A big favorite of my Swedish-raised husband. This reminds him of his grandma's kitchen every time. Serve hot with butter. These are great as leftovers, sliced and fried, served with a fried egg.

¼ pound salt pork, cubed
1 small onion, coarsely chopped
1 ½ cups cold mashed potatoes
1 large egg
¾ teaspoon salt
¼ teaspoon ground black pepper
1 pinch ground nutmeg
2 cups sifted all-purpose flour
½ cup all-purpose flour
1 gallon water, or as needed
2 (32 fluid ounce) containers beef broth

Steps:

  • Fry salt pork with onion in a skillet until the salt pork is golden brown, about 10 minutes. Drain fat and set salt pork and onion mixture aside.
  • Mix mashed potatoes, egg, salt, black pepper, and nutmeg together in a bowl; stir 1 cup flour into potato mixture. Sprinkle 1 cup flour onto a work surface and turn the dough out onto the flour. Knead the flour on the work surface into the dough.
  • Cut dough into 12 equal pieces and roll into balls, dusting your hands and sprinkling work surface with remaining 1/2 cup flour. Press your thumb into each dumpling to make an indentation, and fill with a small amount of salt pork-onion mixture. Pinch the dumplings closed and roll in flour.
  • Bring water to a boil in a large pot. If desired, replace half the water with beef broth. Drop dumplings into the boiling water and broth and reduce heat to low. Simmer until cooked through, about 25 minutes. Drain and transfer to a serving bowl.

1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up
6-1/2 cups water
2 teaspoons salt, optional
2 celery ribs, quartered
1 medium carrot, quartered
1 small onion, peeled
4 whole peppercorns
2 whole cloves
2 whole allspice
2 chicken bouillon cubes
1 package (9 ounces) frozen cut green beans
1 package (12 ounces) frozen noodles
DUMPLINGS:
2 medium potatoes, cooked and mashed (without added milk or butter)
1 egg, beaten or egg substitute equivalent
2 tablespoons half-and-half cream
1 teaspoon sugar
1/4 teaspoon salt, optional
1/2 cup all-purpose flour

Steps:

  • In a 5-qt. soup kettle, combine the first 10 ingredients. Cover and slowly bring to a boil. Reduce heat; simmer for 3 hours. Remove chicken; set aside until cool enough to handle., Strain broth, discarding vegetables and seasonings. Add enough water to make 8 cups; return to kettle. Remove chicken from bones; discard bones and skin. Cut chicken into chunks; add to kettle along with beans and noodles. Bring to a boil; cook for 20 minutes., For dumplings, combine the potatoes, egg, cream, sugar and salt if desired in a medium bowl. Gradually add flour to make a stiff dough (it should form a peak when spoon is lifted). Drop by teaspoons into boiling soup. Cover and simmer for 3 minutes.

2 1/2 cups flour
4 teaspoons baking powder
1 teaspoon salt
7 tablespoons fat, divided (bacon fat, meat drippings, lard or butter)
2 tablespoons onions, grated
3 eggs
2/3 cup water

Steps:

  • Sift dry ingredients together.
  • Cut in 2 tablespoons fat; add grated onion.
  • Add eggs to water and mix thoroughly; stir into first mixture.
  • Drop by tablespoons into 2 quarts of boiling water to which 1 teaspoon salt has been added; cook, uncovered, for 15 minutes.
  • Drain well in colander.
  • Place remaining fat in frying pan; when melted, add dumplings and cook until golden.

This recipe is an idea from my "Classic Scandinavian Cooking" by Nika Hazelton cookbook that I absolutely adore because it reverses how we think about soup. Although happily changing somewhat in recent yrs, most of our DH's and our kids still think of soup as something meat-based, creamed, filled with pasta and not really a meal. While that's a time-honored tradition, the trend now is to healthier and veggie-based soups. This idea helps you to convince your "bread, meat and potatoes" DH and your "I don't like veggies" kids that eating healthier can be tasty and fun. Not a problem and so easy ... make meat dumplings for a variety of veggie-based soups. Everyone is happier and healthier!

1/2 cup ground beef
1/2 cup ground pork
1 medium onion (grated)
1/2 teaspoon black pepper
1/4 teaspoon ground allspice

Steps:

  • Combine all ingredients (except flour); blend thoroughly. Shape into small balls the size of a large marble.
  • Roll in flour, drop into your simmering soup and simmer for 20 minutes.
  • Notes: This is admittedly done on a small scale, but easily doubled. The yield will depend on how faithful you are to size. I like to use 1 tsp Worcestershire sauce to add smoky flavor + darker color to the meat mixture, but you can also add 1-2 tbsp of Pepperidge Farm dressing mix to enhance the flavor & stretch the yield. It's a tiny recipe w/lots of versatility!

Keep a package or two of frozen dumplings in your freezer for this warming weeknight meal. This recipe is loosely inspired by wonton noodle soup, but replaces homemade wontons with store-bought frozen dumplings for a quick alternative. The soup base, which comes together in just 10 minutes, is surprisingly rich and full-bodied, thanks to the trio of ginger, garlic and turmeric. Miso paste brings extra savoriness, but you could substitute soy sauce or tamari. Scale up on veggies if you like; carrots, peas, snow peas or mushrooms would be excellent additions. Any type of frozen dumpling works in this dish, making it easy to adapt for vegan, vegetarian or meat-loving diners.

Kosher salt (Diamond Crystal)
6 ounces thin dried wheat, egg or rice noodles
1 tablespoon sesame oil
1 (2-inch) piece ginger, grated
2 garlic cloves, peeled and grated
1 teaspoon ground turmeric
6 cups vegetable stock
2 tablespoon white miso paste
16 ounces frozen dumplings (not thawed)
4 baby bok choy (about 12 ounces), trimmed and each cut into 4 pieces through the stem
1 small head broccoli (about 9 ounces), cut into bite-size florets
Handful of cilantro or chopped scallions, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add the noodles and cook according to package instructions, until the noodles are just tender. Drain, rinse with cold water and drain well again. Divide them among four serving bowls.
  • Place the same large pot over medium heat, and add sesame oil, ginger, and garlic. Stir and cook for 30 seconds, until aromatic. Add turmeric, and stir for 15 seconds, until fragrant.
  • Pour the vegetable stock into the pot, then season with 1 teaspoon of salt. Cover and cook for 8 to 10 minutes on medium heat, to allow flavors to meld.
  • Remove the lid and add the miso paste, stirring constantly until it is dissolved. Taste, and season with more salt, if needed.
  • Increase the heat to medium-high, and carefully drop the dumplings into the broth. When they float to the top, add the baby bok choy and broccoli, and cook for about 2 minutes, just until the broccoli is crisp-tender.
  • Ladle the broth, dumplings, baby bok choy and broccoli into the four bowls over the noodles. To serve, top with cilantro or chopped scallions.

1/2 lb white mushroom, thinly sliced

1 cup shredded carrot

2 tablespoons all-purpose flour
2 cups beef broth
1 quart chicken broth
1 lb ground veal (meatloaf mix of ground beef, veal, and pork combined)
2 1/4 teaspoons Dijon mustard
1 egg, beaten
1/2-2/3 cup plain breadcrumbs
1/2 teaspoon freshly grated nutmeg
1/2 lb egg noodles (medium or wide)
1 cup sour cream
2 -3 tablespoons chopped fresh chives or 2 -3 tablespoons fresh dill
2 -3 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Heat a soup pot over medium to medium-high heat; add in olive oil and butter; when the butter melts into the oil, add in the mushrooms, celery, carrots, onions, and bay leaf.
  • Cook until the mushrooms are tender and the other vegetables begin to soften, 7-8 minutes.
  • Season with salt and pepper; add in the flour; cook another minute.
  • Whisk in the beef and chicken broth to combine.
  • Cover the pot and bring to a boil.
  • While the soup comes to a boil, mix the veal with the mustard, egg, bread crumbs, nutmeg, salt, and pepper.
  • Roll the meat into small balls, 1-inch in diameter, tops.
  • Remove the lid from the pot and add in the balls; after 2-3 minutes, stir in the egg noodles and cook 6 minutes more.
  • Turn off the heat and stir in the sour cream into the stoup.
  • Adjust taste w/ salt and pepper; discard bay leaf.
  • Serve stoup with a generous sprinkle of chives or dill and chopped parsley.
