SWEDISH MEATBALLS (HOMEMADE IKEA MEATBALLS)

Recipe video above. Juicy meatballs smothered in a beautiful creamy gravy, with a hint of spicing that Swedish Meatballs are known for. Made extra soft and extra tasty by soaking fresh bread in grated onion - tried and tested technique used in my most of my meatball recipes, highly approved by readers! 2 slices white sandwich bread (, crusts removed, chopped into small cubes (Note 1))
1 onion (, small (brown, white or yellow))
300g / 10 oz ground beef (mince)
300g / 10 oz ground pork (mince) (, or sub with more beef (Note 2))
1 egg
1/4 tsp ground nutmeg (, preferably freshly grated)
1/4 tsp All Spice powder ((Note 3))
1/4 tsp black pepper
3/4 tsp salt
1 tbsp oil
40g / 3 tbsp butter (, unsalted)
3 tbsp flour
2 cups beef broth/stock ((salt reduced), or sub with chicken)
1/2 cup heavy / thickened cream ((Note 4))

Steps:

  • Grate onion using a standard box grater (see video).
  • Scrape onion and juices into bowl. Add bread and mix well - onion juice should make bread soggy (if not, add a tiny splash of milk). Set aside to soak for 1 minute.
  • Add remaining Meatball ingredients EXCEPT oil. Mix well.
  • Using a tablespoon measure and measure out a heaped tablespoon (or use ice cream scooper which is what I do), dollop on work surface. Repeat with remaining mixture: 25 - 30 meatballs. Then roll into shape.

2 tablespoons olive oil, divided
1 onion, chopped
450 g ground beef
450 g ground pork
1/2 cup breadcrumbs, homemade
2 egg yolks
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1 teaspoon sea salt
1 teaspoon black pepper
60 g butter
1/3 cup all-purpose flour
4 cups beef broth (from 1 cube)
3/4 cup sour cream
1/2 teaspoon sea salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley leaves, chopped

Steps:

  • In a large skillet sauté onions in 1 tablespoon of olive oil, stirring frequently, for 2-3 minutes over medium heat. When onions become translucent, remove pan from the heat and leave them to cool a little.
  • In a large bowl, combine ground beef, ground pork, breadcrumbs, egg yolks, allspice, nutmeg, salt, pepper and cooked onion. Using a wooden spoon or clean hands, mix until well combined.
  • Roll the mixture into 1 ¼-to-1 ½-inch meatballs (ice cream spoon helps to measure the amount needed for one meatball), forming about 24 meatballs.
  • Add remaining 1 tablespoon olive oil to the skillet. Add meatballs, in batches, and cook until all sides are browned, about 4-5 minutes. Transfer to a paper towel to get rid of any excessive fat.
  • To make the gravy, melt butter in the skillet. Whisk in flour until lightly browned, about 1 minute.
  • Gradually whisk in beef broth and cook, whisking constantly, until slightly thickened, about 1-2 minutes. Stir in sour cream; season with salt and pepper.
  • Serve immediately, garnished with parsley, and with cooked fresh pasta.

These meatballs are delicious-if you ever go shopping at an Ikea, you must stop at their restaurant and try these.

1 small onion, finely chopped
1 tablespoon vegetable oil
2/3 lb lean ground beef
1/3 lb ground lean pork
1/2 cup breadcrumbs
1 cup milk
1 egg, lightly beaten
1 teaspoon salt
1 teaspoon black pepper
1/4 teaspoon ground allspice
1 tablespoon vegetable oil (for frying)
1 (10 ounce) can beef gravy
1/2 cup 10% cream

Steps:

  • Saute onions in first tablespoon of oil until translucent. Set aside and let cool.
  • Combine breadcrumbs and milk, let soak for 10 minutes.
  • In a large bowl, combine onions, breadcrumbs, milk egg, meat and seasonings. Mix thoroughly. Form tablespoon of the meat mixture into balls.
  • Over medium heat, fry meatballs in second tablespoon of oil until brown on all sides.
  • In a small saucepan, combine gravy and cream; heat through but do not boil.
  • Serve meatballs with gravy, boiled potatoes and lingonberry preserves.

I know there is already an "ikea swedish meatballs" recipe on here, but this one is right from the source :) This calls for "unsweetened rusk flour" which is obviously not available in the US. It literally translates to "toasted breadcrumbs" So I just use PLAIN breadcrumbs, I can't taste a difference in the meatballs. You could also toast up some panko in butter in a pan and out them in a baggie of some sort and crush them till their fine...but either way... I'm not sure of the "yield" here it depends how many meatballs you gove people to eat and how big the meatballs are made ;)

1/2 lb ground beef
1/2 lb ground pork
1 egg
1/2 cup cream (half and half) or 1/2 cup milk
1 small onion, finely chopped
1/4 cup breadcrumbs (or toasted panko, crushed)
2 small cold boiled yukon gold potatoes
2 tablespoons butter
salt
white pepper
1 dash allspice (optional)
1/2 cup half-and-half
1 cup low sodium beef broth
1/4 teaspoon soy sauce
1 tablespoon white flour
1 tablespoon butter

Steps:

  • For Meatballs:.
  • Fry the onion till golden in a couple of tablespoons of lightly browned butter.
  • Mash the potatoes.
  • Mix all the ingredients until meatball consistency.
  • Flavour with salt, white pepper and (optional) a little finely crushed allspice.
  • Shape the mixture into relatively large, round balls and transfer to a floured cutting board.
  • Fry them slowly in plenty of butter.
  • Cream Sauce:.
  • Melt butter in pan and add flour, whisk till golden brown and flour is cooked.
  • Add Beef Stock and Cream until desired thickness.
  • Season well with salt and pepper.
  • Serve the meatballs with the sauce, freshly boiled yukon potatoes, and lingonberry jam.
