Swedish food tends to be influenced by the seasons with the spicing and cooking; often reflecting the storage needs of the peasant communities of old, as in pickled herring, freshly salted or smoked meat, or dairy products that have been curdled, boiled or left to mature.

Steps:
- Cut off the crusts of the bread slices.
- Saute the bread in a little butter until they are golden brown on both sides, drain on paper towels.
- If the shrimps are large, cut into smaller pieces.
- Save 4 sprigs of dill for garnish. Finely chop the rest of the dill and mix with the shrimp, mayonnaise and mustard.
- Divide the mixture into 4, and place on top of the bread slices.
- Shape the whitefish roe on top of each toast and garnish eash with a sprig of dill and serve with a wedge of lemon.
SWEDISH MEATBALLS WITH CREAMY DILL SAUCE
There are many versions of Swedish meatballs, and this is the way we like ours. They're juicy, tender, and flavorful in a creamy and rich sauce. We enjoy them over mashed potatoes or buttered noodles and served with lingonberry sauce or cranberry sauce.

- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and place a baking rack on top. Spray the baking rack with cooking spray.
- Combine bread crumbs and milk in a large bowl. Allow bread crumbs to soak up the milk for about 10 minutes. Mix in ground beef, ground pork, onion, parsley, celery, egg, garlic, sugar, salt, and pepper until combined; mixture will be fairly wet. Shape into 36 meatballs with a 1-tablespoon cookie scoop. Place meatballs on the prepared baking rack.
- Bake in the preheated oven until an instant-read thermometer inserted into the center of a meatball reads 160 degrees F (71 degrees C), about 18 minutes.
- While the meatballs are baking, melt butter for sauce in a large saucepan over medium-low heat. Whisk in flour and cook, stirring constantly, for 2 minutes. Gradually whisk in beef broth and Worcestershire sauce until smooth. Cook, stirring often, until slightly thickened, about 12 minutes.
- Remove meatballs from the oven and add to the sauce mixture. Simmer for 3 minutes. Stir in sour cream, dill, and lemon zest. Season with salt and pepper and serve immediately.

SWEDISH CREAMY DILL PRAWN TOASTS WITH CAVIAR - SKAGENRORA
An easy and delightful recipe that makes an elegant starter for a festive cocktail party - served with vodka of course! If caviar is hard to source or is expensive, lumpfish roe can be used. I see this being served for a Midsummer party in honour of the lands of the midnight sun, with assorted vodka cocktails! This festive and very special appetiser was developed by one of the best-known Swedish chefs, Dr Tore Wretman, who served a version of this dish in his Stockholm restaurant in 1958, since when it has become a classic. (This recipe version by Market Kitchen and Swedish chef and cookery writer, Anna Mosesson.)

- Carefully remove the shells and heads from the prawns. Put the sour cream, mayonnaise, chopped dill, chives and lemon juice in a large bowl. Season with salt and pepper, then stir in the prawns. Add more lemon juice if needed.
- Melt the butter in a large frying pan. Working in batches, add the rye bread and fry until golden brown on both sides.
- Serve the prawn mixture piled on top of the fried bread and garnish each portion with a dab of caviar or lumpfish roe and a frond of dill.

- Mix together powdered sugar and water until smooth.
- Fold a paper towel into a 4-inch square and lay it on a saucer.
- Spread the powdered sugar mixture on top of the towel on the saucer.
- Spread coconut in a shallow layer on another saucer.
- Dip the rim of a Martini glass in the sugar mixture on the towel until the rim is coated.
- Then, dip the sugared rim into the coconut. Use a spoon to pack the coconut on to the sugar coating so it stays on the rim.
- Add the cranberry juice, Malibu rum and grenadine into a cocktail shaker with ice.
- Shake and strain into a prepared Martini glass and serve.
- Garnish with a candy cane. Break off the top hook of the candy cane if desired.

- Boil whole, unpeeled potatoes in unsalted water until fork-tender. Remove and allow to sit until cool enough to touch. Peel potatoes, then chop into 1" dice.
- In a saucepan over medium-high heat, stir together butter and flour to make a light roux, but do not allow to darken. Add cream, salt, and pepper and whisk steadily until incorporated and thickened into a cream sauce, about 5 minutes. "Fancy" version of my grandma's famous sugar sandwiches. (buttered white bread sprinkled with sugar). Great with coffee. Sugar-spice mix makes enough for 18 toasts. Found this in "Quick Cooking" magazine.

- To Make Spice Mix (enough for 18 toasts):.
- In a small bowl, combine sugar, cinnamon, cardamom and cloves.
- To Make Toasts:.

SESAME PRAWN TOAST
Use up leftover bread to make that classic Chinese starter - sesame prawn toast. Serve with soy or a sweet & sour sauce for dipping

- Put the prawns, garlic, ginger, egg white, sugar and soy in a food processor and blitz to a paste. Stir in the spring onion. Scrape into a bowl, cover and chill for 30 mins.
- Brush one side of each piece of bread with sesame oil. Spread the prawn mixture on top, taking it right to the edges of the bread. Brush the beaten egg carefully over the top and sides and sprinkle liberally with sesame seeds so they stick all over.
- Heat 2-3cm oil in a sauté pan or deep frying pan until hot, and cook each piece of bread (it's easier to cook one at a time), unspread-side down for 1½ mins, then carefully turn over and cook for 1-2 mins on the prawn side or until the sesame seeds are golden and the prawn paste cooked through. Cut each piece into four triangles. Serve with soy sauce (or a sweet & sour sauce) for dipping, if you like.

- Heat oven to 350F and lightly butter and flour a large baking sheet.
- Stir the eggs, instant coffee, and vanilla in a small bowl until well blended, set aside.
- Mix the flour, baking powder and salt in a medium bowl, set aside.
- Beat the butter and sugar in a large bowl with an electric mixer on medium speed until light and fluffy.
- Beat in the egg mixture.
- Gradually add the flour mixture, beating well after each addition.
- Stir in the almonds.
- Divide the dough into 2 equal portions.
- On a lightly floured surface, shape the dough into 2 logs, each 8 inches long, 2 inches wide and 1 inch thick.
- Place the 2 logs 2 inches apart on the prepared baking sheet.
- Bake for 30-40 minutes until lightly browned.
- Set the baking sheet on a wire rack to cool for 10 minutes.
- Remove the logs from the baking sheet and place on a cutting board.
- Using a serrated knife, cut each log diagonally into 3/4 inch thick slices.
- Place the slices upright and 1/2 inch apart on the baking sheet.
- Bake for 20 minutes or until slightly dry.
- Remove the toasts from the baking sheet.
- Cool completely on the wire rack.
- Store in a tightly covered container.

SESAME PRAWN TOAST
Snack, starter or side dish. You can make the paste a few hours in advance, wrap it up and put in the fridge until needed.

- To make the paste, put in your food processor: the prawns, salt, egg, ginger, soy, onions and sesame oil, process into a paste.
- Cut the bread into rectangles, approx 3 per slice.
- Spread the prawn paste on the bread, with a slight mound in the center.
- Put the sesame seeds in a small bowl and press the paste side into the seeds.
- Heat the oil to a medium heat and deep-fry the toasts paste side down for 2 to 3 minutes then turn them over and fry until they are golden brown.
- Remove from the oil, drain on paper kitchen towel.
- Repeat process until they are all done.
- NOTE: Use bread that is not fresh, if it is, dry it out in your oven, it will absorb less oil You can also make the paste by hand chopping everything very finely.

- Finely chop tender sprigs from ¼ small bunch dill to yield ¼ cup.; place in a large bowl. Set some larger sprigs aside for serving.
- Thoroughly pat dry one 12-oz. bag frozen cooked small shrimp, thawed, with a kitchen towel or paper towels. Coarsely chop half of the shrimp. Place all shrimp in bowl with onion and dill.
- Using a Microplane, finely grate zest of 1 lemon into bowl, then cut lemon in half and squeeze juice of one half through your hand or a fine-mesh sieve into a small bowl; you should have 1 Tbsp. Add lemon juice to bowl with shrimp and mix gently with a rubber spatula to combine. Cut remaining lemon half into 4 wedges and set aside for serving.
