A great little cookie that my mom and I make every christmas. I love these and the bring back memories of childhood.

Yield 6 Dozen

Number Of Ingredients 7

1 1/2 cups butter
1 cup sugar
1 egg
1 teaspoon vanilla
1 teaspoon almond extract
4 cups sifted all-purpose flour
1 teaspoon baking powder

Steps:

  • Thoroughly Cream the Butter and Sugar.
  • Add the Egg the Vanilla and Almond Extract.
  • Beat Well.
  • Sift the flour and baking powder together.
  • Add to the creamed mixture, mix until smooth.
  • Do not chill.
  • DO NOT DOUBLE.
  • Force Cookies through a cookie press onto an ungreased cookie sheet.
  • Decorate the cookies with redhots, sprinkles or whatever you like.
  • Bake in a 400 oven for 8-10 minutes.
  • Cool on newspaper.
  • These freeze well but shouldnt be left out for more than a week or so.

Number Of Ingredients 8

1 cup butter, softened
2/3 cup sugar
1 large egg, room temperature
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1 teaspoon baking powder
Prepared frosting, assorted sprinkles and decorating sugars

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and extracts. Combine the flour and baking powder; gradually add to the creamed mixture., Using a cookie press fitted with the disk of your choice, press dough 1 in. apart onto ungreased baking sheets. Bake at 350° until edges are firm and lightly browned, 12-13 minutes. Remove to wire racks to cool. Frost and decorate as desired.

2 cups butter
1 cup white sugar
2 egg yolks
1 egg white
2 tablespoons almond extract
4 ½ cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
  • Beat butter with an electric mixer in a large bowl until light and fluffy. Slowly add sugar while beating until the mixture should be noticeably lighter in color. Add the egg yolks one at a time, allowing the first to blend into the butter mixture before adding the other. Beat egg white and almond extract into the mixture. Pour the flour in small amounts into the mixture while beating; continue beating until fully incorporated.
  • Using a cookie press, press dough onto prepared baking sheet.
  • Bake in the preheated oven until the edges are golden, 8 to 10 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

The book is dedicated to the many volunteers who had donated their time, talents and money to restore the John Lind home. A great aunt of Patty, Teckla Johnson, brought this recipe from Sweden.

2 cups butter, softened
1 cup sugar
1 egg
1 teaspoon vanilla
3 1/2 cups flour

Steps:

  • Mix butter and sugar well.
  • Add egg and vanilla.
  • Add flour, 1 cup at a time.
  • Mix well.
  • Put in cookie press.
  • Place on cold cookie sheet until dough is showing.
  • Turn cookie press one quarter of turn for each cookie.
  • Bake at 350 degrees until set and lightly browned at edges.
  • Wash cookies sheet so it's cold before putting cookies on each time.

The Spritz Cookie Press works a lot like a Play-Doh toy, and usually comes with an assortment of round disc templates for squirting out stars, hearts, pinwheels, shamrocks, Christmas trees, deco braid, and camels (watch out, they spit!) One cookie press we have found that works well is the Classic Cookie Professional Cookie Press by VillaWare.

Number Of Ingredients 7

1 1/2 cups butter (low fat margarine does not work well in this recipe) or 1 1/2 cups margarine (low fat margarine does not work well in this recipe)
1 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon almond extract
4 cups flour
1 teaspoon baking powder

Steps:

  • Cream the butter and sugar together.
  • Add the egg and the vanilla and almond extracts. Beat well.
  • Sift together the flour and the baking powder. Add to the liquid mixture slowly, mixing until smooth.
  • Do not chill the dough!
  • Force through the cookie press.
  • Decorate with colored sugar crystals before baking.
  • Bake at 400 degrees F for 8-10 minutes.
  • You can add food coloring to the dough before making cookies if you'd like. Green Christmas Trees and Red Hearts look very nice on Santa's plate!

1/2 cup sifted powdered sugar
1 egg yolk
1 teaspoon almond extract
1/2 cup blanched almond, ground fine
2 cups sifted flour

Steps:

  • Cream butter and sugar very well.
  • Add egg yolk and extract.
  • Stir in almonds and flour a little at a time until dough is smooth and not too firm.
  • Shape with a cookie press into rings or "S" shapes on buttered cookie sheets.
  • Bake at 375 for 8-10 minutes till golden yellow in color.
  • Let cookies cool on sheet.
