Swedish Meatballs & Mushrooms Gravy (Instant Pot, AIP, Paleo) image

This gorgeous savory paleo recipe for Instant Pot Swedish meatballs is by Andrea Wyckoff of Forest & Fauna and is one of our favourites from The Paleo AIP Instant Pot Cookbook. It's AIP, paleo and gluten-free friendly.

1 lb / 450 g ground beef
1 lb / 450 g ground pork
¼ cup minced fresh parsley (divided)
2 tablespoons dried chopped onion
1 teaspoon dried sage
½ teaspoon ground mace
½ teaspoon sea salt
2 cups sliced mushrooms (button or crimini)
1 large onion, chopped
½ cup bone broth (or coconut milk, or water)
3 tablespoons coconut aminos

Steps:

  • In a bowl, mix together ground beef, pork, 3 tablespoons minced parsley, dried onion, sage, mace, and salt. Once thoroughly mixed, form into meatballs about 1-inch in diameter.
  • Place mushrooms, onion, broth/coconut milk/water, and coconut aminos into the Instant Pot. Add the meatballs.
  • Close and lock the lid. Press the MEAT/STEW button and set cooking time to 35 minutes. Once the time is up, quick release the pressure.
  • Using a slotted spoon gently remove meatballs and transfer to a serving platter.
  • Using an immersion blender or a high-speed blender, purée the cooked mushrooms, onions, and
  • broth into a nice creamy gravy. If the gravy is too thick, add a little more bone broth/coconut
  • milk/water until the right consistency is reached.
  • Pour gravy over meatballs and garnish with remaining tablespoon of minced parsley. This dish makes a wonderful appetizer as is, or main course when served over spaghetti squash,
  • cauliflower rice, sautéed veggies, or warmed zucchini noodles.

  • Pour in the beef broth to de-glaze the liner, then turn off the Instant Pot. Add the meatballs, ensuring that they are in a single layer.
  • Close the lid, and use the manual/high pressure button to adjust the cook time to 5 minutes (according to Instant Pot website). Meanwhile, make the cornstarch slurry by mixing the cornstarch with cold water. This is also a good time to prepare the noodles or mashed potatoes.
  • After the time is up, allow a 10 minute natural release before opening the valve to release any remaining pressure. Remove the lid, and turn off the Instant Pot. Use a slotted spoon to remove the meatballs, then carefully add the sour cream, Dijon mustard and Worcestershire sauce. Whisk to combine.

  • In a large mixing bowl, combine the beef, pork, parsley, dried minced onion, sage, nutmeg or mace, salt, garlic powder, pepper (if using), and fennel seeds. Using hands, mix until well combined. Form into 1” meatballs and set aside.
  • In the pot of a 6-quart or larger Instant Pot, add in the mushrooms; onion; aminos, tamari or soy sauce; and broth. Gently layer the uncooked meatballs on top of the mixture.
  • Close and seal the Instant Pot lid. Set to cook for 20 minutes on the “Meat/Stew” setting. When the timer goes off, immediately vent to release the steam.
  • Remove the Instant Pot lid, and then turn on the “Saute” mode. In a small bowl, whisk together the coconut milk and arrowroot powder until smooth. Add to the Instant Pot, and gently stir the mixture to break up the meatballs and thicken the gravy. As soon as the gravy is thickened, about two minutes, turn off the Instant Pot.
