SWEDISH OATMEAL LACE



Swedish Oatmeal Lace image

Crisp, buttery lace rolls.

½ cup butter
¼ cup sifted all-purpose flour
½ cup white sugar
¾ cup quick cooking oats
2 tablespoons light cream

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease and flour baking sheets.
  • Melt butter in medium saucepan. Add rest of ingredients and cook, stirring constantly, until mixture starts to bubble.
  • Remove from heat and stir briskly for a few strokes. Drop by rounded teaspoonfuls about 4 inches apart on well-greased and floured baking sheet.
  • Bake only 5-6 cookies at a time. Bake for about 5-6 minutes until golden brown.
  • Cool wafers for 2 minutes on baking sheet. Remove carefully with spatula and place over rolling pin, glass, or mug so they curl and become firm. If cookies harden before they can be removed from cookie sheet, reheat in oven again a few seconds to soften.
  • Note: Do one test to check oven temp and quantity of batter. The bigger the cookie, the more fragile. Use 1/2 tsp for test.

Among our large family's Christmas Eve traditions is enjoying these delectable cookies-one of the 20 varieties my sister bakes for the holiday. They have a pleasing pecan flavor and are so buttery and delicate, they almost melt in your mouth.

1 cup butter, softened
1/2 cup sugar
1 egg, separated
1 tablespoon half-and-half cream
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 cup finely chopped pecans
Additional chopped pecans
Halved red maraschino cherries or red jelly of your choice

Steps:

  • In a large bowl, cream butter and sugar. Beat in egg yolk, cream and vanilla. Combine the flour and baking powder; gradually add to creamed mixture. Stir in finely chopped pecans. Roll into 3/4-in. balls. , In a small bowl, beat egg white. Dip balls in egg white, then roll in additional pecans. Place 2 in. apart on ungreased baking sheets., Using the end of a wooden spoon handle, make an indentation in the center of each ball. Top each ball with a cherry half or fill with jelly. Bake at 350° for 12-15 minutes or until cookies are lightly browned. Carefully remove to wire racks to cool.

My grandmother came from Sweden and made these for me. They were the only cookies she made besides gingerbread. I have revised to be sugar free and gluten free using Splenda and rice flour.

Number Of Ingredients 10

1/2 cup boiling water
2 cups old fashioned oats
1/2 cup rice flour
2 tablespoons butter
6 (1 g) packets Splenda sugar substitute
2 extra large eggs or 3 medium eggs
1 teaspoon molasses (optional)
1 1/2 teaspoons vanilla extract
3 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • In large metal bowl, pour boiling water over the oats. Let set.
  • In mixing bowl, beat butter, eggs, splenda, vanilla and molasses (if desired).
  • Add the baking powder and the salt to the oats. Mix.
  • Add the rice flour and beat inches.
  • Add the oat mixture to the egg mixture.
  • Make sure it is mixed well.
  • Oven 375°F.
  • Foil the bottom of two cookie sheets.
  • Drop tsp of dough two to three inches apart.
  • Watch carefully. These cookies will brown quickly.
  • Take off foil when they are still warm.
  • Place in custard cups to form if desired.
  • Cool. Sometimes I form on the sides of glasses. Serve ice cream in the formed cups.
  • I serve applesauce in them also.

2 cups quick quaker oats
2 cups sugar
2 eggs slightly beaten
1 tablespoon flour
1/2 teaspoon salt
1/2 lb. melted butter (2 sticks)
1 teaspoon vanilla

Steps:

  • Preheat oven to 325. Line cookie sheets with aluminum foil(shiny side down). Combine Oats, sugar, flour and salt in a large mixing bowl. Pour hot melted butter into dry ingredients. Stir until sugar has melted. Add eggs and vanilla stirring well. Drop mixture by 1/2 teasponfuls onto prepared cookie sheets about 2 inches apart. They spread. Bake 10-15 minutes until cookies are golden brown. Let cookies cool completely before removing them from foil. Sprinkle tops with powdered sugar.

1/4 c. sifted flour
1/2 c. butter
2/3 c. finely diced blanched almonds (3 oz. package)
2 tbsp. light cream

Steps:

  • Wash a broom handle and suspend it between two chairs. Preheat oven to 375. Grease baking sheet and dust it lightly with flour. Melt butter in a saucepan and add other ingredients. Cook the mixture over medium-high heat until it bubbles, stirring so it doesn't burn. Remove the mixture from the heat and stir it briskly for a few seconds. Drop teaspoonfuls onto the baking sheet, 4 inches apart. Bake three to four minutes, until the cookies turn brown at the edges. Cool 1 1/2 minutes on the baking sheet. Remove each cookie carefully with a spatula, and immediately drape it over the broomstick. Leave the cookies in place until they're cool and crisp, roughly two minutes, then gently transfer them to a plate.

3 TBL flour
2 TBL milk
1 cup blanched almonds and very finely chopped

Steps:

  • preheat oven 350 degrees. Cream butter. Add sugar gradually, add flour and milk. Add almonds. Place in saucepan. Blend heat to boiling point. Stir constantly. Remove from heat. Keep mixture warm. Drop level TBL of batter 5 inches apart onto greased cookie sheets. Bake at 350 degrees about 8 minutes or until golden brown. The cookie spreads and is lacy thin. Remove from oven. Let stand 1 minute or until cookies can be removed with spatula. They will be very hot Shape into cones as soon as possible.
