1. Preheat the oven to 450°F. Toss all the ingredients except the beer into a large ovenproof casserole.
  • 2. Pour the beer over the stew, cover, and cook until the meat is very tender, the potatoes are breaking apart, and the beer is absorbed, about 2 hours.

1 1/2 lbs elk roast (2 1/4 lbs if using bone-in) or 1 1/2 lbs reindeer meat, cut into 1-inch cubes (2 1/4 lbs if using bone-in)
3 tablespoons flour
2 1/2 teaspoons salt
2 tablespoons butter (I use 1 tbsp each) or 2 tablespoons olive oil (I use 1 tbsp each)
2 onions, cut into wedges
10 whole allspice or 2 teaspoons ground allspice
2 bay leaves
2 1/4 cups water or 2 1/4 cups beef broth
2 carrots, peeled & sliced
4 potatoes, cubed

Steps:

  • Coat the beef with flour and salt.
  • In a large, heavy pot or dutch oven, melt the butter.
  • Sauté the meat until browned on all sides.
  • Add the onions and sauté for a few minutes with the meat.
  • Add allspice, bay leaves, and water, and stir well, scraping the sides and bottom of the pan well.
  • Add carrots, cover, and allow to simmer over low heat until meat is tender (1-1 1/2 hours).
  • Stir occasionally to keep from sticking, and if needed, add more water.
  • Add potatoes, and return to boiling; cook until potatoes are tender (1/2 hour).

This is a one-dish meat and vegetable casserole that has been handed down from my mom to me, and also from me to my kids. They all love it. It is easy to make, nutritional, and economical also. You have your meat and vegetables all in one dish, so you also have only one "pot" to wash. We like to have it with hot crescent rolls, or biscuits. (or just bread & butter if rolls are not available)

2 lbs ground chuck (or beef)
6 thinly sliced carrots
5 -6 thinly sliced potatoes
1 (14 ounce) can sweet peas
1 medium diced onion
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon dry dill weed
5 -6 tablespoons margarine (or butter)

Steps:

  • Preheat oven to 325 deg.
  • Combine ground meat, onions, and 1/2 teaspoons each of the salt & pepper in pot or saute' pan. Cook, stirring occasionally, until meat is crumbly and slightly browned.
  • Partially drain grease. Pour 1/2 mixture in to a 3 quqrt casserole dish. Spread out 1/2 can of peas, and 1/2 the sliced carrots over meat mixture. Cover with single layer of the sliced potatoes, leaving enough to cover top layer.
  • Cover with remaining ground meat mixture, peas, carrots, and finish off with single layer of sliced potatoes. Distribute the 5-6 Tbs. margerine or butter around on top of potatoes. Sprinkle with remaining 1/2 teaspoons salt and pepper, and the dry dill weed.
  • Cover and bake in 325 deg. oven for 1 hr (or until potatoes are slightly browned and fork tender.
  • Makes 6 to 8 DELICIOUS servings!

2 1/2 pounds boneless leg of lamb, cut into 1-inch cubes
4 cups water
1 large onion, chopped
1 large carrot, chopped
1 large bunch of fresh dill
8 white peppercorns
2 teaspoons salt
2 tablespoons (1/4 stick) butter
2 tablespoons all purpose flour
1 tablespoon white wine vinegar
2 teaspoons sugar
1/4 cup chopped fresh dill
2 tablespoons whipping cream

Steps:

  • Place lamb, 4 cups water, onion, carrot, bunch of dill, peppercorns, and salt in heavy large pot. Bring to boil over medium-high heat, skimming off foam. Reduce heat to medium-low, cover and simmer until meat is tender, stirring occasionally, about 1 1/2 hours. Strain broth into medium saucepan. Boil until reduced to 21/3 cups, about 8 minutes. Meanwhile, remove lamb from vegetables; discard vegetables.
  • Melt butter in medium saucepan over medium heat. Add flour and whisk 1 minute. Whisk in 2 1/3 cups reduced broth. Cook until sauce thickens and boils, whisking occasionally, about 6 minutes. Whisk in white wine vinegar, sugar and 1/4 cup chopped fresh dill. Simmer 3 minutes to blend flavors. Stir in cream and lamb and simmer until heated through, about 2 minutes. Season to taste with salt and pepper. Transfer to serving bowl.

2 1/2 lb beef chuck steak
2 Tbsp all-purpose flour
2 Tbsp unsalted butter
1 Tbsp vegetable oil
2 large carrots, peeled and sliced into rounds or chunks
2 medium onions, chopped
2 clove garlic, minced
2 Tbsp veal stock or beef stock
2 bay leaves
10 whole allspice berries
2 Tbsp all-purpose flour
1/4 cup red wine
32 oz beef stock (amount is approximate)
1 tsp salt
5 white peppercorns (or about 1 1/2 tsp white pepper)

Steps:

  • 1. Cut the beef into 1/2-inch cubes, and dry the beef cubes with a paper towel (which helps to ensure even browning). Toss the cubed beef with flour to coat on all sides.
  • 2. Heat the oil and butter in a Dutch oven or stockpot over medium heat. Add the beef, and sauté for about 5 minutes or until beef is evenly browned on all sides.
  • 3. Add the carrots, onions, garlic, veal/beef stock, bay leaf and allspice berries. Sauté for a few minutes, stirring occasionally.
  • 4. Stir in 2 Tbsp flour. Pour in the red wine and enough beef stock to just cover the beef. Add salt and 5 white peppercorns (or 1 to 1 1/2 tsp white pepper), adjusting salt and pepper to taste.
  • 5. Reduce the heat to medium-low, cover the stockpot, and simmer for about 1 1/2 hours or until the beef is cooked and tender, stirring frequently to prevent sticking. Skim off fat, if needed.
  • 6. Ladle onto plates, and serve with boiled potatoes and pickled red beets.
