AUTHENTIC SWEDISH PANCAKES
This is an authentic Swedish pancake recipe that was taught to my father by his mother, who was born in Sweden. My father then passed it to me. Kids love them. Never any leftovers when I make them. To serve, you can spoon melted butter over pancakes and sprinkle with sugar, or serve with lingonberry sauce. You can also use the batter to make crepes.

Steps:
- Beat eggs in a bowl with an electric mixer until thick and lemon-colored, 3 to 5 minutes. Stir in milk.
- Sift flour, sugar, and salt together in a bowl. Add to egg mixture; mix until batter is smooth.
- Grease a griddle with butter; heat over medium heat. Drop tablespoonfuls of batter on the griddle; spread to make thin pancakes. Cook until light brown on bottom, 1 to 2 minutes. Flip and continue cooking until second side is light brown, 1 to 2 minutes more. Repeat with remaining batter.

- Combine potatoes, eggs, flour, and garlic powder in a bowl.
- Heat oil in a skillet over medium-high heat; fry potato mixture in skillet, pressing with a spatula to flatten evenly. Cover and cook until bottom is crispy, about 10 minutes; invert onto serving platter.

POTATISMOS (SWEDISH MASHED POTATOES)
The Swedish mashed potatoes took a bit of getting used to for me. I love nutmeg in my apple pies and other sweets, but it's not a flavor I expect in my mashed potatoes. Of course I always ate them the way my first husband's Norwegian gramma made them, but when I make them myself I use just enough to add a hint of flavor. After all, without the nutmeg they're just plain mashed potatoes. ;)

Steps:
- In a large pot, cover the potatoes with water and boil until tender.
- Drain and mash the potatoes with a masher.
- Slowly whisk the milk together with the potatoes, preferably with an electric whisk. Add more milk if the mash is to firm.
- Season with salt, pepper, sugar and nutmeg.
- Add the butter and whisk until melted.
EASY LEFTOVER MASHED POTATO PANCAKES RECIPE
Steps:
- Place the mashed potatoes in a large bowl (I used leftover colcannon). Gently mix in the flour and beaten egg (and any additional ingredients if using).
- Form mixture into 9 pancakes and place them on a plate. Cover and refrigerate the potato pancakes until ready to use.
- In a large cast iron skillet or suitable frying pan, heat about 1/2 inch of oil over medium-high heat to 365F/185C degrees. Add 3 pancakes at a time to the hot oil, being careful not to crowd pan. Shallow fry for about 5 minutes on one side, then flip over and cook 5 minutes on the other side, until cakes are brown and crispy.
- Remove the finished pancakes to a baking sheet lined with a cooling rack or paper towels and keep warm in a 200F/93C degree oven. Repeat process with remaining potato mixture until all the pancakes are made.
- Sprinkle the pancakes with the chopped green onions and serve with sour cream, applesauce, etc.

SWEDISH MASHED POTATO PANCAKES
Posted for ZWT 6. Not only does this make a great side dish, but you can make the patties half the size as directed so they're perfect for snacks or hors d'oeuvres.

Steps:
- Preheat the oven to 400 degrees. In a large saucepan, combine the water, milk, butter, salt, cumin, and onion powder. As soon as the mixture comes to a boil, remove the saucepan from the heat and add the potato flakes; mix until smooth. Add the parsley and egg and mix again until smooth.
- Form the mixture into 8 equal-sized patties. Brush both sides with the oil and place on a large nonstick cookie sheet that has been sprayed with nonstick cooking spray. Bake for 25 minutes, turning once halfway through the cooking.

- Peel and chop the potatoes into large pieces. Drop them over into a large pot filled with cold water and about 1 tsp of salt. Bring the pot to a boil and cook until the potatoes are soft and easily pierced with a knife. (large pieces) and boil potatoes; mash or grate coarsely (you want some texture). Allow to cool.
