SWEDISH CRISPBREAD (KNäCKEBRöD)
This is the traditional Swedish crispbread often served at Midsummer or Christmas together with herring and cheese (SOS - Sill, Ost, Smor). I prefer fennel as a spice, but you could try caraway or aniseed, or a mixture as well. Make sure the oven is as hot as possible. The hole in the middle is traditional, and necessary for the placing on the stick. If you don't have a Swedish roller, prick the breads everywhere with a fork before baking.

Steps:
- Dissolve yeast in the water (if using dry yeast, follow instructions).
- Add salt and fennel/aniseed.
- Add rye and enough wheat flour to make a quite firm dough.
- Knead vigorously for at least five minutes.
- Divide into 16 parts and roll to balls.
- Let rise, covered, for 40 minutes.
- Heat the oven to maximum heat.
- Roll out one piece at a time to a thin circle, 8-10 inches in diameter.
- Use plenty of rye flour when rolling.
- Make a one-inch hole in the middle.
- Prick the surface all over with a fork (in Sweden we have special rolling pins for this purpose).
- Bake one at a time on a dry tray in the oven for about 2-4 minutes.
- They should get brown, but not too burnt.
- Slip them on a stick (e. g. a broom) through the hole in the middle to cool.
- Store in a dry place and eat with butter, cheese and/or pickled herring, maybe together with beer and aquavit.
SWEDISH KNäCKEBRöD
Awesome Swedish flatbread. Goes well with soups and cheeses. Comes out similar to Rye Crisp. You can try this with wheat flour instead of rye. I would not recommend plain white flour but any 'grain' flour tried might be interesting. World Tour 2005

- Combine the flour, (fast action yeast if using), caraway and the salt. Add the sourdough starter, honey and water (if using yeast you will more than likely have to add 230g water), mix until you have a smooth dough. It should be firm, but if it seems too dry, add a little more water, a tablespoon at a time, and work until smooth. (If you're using fast action yeast you will definitely need to add more water)
- Cover the bowl with cling film and leave to rest overnight at room temperature (8 hours). The mixture will only expand slightly but should smell “yeasty” and slightly sour the next day.
- Divide the dough into 24, (approximately 25g each). Shape each piece into a ball and flatten one at a time into a disc and place on a well-floured work surface (use more rye flour) and roll out as thin as you possibly can – around 1-2mm. Use a fork to prick all over the surface of each crispbread if you don't have a dimpled rolling pin. I like baking them with a hole in the middle but that is entirely optional. Continue until you've used all the dough.

- Swedish Cinnamon Rolls “Kanelbullar” Among all Swedish recipes, the Cinnamon rolls “kanelbullar” are by far the most popular ones. Swedes eat enormous quantities of them throughout the year and there is even a national day for cinnamon rolls every year on October 4th.
- Swedish Multi-Seed Crispbread “Knäckebröd” Crispbreads are the new bread… at least in Sweden! Swedes love crispbreads and you can find countless of recipes, all different, from the classic plain one made with rye flour to the more advanced options with seeds and sometimes gluten-free.
- Beet and Horseradish-Cured Salmon Gravalax. Cured salmon is definitely part of the Swedish culture, and something we prepare days in advance of any occasion, like Midsummer for instance.
- Swedish Blueberry Vanilla Buns “Blåbärsbullar” Cinnamon rolls and all kind of buns are king in Sweden. Swedes have countless of variations adapted to each season.
- Swedish Gooey Chocolate Cake “Kladdkaka” Swedes make an awesome Swedish Gooey Chocolate Cake “Kladdkakaka”, which literally means gooey (kladdig) cake (kaka).
- Swedish Toast Skagen (Prawn Toasts): 2 Ways! You will find it absolutely everywhere in Sweden, whether you go in a regular restaurant or a café place for lunch.
- Swedish Cardamom Buns “Kardemummabullar” These are my all time favorite Swedish treats – I like them even better than the classic cinnamon rolls “kanelbullar”.
- Swedish Semlor. Usually eaten for Fat Tuesday in Sweden, the Swedish Semlor are a classic I could eat all year round. They are made out of a lovely sweet bun spiced with cardamom, almond paste, and generously filled with chantilly.
- Swedish Vanilla Hearts “Vaniljhärtan” Swedish Vanilla Hearts “Vaniljärtan” are nothing but adorable heart-shaped cookies made with a shortbread crust and filled with a generous vanilla cream in the inside.
- Triple Berry Crisp with White Chocolate Sauce. It’s not a secret, Swedes love berries. In Summer, they pick some fresh ones in the woods or anywhere in the nature, and in winter they eat some frozen ones.

- Easy Homemade Ikea Swedish Meatball Recipe. I was thrilled to see my friend making meatballs at home. If they’re great anywhere, it’s in Sweden! Not only are they a great mixture of pork and beef, but they have potato and onion in the mix and Worcestershire sauce in the gravy.
- Pepparkakor (Swedish Ginger Cookies) Mostly served around the holidays but a pleasant little cookie year-round, this recipe uses dark corn syrup for a depth of flavor you won’t get without it.
- Swedish Cream Recipe. This can only be described as a dream. If creme brulee and panna cotta got together, his would be the result. Want to save this recipe?
- Swedish Apple Pie. This decadent pie is almost like an apple cobbler. Rather than a layer of pastry, you’ll need to make the topping and spoon it over your apple filling.
- Swedish Potato Pancakes (Raggmunk) These can be served as a simple snack or as a side to some chicken or tender meatballs. Either way, they’re crunchy, salty, and irresistible.
- Swedish Rye Bread (Limpa) Much like other European countries, the Swedes like their bread dark and full of rich flavor. This recipe is slightly different, with it being a little sweet.
- Swedish Blueberry Soup. It took me a minute to get my head around this one, but if we can eat gazpacho at lunch, why not blueberry soup for breakfast?
- Swedish Lingonberry Sauce. My first experience with lingonberry sauce was with those meatballs my friend made. She made it herself, from scratch, thank you very much!
- Crispy Hasselback Potatoes with Rosemary and Garlic. If you’re going to try anything on this list, pick this! Originally from a small tavern in Sweden, these potatoes are crispy, tender, and so good.
- Swedish Pancakes. You’ll find these very similar to crepes. Thin, sweet, and delicate, they are a great little snack or dessert with the right toppings.
