This is one of my husband's favorites. I created it using several other Swedish meatball recipes that didn't quite make the grade.

1 egg
¼ cup milk
1 pound ground beef
¼ cup dry cream of wheat cereal
¼ cup minced onion
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
1 (12 fluid ounce) can evaporated milk
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, whisk together the egg and the milk. Add the beef, cream of wheat and onion and mix well. Shape into 1 inch balls. Place balls on a lightly greased baking sheet.
  • Bake at 350 degrees F (175 degrees C) for about 20 minutes.
  • Drain meatballs on paper towels, if needed. Then place meatballs in a lightly greased 2 quart casserole dish. In a separate medium bowl, combine the soups with the evaporated milk, stirring until smooth. Pour over the meatballs.
  • Bake uncovered at 350 degrees F (175 degrees C) for another 40 minutes. Sprinkle with parsley before serving.

The trick to Alton Brown's moist Swedish Meatballs recipe, from Good Eats on Food Network, is white bread soaked in milk.

Number Of Ingredients 14

2 slices fresh white bread
1/4 cup milk
3 tablespoons clarified butter, divided
1/2 cup finely chopped onion
A pinch plus 1 teaspoon kosher salt
3/4 pound ground chuck
3/4 pound ground pork
2 large egg yolks
1/2 teaspoon black pepper
1/4 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1/4 cup all-purpose flour
3 cups beef broth
1/4 cup heavy cream

Steps:

  • Preheat oven to 200 degrees F.
  • Tear the bread into pieces and place in a small mixing bowl along with the milk. Set aside.
  • In a 12-inch straight sided saute pan over medium heat, melt 1 tablespoon of the butter. Add the onion and a pinch of salt and sweat until the onions are soft. Remove from the heat and set aside.
  • In the bowl of a stand mixer, combine the bread and milk mixture, ground chuck, pork, egg yolks, 1 teaspoon of kosher salt, black pepper, allspice, nutmeg, and onions. Beat on medium speed for 1 to 2 minutes.
  • Using a scale, weigh meatballs into 1-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds.
  • Heat the remaining butter in the saute pan over medium-low heat, or in an electric skillet set to 250 degrees F. Add the meatballs and saute until golden brown on all sides, about 7 to 10 minutes. Remove the meatballs to an ovenproof dish using a slotted spoon and place in the warmed oven.
  • Once all of the meatballs are cooked, decrease the heat to low and add the flour to the pan or skillet. Whisk until lightly browned, approximately 1 to 2 minutes. Gradually add the beef stock and whisk until sauce begins to thicken. Add the cream and continue to cook until the gravy reaches the desired consistency. Remove the meatballs from the oven, cover with the gravy and serve.

Our family's traditional Christmas recipe, frequently doubled and kept warm in a crock pot. Worth the effort, and the meatballs are even better the next day! Reserve brown gravy and add sour cream to it the day you serve the leftovers.

2 slices day-old white bread, crumbled
½ cup heavy cream
1 teaspoon butter
1 small onion, minced
⅔ pound ground beef
⅓ pound finely ground pork
1 egg
1 tablespoon brown sugar

¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
⅛ teaspoon ground ginger
1 tablespoon butter
¼ cup chicken broth
3 tablespoons all-purpose flour, or as needed
2 cups beef broth, or as needed
½ (8 ounce) container sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the bread crumbs into a small bowl, and mix in the cream. Allow to stand until crumbs absorb the cream, about 10 minutes. While the bread is soaking, melt 1 teaspoon of butter in a skillet over medium heat, and cook and stir the onion until it turns light brown, about 10 minutes. Place onion into a mixing bowl; mix with the ground beef, ground pork, egg, brown sugar, salt, black pepper, nutmeg, allspice, and ginger. Lightly mix in the bread crumbs and cream.
  • Melt 1 tablespoon of butter in a large skillet over medium heat. Pinch off about 1 1/2 tablespoon of the meat mixture per meatball, and form into balls. Place the meatballs into the skillet, and cook just until the outsides are brown, about 5 minutes, turning the meatballs often. Insides of the meatballs will still be pink. Place browned meatballs into a baking dish, pour in chicken broth, and cover with foil.
  • Bake in the preheated oven until the meatballs are tender, about 40 minutes. Remove meatballs to a serving dish.
  • To make brown gravy, pour pan drippings into a saucepan over medium heat. Whisk the flour into the pan drippings until smooth, and gradually whisk in enough beef broth to total about 2 1/2 cups of liquid. Bring the gravy to a simmer, whisking constantly until thick, about 5 minutes. Just before serving, whisk in the sour cream. Season to taste with salt and black pepper. Serve the gravy with the meatballs.

AUTHENTIC SWEDISH MEATBALLS



Authentic Swedish Meatballs image

This recipe is one of my earliest food memories. Every Christmas Eve, my family enjoys an authentic Swedish Smorgasbord, of which this is an essential part. My mother still tells tales (and I'm 40) of me as a toddler, standing by the dish of meatballs and eating as many as I could hold. These are not spicy, like most Scandinavian food, but have a great flavor and texture. In fact, they are so soft, that I usually chill the meat mixture before rolling and frying to avoid meatballs with flat sides. I've included the directions for the gravy, which I usually don't make, as it's traditional, but the balls are wonderful without it on any buffet table, or as an addition to a potluck. They are also good cold, straight from the fridge. If you like to do OAMC cooking, these freeze beautifully, in fact, I never make less than 100 meatballs at a time, lightly brown them, then flash freeze to finish later. The traditional recipe calls for a mix of beef, pork, and veal- if you object to veal, they work equally well with an even mix of beef and pork. Don't try to use these as an option for spaghetti, the seasonings just don't match. Prep time does not include chilling the meat mixture or the prepared meatballs.

3 tablespoons onions, grated
1/2 cup breadcrumbs
1 1/2 cups milk
1/2 lb ground beef
1/2 lb ground pork
1/2 lb ground veal
1 egg
1/8 teaspoon ground allspice
1/8 teaspoon salt
1/4 teaspoon white pepper
butter or oil
pan juices
1 tablespoon flour
3/4 cup cream (whole milk works in a pinch)
salt
white pepper

Steps:

  • Melt butter in a skillet.
  • Saute onions in the butter until golden.
  • Soak the bread crumbs in the milk.
  • To the bread mixture, add the meats, egg, onion, allspice, salt, and pepper. Mix until a smooth texture is achieved.
  • Chill mix for an hour or so, to firm it up.
  • Form mix into meatballs, using 1-2 tablespoons of meat per ball. (these should be smaller than a golf ball). If you are making these on a warm day, you might want to chill the formed balls again, so that you don't get flat sides when you fry them.
  • Heat a large skillet over medium high heat.
  • Melt a small amount of butter (traditional) or oil in the pan.
  • Add enough meatballs to fill the pan very loosely.
  • Shake the pan as you fry the balls, to keep the round shape as they cook. Continue to cook until they are evenly brown on all sides.
  • Remove each batch to a warm platter in the oven, as you fry the rest.
  • If you wish to make the gravy, deglaze the pan with a little water after each batch, and reserve the resulting drippings in a bowl.
  • For the gravy:.
  • When all of the meatballs have been fried, mix the flour and cream (or milk), and add to the reserved pan drippings in the skillet.
  • Simmer for 10 minutes.
  • If the mixture is too thick, add a bit of cream (or milk) to thin, then taste and season with salt and/or pepper as needed.
  • Pour gravy over warm meatballs and serve with boiled potatoes and lingonberry sauce.

Steps:

  • Mix oats and milk; add eggs and beat. Pour over meat and mix well. Sauté onion in margarine until tender. Add to meat. Mix dry ingredients together and mix into meat mix. As a loaf, bake at 350℉ (180℃) 1¼ to 1½ hours. As meat balls, form into balls, brown and remove to a plate. Make sauce with leftover pan drippings and mushroom soup if desired. Sprinkle with parsley Serve with mashed potatoes.

1 cup water
3/4 pound lean ground beef
3/4 pound lean ground pork
2 large egg yolks

4 tablespoons butter
2 tablespoons all-purpose flour
2 cups beef stock

Steps:

  • In a small, heavy skillet over medium-high heat, melt 1 tablespoon butter. Add the onions and saute, stirring often until soft, about 1 to 2 minutes. Remove from the heat and set aside.
  • In the large bowl of an electric mixer, combine the bread crumbs and water. Let stand until soft, about 1 to 2 minutes. Add the reserved onions along with the beef, pork, egg yolks, salt, pepper, nutmeg, and allspice. Beat on low speed until smooth. Turn the mixer to high speed and beat until the mixture is light in color and fluffy, about 10 minutes. Using 2 spoons dipped in cold water, shape the meat into 1-inch balls.
  • In a large skillet over medium heat, melt 4 tablespoons butter. Cook the meatballs in batches of about 15 to 20 at a time and brown on all sides. Remove with a slotted spoon and drain briefly on paper towels before removing to a warmed serving platter. Cover to keep warm. When all the meatballs are cooked, reduce the heat to low and add the flour to the skillet. Cook, stirring, until lightly browned. Slowly add the beef stock. Cook, whisking, until the gravy is thick and smooth. Strain, if desired. Pour the gravy over the meatballs and serve hot.

Steps:

  • In a bowl combine the panko crumbs with milk. Add remaining ingredients for the meatballs and mix well. Shape into 24 meatballs.
  • Add 2 Tbsp oil to a large skillet over medium heat. Once hot, cook meatballs in 2 batches until golden brown and cooked through (6-7 minutes), turning as needed. Add more oil as needed. Remove from the skillet and cover to keep warm.
  • In the same skillet, melt the butter. Quickly whisk in the flour and cook until golden.
  • Stir in the broth, heavy whipping cream, Dijon and season with salt and pepper to taste. Bring the sauce to a simmer and cook it thickens.
  • Add back the meatballs and toss in the gravy sauce. Cook until meatballs are heated through.

2 lbs. ground beef
2 large onions
3 eggs, slightly beaten
6 slices cubed white bread ((or substitute with 1 ½ cups of Panko bread crumbs))
¼ cup half-and-half
2 teaspoons sugar
2 teaspoons salt, or more to taste
½ teaspoon pepper
butter and vegetable oil for frying
¼ cup pan drippings
¼ cup flour, plus additional as needed
2 cups beef broth
2 tablespoons half-and-half
Salt and pepper, to taste
Optional, for serving: chopped fresh parsley; cooked egg noodles; potatoes

Steps:

  • Place the meat in a large bowl. Grate the onions into the meat.
  • Stir together bread or bread crumbs with ¼ cup of half-and-half, just until moistened.
  • Add eggs, soaked bread crumbs, sugar, salt, and pepper to the beef mixture. Use your hands or a fork to gently combine, being careful not to over-mix the meat.
  • Use a medium (1 ½ tablespoon) scoop to shape the meat into balls. Each meatball will be about the size of a golf ball. Place the meatballs on a baking sheet so that they will be ready to fry.
  • Heat 2 tablespoons of butter and 1 teaspoon of oil in a large frying pan over medium-high heat. 2 lb 80/20 ground beef
1/2 c bread crumbs, or 2-3 pieces of bread ground in food processor
3 eggs, beaten
3 Tbsp milk
1 1/2 Tbsp worcestershire sauce
1 1/2 tsp garlic powder
1/2 tsp onion powder
1 1/2 Tbsp parsley flakes
1 tsp seasoning salt
1/2 tsp pepper
2 can(s) cream of mushroom soup
2 can(s) cream of celery soup
1 pkg egg noodles, dumplings (or large)
1 c milk

Steps:

  • 1. For Swedish Meatballs: 1. In a large bowl mix eggs, 2 TBSP milk, worcestershire, garlic powder, onion powder, parsley, seasoning salt, and pepper until well blended. 2. Add ground beef and mix gently to coat all of the meat. 3. Add bread crumbs and mix gently again to incorporate. (I hand mix) 4. Form into 2" balls and place in an electric skillet heated to 250-300. They should brown easily when dropped in. 5. Using a soft spatula, turn the meatballs until browned on all sides, about 10 minutes. 6. In a separate bowl, mix all four soups, plus 1 C milk until blended. 7. Pour over meatballs, using soft spatula to mix the browned bits from the bottom of the skillet into the sauce. 8. Turn heat to low, cover skillet and simmer for 20 minutes to an hour. 9. Boil egg noodles according to package instructions. 10. Serve meatballs over noodles with plenty of buttered french bread for dipping.
  • 2. Meatloaf: 1. Same as steps 1-3 above. 2. Place meat mixture into a medium sized loaf pan. 3. Bake at 350 for about 45 minutes. 4. If desired, top with zesty ketchup sauce: - Mix 3 Tbsp Brown Sugar, 1/4 C ketchup, 2 TBSP mustard, and 1/4 tsp nutmeg. Spread over the top of the meatlof for the last 10 minutes of baking.
